DISCLAIMER:
Ang recipe at paraan ng pagluto ay basi lamang po sa sariling kaalaman at di ako nagmamagaling. I know I have a lot to learn but through my own experience I'm sharing my small piece of knowledge to anyone who might wanted to learn from me.

RECIPE:

1. 2 Bulbs of Garlic (Medium size)
2. 2 Bulbs of Onion
3. 1 pc. Medium Size Carrots
4. 1 Bulb of Capsicum (Red, Yellow or Green)
5. 1/8 of Spring Onions
6. 1/4 of Cabbage
7. 1/4 Broccoli
8. 300 grams of Shrimp
9. 1/4 of Chicken (Either Thigh part or Breast part)
10. Mama Sita - Pancit Canton flavor (Optional)
11. 2 tbsp. of Salt
12. 1 tbsp. of Black Pepper

PREPARATION PROCEDURE:

1. Chopped the garlic into small pieces (depends on your liking)
2. Chopped the onions into thin slices..
3. Chopped the carrots into thin slices (depends on your liking)
4. Chopped the capsicum in thin slices (depends on your liking)
5. Chopped the spring onions into small circles as this will be use on garnishing
6. Chopped the cabbage into thin slices
7. Chopped the broccoli into sizes you prefer (just enough to chew)
8. Chopped the shrimp into small portions (just enough to chew)
9. Chopped the chicken into sizes you prefer (just enough to chew)

COOKING PROCEDURE:

1. Fry the garlic first and when it turns to bit brown you can add the chicken and simmer it for at least 2 minutes.
2. Set aside the chicken (you can remove it from the pan or just move it on the other side of the pan) Add the shrimp simmer it for another 2 minutes.
3. Add the onions, mix it well and simmer for 2 minutes
4. Mixed it well before you add the chopped carrots and slight mix it and add the capsicum as well. Mix it well and simmer it for another 2 minutes or so. Make sure that the heat temperature of the pan is enough to cook those veggies.
5. Add the broccoli, mix it and simmer it for another 2 minutes.
6. Mix it well before adding the chopped cabbage and simmer it for another 2 more minutes.
7. Add the seasoning (optional: Mama Sita - Pancit Canton mix), salt to taste, a pinch of sodium, and 2 tsp. of black pepper.
8. Mix it well and add 1 cup of hot water and simmer it for at least 1 minute.
9. Add the Mung Bean Noodles and simmer it for at least 2 more minutes.
10. Gently mix the noodles with the rest of the ingredients on the pan until the texture of noodles turns to soft which is enough to chew.
11. Add a pinch of 1 tsp. black pepper & add garnish it with spring onion and mix it well and simmer it for another 2 minutes and you’re done.

Growing up you were always there to hold my hand and my siblings whenever Mama is not around. I have so much fondest memories with you La..

I remember when I was in grade school during vacation days I opt to live with you and Lolo in your farm. We dont have much and certainly not a lavish lifestyle but it was the best childhood I ever had. You used to cook so much bibingka (rice cake), tira-tira (sugarcane candy), putong balanghoy (grated cassava with sweetend young coconut), and a lot more as far as my memory serves. I was with you whenever your selling those in the streets and learned to say out loud “putooooo mo di ha”.. I still remember those La. In fact, you were one of my heroes on cooking. I learned so much from you.

Your kind heart and generousity is being instilled in me at an early age and I owe those from you.

I know God has a greater purpose and plans for you. I won’t say please stay with me and for us a little longer more ‘cause I can’t afford seeing your pain and and how you struggle to breath. I can’t afford to see your body is failing. I can’t stand how fast you change and how your health is deteriorating.

I’ve tried to be strong for Mama and for my other siblings but seeing you and holding you on my own eyes and hands is heart breaking. I don’t question God why ‘cause I know we all are going to dust one day.

I just want you to know La, that if I can move mountain just to extend your life I will do but if that means seeing your pain way more longer then I’d rather pray to GOD to take away all your pain or better yet end it.

La, I LOVE YOU. I will always be Kuya Lab you ever had.. 😘❤️💐🫂..
