GROUND BEEF WITH MIXED VEGETABLES

Ingredients:
1 lb ground beef
2 cups mixed vegetables (frozen or fresh—like peas, carrots, corn, and green beans)
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon olive oil (or your preferred cooking oil)
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
1 teaspoon paprika (optional for extra flavor)
1 tablespoon soy sauce (optional for added depth)

INSTRUCTIONS:

1. Cook the Ground Beef: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked (about 5-7 minutes). Drain excess fat if needed.

2. Sauté the Vegetables: Add the diced onion and garlic to the pan, cooking until the onion is softened (about 2-3 minutes).

3. Add the Mixed Vegetables: Stir in the mixed vegetables and cook for another 5-7 minutes, until the vegetables are tender. If using frozen vegetables, no need to thaw them—just add them straight to the pan.

4. Season and Simmer: Season with salt, pepper, and paprika. Add soy sauce for an extra flavor boost, and stir everything to combine. If you’d like a bit more moisture, add a splash of beef broth or water and simmer for 2-3 minutes.

5. Serve and Enjoy: Once everything is cooked through and well-seasoned, serve hot! This can be enjoyed on its own, over rice, or in wraps.
