SOTANGHON RECIPE
Ingredients :
2 tbsp cooking oil
1 medium onion, sliced thin
4 cloves of garlic, sliced thin
1 Kg boneless chicken, cut into bite size
1 Knorr chicken cube
1/2 tsp ground pepper
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp achuete (annatto) powder
1 large carrot, cut into strips
3 cups water or chicken broth
1 medium bell pepper, cut into strips
200 grams sotanghon noodles, soaked until soft and drained
2 cups chopped cabbage
1 tsp sesame oil
3 stalk green onion, cut into pieces
salt as needed

Instructions :
Using a wok or a wide pan, heat over medium heat and add cooking oil. Saute onion and garlic for about a minute until soft and aromatic. Add boneless chicken and stir to combine. Allow chicken to cook for about 5 minutes.
Add chicken cube, ground pepper, soy sauce and oyster. Stir and allow to cook for few minutes. Add achuete powder and stir to combine. Allow to cook for a minute. Add carrots and water. Cover and bring into a quick boil. Reduce heat to simmer for about 10-15 minutes or until chicken is fully cooked. (Add a cup or more of water as needed as brands of noodles varies)
Add bell peppers and drained sotanghon. Gently stir to combine. Cook over low heat for about 10 minutes or until noodles is fully cooked while stirring gently occasionally.
Add cabbage to the wok and stir. Cover wok and allow cabbage to cook for few minutes. Drizzle sesame oil to the noodles and stir gently to combine. Garnish with green onions and do a quick stir. Transfer in a serving plate and serve while hot with lemon wedges or sliced calamansi. Enjoy!

Pork Rib Soup with corn and mushrooms

Ingredients:

500g pork ribs, cut into pieces
1 ear of corn, cut into segments
6-8 dried shiitake mushrooms, rehydrated
2-3 tomatoes, quartered
2 slices ginger
Salt and pepper to taste
Spring onions for garnish

Instructions:

Blanch the ribs: In a pot of boiling water, add the pork ribs and ginger slices. Boil for 3-5 minutes, then drain and rinse the ribs to remove any impurities.

Sauté aromatics: In a large pot, heat some oil over medium heat. Add the ginger slices and sauté until fragrant.

Add ingredients: Add the blanched pork ribs, corn segments, tomatoes, and rehydrated shiitake mushrooms to the pot.

Simmer: Pour in enough water to cover the ingredients. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the pork ribs are tender.

Season: Season the soup with salt and pepper to taste.

Garnish and serve: Garnish with chopped spring onions and serve hot.

Cajun Shrimp and Steak Alfredo Pasta

Ingredients: 🍔🥧🍔🍦
For the Steak:

1 lb boneless sirloin steak, thinly sliced
1 tbsp olive oil
1 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/4 tsp black pepper
For the Shrimp:

1 lb shrimp, peeled and deveined
1 tbsp olive oil
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp black pepper
For the Alfredo Sauce:

1 can (10.75 oz) condensed cream of mushroom soup
1 cup milk
1/2 cup grated Parmesan cheese
1/4 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp black pepper
For the Pasta:

1 lb penne pasta
Preparation:
Cook the Pasta: Prepare according to package instructions. Drain and set aside.
Season Steak and Shrimp: In a bowl, mix olive oil, paprika, garlic powder, and black pepper. Use this to season both the steak and shrimp.
Cook Steak: Grill or sauté steak to your preferred doneness.
Cook Shrimp: Sauté the shrimp until pink and cooked through.
Make Alfredo Sauce: In a skillet, mix cream of mushroom soup, milk, Parmesan, oregano, garlic powder, and black pepper. Simmer for 15-20 minutes until thickened.
Combine Ingredients: Add the cooked steak and shrimp to the Alfredo sauce, stirring to coat.
Toss with Pasta: Add pasta to the skillet, mixing everything together.
Serve: Enjoy hot with a side of garlic bread or salad!

Papaitan Recipe

Beef Papaitan is a traditional Filipino dish made with beef innards and bile. It is a flavorful and hearty soup with a slightly bitter taste. The beef innards are simmered with spices and herbs, creating a rich and aromatic broth. This dish is often enjoyed with steamed rice and is perfect for those who enjoy bold and adventurous flavors.

Ingredients:

1/2 kilo beef heart cubed
1/2 kilo beef small intestine cleaned
1/2 kilo beef tripe cleaned
1/4 kilo beef liver cubed
1/2 kilo beef kidney cubed
2-3tbs of calamansi juice (or lemon juice)
1 beef broth cube
1 piece onion chopped
3 thumbs ginger
5 cloves garlic crushed
3 piece long green pepper sliced
8 cups water
beef bile to taste
Salt and pepper to taste
3 tablespoons cooking oil

Procedures:

1. Wash beef tripe and small intestine. Boil with ginger and dried bay leaves for 45 minutes.

2. Remove from the pot and let it cool down. Slice into bite-size pieces.

3. Heat oil in a pan. Sauté onion, garlic, and ginger until onion softens.

4. Add beef heart and kidney. Sauté until it turns light brown.
Put the tripe and small intestines into the pot. Cook for 2 minutes.

5. Pour water into the pot. Let is boil. Adjust heat to low. Continue boiling until beef heart and kidney tenderizes.

6. Add beef liver and bile. Stir. Cook for 15 minutes in medium heat.

7. Add the beef broth cube and the calamansi juice,
Put long green peppers into the pot and season with salt and ground black pepper. Stir. Cook for 2 minutes.

8. Ready to Serve and Enjoy
