Broccoli and jackfruit stir fry with fried rice 😋I had some jackfruit that needed using up so made this dish based on a couple of different recipes. For the marinade I used 2 tbsps sesame oil, 1 tbsp rice vinegar, 1 tbsp chopped ginger (I used ) 3 crushed garlic cloves, 1 tbsp vegan honey. I used (or you could use maple syrup) and 2 tbsps light soy sauce. I mixed in the shredded jackfruit and left to marinade for 30 minutes. Next I put some avocado oil in a pan and added a thinly sliced onion and fried for about 4 minutes. I then added 2 cloves of garlic and a broccoli cut into florets and sautéed for another 4 minutes. I added a tbsp of water, put the lid on and steamed for a couple of minutes. When cooked I transferred the broccoli to a bowl and put to one side. I added more avocado oil to the pan and added the jackfruit and fried for about 4 minutes. Once cooked I tipped the vegetables back into the pan and mixed with the jackfruit. For the rice I fried chopped leeks, red pepper and mushrooms. I added cooked rice, 1/2 tsp Chinese 5 spice, a handful of cooked peas, 2 tbsps sweet chilli sauce and a tbsp soy sauce. I served sprinkled with sesame seeds. It was absolutely delicious 💚🐷🐮🐣🐖🐗🐰🐔🐟🐬🐋🐵🐐🐏💚
