Mango Crepe Recipe:
Ingredients:
For the Crepes:
1 cup all-purpose flour
2 large eggs
1 1/2 cups milk
2 tbsp melted butter
1 tbsp sugar
A pinch of salt
For the Filling:
2 ripe mangoes, diced
Whipped cream (store-bought or homemade)
For the Salted Caramel Sauce:
1 cup sugar
6 tbsp unsalted butter
1/2 cup heavy cream
1 tsp sea salt
Instructions:
Make the Crepes:
In a bowl, whisk together flour, eggs, milk, melted butter, sugar, and salt until smooth.
Heat a non-stick pan over medium heat. Pour in a ladle of batter, swirling to coat the bottom.
Cook for about 1-2 minutes per side until golden. Repeat with remaining batter.
Prepare the Filling:
Dice the mangoes and set aside.
Whip the Cream:
If making homemade whipped cream, beat heavy cream until soft peaks form.
Make the Salted Caramel Sauce:
In a saucepan over medium heat, melt the sugar until it turns amber. Stir in the butter until melted.
Carefully whisk in heavy cream and salt. Let it cool slightly.
Assemble:
Fill each crepe with diced mango and a dollop of whipped cream. Fold and drizzle with salted caramel sauce.
