"๐Ÿ‘โœจ Sunday cravings in full swing! Thereโ€™s nothing quite like the sweet, tangy delight of a mango crepe topped with whipped cream and drizzled with salted caramel sauce to make the weekend complete. Ready to make your own? Hereโ€™s the recipe! ๐ŸŒด๐Ÿฅž

Mango Crepe Recipe:

Ingredients:

For the Crepes:

1 cup all-purpose flour
2 large eggs
1 1/2 cups milk
2 tbsp melted butter
1 tbsp sugar
A pinch of salt
For the Filling:

2 ripe mangoes, diced
Whipped cream (store-bought or homemade)
For the Salted Caramel Sauce:

1 cup sugar
6 tbsp unsalted butter
1/2 cup heavy cream
1 tsp sea salt
Instructions:

Make the Crepes:

In a bowl, whisk together flour, eggs, milk, melted butter, sugar, and salt until smooth.
Heat a non-stick pan over medium heat. Pour in a ladle of batter, swirling to coat the bottom.
Cook for about 1-2 minutes per side until golden. Repeat with remaining batter.
Prepare the Filling:

Dice the mangoes and set aside.
Whip the Cream:

If making homemade whipped cream, beat heavy cream until soft peaks form.
Make the Salted Caramel Sauce:

In a saucepan over medium heat, melt the sugar until it turns amber. Stir in the butter until melted.
Carefully whisk in heavy cream and salt. Let it cool slightly.
Assemble:

Fill each crepe with diced mango and a dollop of whipped cream. Fold and drizzle with salted caramel sauce.
Serve & Enjoy!

๐ŸŒ๐Ÿฝ๏ธ Reflecting on the days when my diet was all about potatoes, corn grits, steak, salmon, chicken fillet, salad, mixed vegetables, and pasta while living abroad. No wonder I was slimmer and healthier!

"Indulge with these loaded potato skins! ๐Ÿฅ”๐Ÿง€๐Ÿฅ“ Packed with all the goodness of cheese, bacon, nachos, and potatoes, they're not just an appetizer, they're a meal in themselves! Who needs a main course when you've got these nutrient-packed delights? ๐Ÿ˜‹ "

Loaded Potato Skins (2 ways)
Ingredients:
10 medium-sized potatoes (if baked, wrap each potato with foil and cook for 45 minutes at (375ยฐF) Boil for 25 to 30 minutes (set aside once tender)
Spreadable cream cheese, quick-melt cheese or sour cream
1 cup bacon bits
2 cups crushed nachos
1/4 cup chopped spring onion for garnish (optional)
1/4 cup melted butter
salt and pepper to taste

Procedure (baked)

1. Preheat the oven to 375 degrees F.
Scrub, dry and poke the potatoes 8-10 times using the tines of a fork. Using your hands rub the potatoes with a little canola oil or olive oil and sprinkle generously with salt. Place them on a baking sheet. Bake potatoes for 50-60 minutes or until they are cooked through. Let them sit until cool enough to handle.

2. Preheat the oven to 450 degrees. Cut potatoes in half lengthwise. Using a spoon, scoop out the flesh, leaving 1/4 to 1/2 inch around the inside of the skin.
3. Melt butter in the microwave. Whisk in the garlic powder and onion powder. Brush over the tops and bottoms of the potato skins. Using the same baking sheet that you cooked the potatoes on, place them in the oven for 10 minutes. Flip and bake for another 10 minutes.
Top evenly with both cheeses and bacon. Return to the oven for 5 minutes, or until the cheese is melted. Top with green onions and sour cream (optional). Serve promptly.

Procedure (boiled and fried):
1. Place 1 liter of water in a stock pot and boil the potatoes with the water to 400 degrees Fahrenheit.
2. Once tender, cut it in half and scoop out the flesh. brush with melted butter and season with salt and pepper.
3. Fry the potato skins.

Topping options:
a. Top with nachos, cheese, and bacon
b. Top with nachos, sour cream, bacon, and green onions.
c. Top with nachos, melted cheese, bacon, and green onions.
