Peanut Tikoy Roll
Ingredients : Peanut Tikoy Roll Recipe
3 cups glutinous rice flour
1 1/2 cup sugar
1 1/2 cup water
2 tsp vanilla extract
1/3 cup sweet chunky peanut butter
1 1/2 cup ground roasted peanuts
coconut oil
Instructions :
In a bowl combine glutinous rice, sugar, water, and vanilla together, mix well until free of lumps.
Pour mixture in an 8×8 inch well-greased square cake pan then place in a prepared steamer and steam for 15-18 minutes or until inserted toothpick comes out clean.
Remove from steamer let it cool down for 5 minutes.
Prepare a greased baking mat then tip over steamed rice cake into the surface.
Fill piping bag with peanut butter then pipe a line of peanut butter along one side of the rice cake near the edge.
Roll the edge of rice cake enclosing the piped peanut butter then once the edge joins the inner part, seal then cut along the length of the rolled rice cake. Do it until all of the rice cake is used.
Cut the rolls into sections, dredge each piece on crushed roasted peanut then place on a serving platter, continue with the rest.

Ingredients
3pcs overripe banana (for 1 cup mashed banana)
2 cups all purpose flour sifted
½ tspn salt
½ tbspn baking soda
2 teaspoon baking powder
Combine dry ingredients and set aside
In another bowl
1 cup brown sugar add more if desired
¼ cup oil
2 large eggs
1 tspn vanilla
1 cup evaporated milk (240ml)
Add 1 tspn chocolate emulco by @hicaps
Combine wet ingredient together with mashed bananas then pour in the dry ingredients mix until no trace of flour do not ovemix it, pour into moulder 3/4 full
Steam in boiling water 12-15 mins
You can also bake it 180c 18-20 mins until done
You can omit adding chocolate para banana puto classic lang sya

Papoutsaki greek stuffed eggplant
Ingredients for 4 serving
For the eggplant
4 medium eggplants
1 tablespoon olive oil
salt and pepper
For the ground beef mixture:
1 tablespoon olive oil
1/4 onion chopped
1/2 lb ground beef
1 tablespoons tomato paste
1/2 cup water
1 tablespoon parsley
1/4 teaspoon dried oregano
1/8 teaspoon sugar
1 cinnamon stick
salt and pepper to taste
For the bechamel:
1/4 cup butter
1/4 cup flour
2 cups milk warmed
2 egg yolks
1 tablespoon mizithra or parmesan cheese, grated
salt to taste
pinch nutmeg
To serve
1 tablespoon parsley chopped
INSTRUCTIONS
For the eggplants:
Preheat the oven to 400F and line 1 or 2 baking sheets with parchment paper (depending on the size of your baking pans, you may need to use 2 to fit the eggplants).
Slice the eggplants in half lengthwise and remove the stems. Score the cut sides of the eggplants with a knife using a crisscross pattern, leaving a 1 cm border around the edges (as pictured in the blog post) and being careful not to cut all the way through.
Brush the cut sides of the eggplants with olive oil and season with salt and pepper. Place the eggplant slices with the cut side down on the baking sheet(s) and bake in the oven for approximately 40 minutes or until softened. Remove the eggplants and flip them over. Gently press down the inside of the eggplant (where you had scored it in a crisscross pattern) to make an indentation where the filling will go.
For the ground beef mixture:
While the eggplant is baking, prepare the ground beef filling. Heat the olive oil into a skillet and add the chopped onion. Sauté, stirring frequently until they begin to turn translucent and then add the ground beef, stirring often and breaking up bigger clumps. Once the ground beef is browned, add the tomato paste, water, parsley, oregano, sugar, salt, pepper and cinnamon stick. Cook, stirring frequently for about 8-10 minutes or until the water evaporates.
Spoon the ground beef mixture into the eggplant indentations.

180-200ml cold water
Filling
Chicken Empanada filling
½ kilo breast boiled and shreded
Small carrots peeled and cut into small cubes
200 grams potato cut into small cubes
100 grams green peas
2 cloves garlic mince
Small onions finely chopped
60 ml oil
½ cup water
100 ml all purpose cream
Heat pan put then oil or butter, saute onion and garlic,add carrots,potato,peas and chicken stir fry a few mins add water to cook the vegetables add the cream season with little salt and pepper make sure only little salt because.later on you will realize its saltiness
Let it cool then you can make this ahead of time or a day before you make empanada

3.wagpagdikit dikitin,maglagay ng parchment leave space kapag ni chill
4.)kapag bake pahiran ng eggwash then bake 190c 35 to 40 mins until maggolden brown

1 3/4 cup all purpose flour
1 1/4 cup white sugar

Then put vinegar combine well
Pour into prepared pans
Tap the pan to release the bubbles bake 30 to 45 mins until done when you insert the wooden stick it will come clean
