Cassava Suman (Suman Cassava Recipe)
Ingredients:
2 pounds grated cassava (about 3 cups) fresh or thawed, if frozen; see note
½ cup coconut milk
¾ cup brown sugar see note
1 cup shredded buko or young coconut optional; see note
pinch of salt
Banana leaves (20 6x8-inch pieces)

Procedures:
Rinse or wipe the banana leaves, remove the central rib, and then pass them over an open flame to make them pliable. Cut them into rectangles (about 6x8 inches).
If using fresh cassava, peel and finely grate it. For frozen cassava, make sure it's completely thawed.

Place the grated cassava in a strainer over a bowl or sink. Press it down with a spoon or your hands to squeeze out the juice. Keep pressing until you've gotten most of the juice out, then discard the juice away.

In a large bowl, combine the grated cassava, coconut milk, young coconut (if using), sugar, and a pinch of salt. Mix thoroughly until combined.

Lay a piece of banana leaf on a flat surface horizontally. Place about 3 tablespoons of the cassava mixture on the lower part of the leaf. Shape it into a log about 4 inches long.

Fold the bottom edge of the leaf over the mixture first, then continue rolling it to form a somewhat flat, elongated shape around the cassava. Make sure it's snug but not overly tight.

Fold the sides under the package to seal in the mixture and give the suman its traditional log-like shape. They are ready for steaming at this point, or you can tie them in pairs using a strip of banana leaf, with the flaps facing each other.

Prepare your steamer by filling it with water and bringing it to a boil. Arrange the wrapped suman in the steamer basket.

Cover and steam over medium heat for about 45 minutes, or until the cassava is thoroughly cooked and has a firm texture. As you steam, check periodically and add more water as needed.

Once done, remove the suman from the steamer and let them cool a bit. They can be served warm or at room temperature. For a complete experience, pair it with a warm cup of coffee or hot chocolate

💜Purple Sweet Potato Mochi💜

Ingredients:
* 120g glutinous rice flour
* 20g corn starch
* 1 tablespoon sugar
* 180g milk
* 15g cooking oil
* 1 purple sweet potato
* Additional sugar (for the sweet potato filling)

Instructions:
1. Prepare the Dough:
* In a bowl, combine the glutinous rice flour, corn starch, sugar, milk, and cooking oil. Stir until the mixture is smooth and free of lumps.
* Cover the bowl with plastic wrap, poke a few holes in the wrap, and steam for 30 minutes.

2. Toast the Flour:
* In a pan, toast some additional glutinous rice flour on low heat without oil until it turns light yellow. Set aside.

3. Make the Filling:
* Steam the purple sweet potato until soft. Add sugar to taste and mash into a smooth paste.

4. Shape the Dough:
* Once the dough is ready, take a piece and knead it into long strips. Roll it out to flatten.

5. Assemble:
* Place a portion of the purple sweet potato paste onto the dough. Wrap the dough around the filling, sealing the edges.

Air Fryer Crispy Pork Belly

Recipe👇
2 lb pork belly, skin on
2 tsp salt
2 tsp brown Sugar
1 tsp five spice
1 tsp salt
½ tsp onion powder
½ tsp garlic powder
¼ tsp pepper

Instruction:
Using paper towel, pat the pork belly dry.
Score the top of the pork belly in a criss-cross pattern. Rub the salt into the top of the pork belly.
Combine the seasoning ingredients in a small bowl.
Rub the seasoning into the bottom meat part of the pork belly, don’t include the skin part only rub with salt.

Preheat the air fryer to 390 °F.
Place the pork belly into the air fryer basket and cook for 30 minutes.
Lower the temperature to 350 °F and bake for another 30 minutes.

Once the top of the pork belly is crispy and cooked, slice into serving size pieces.
Serve & Enjoy.

PORK HUMBA RECIPE ❤️

Ingredients:
1.500 kg pig’s knuckle
10 garlic cloves
2 onions
1 cup pineapple juice
5 star anise
5 laurel leaves
25 g banana blossoms
100 g black beans
⅓ cup brown sugar
⅓ cup soy sauce
2 tbsp vinegar
4 cups water
1 tsp salt
1 tsp peppercorn
½ tsp ground black pepper

Procedures:
In a bowl, combine pork, Soy Sauce, Vinegar, Ground Pepper, Salt, Water and Marinate in the refrigerator for about 30 minutes. Drain meat from marinade, reserving liquid.
In a wide pot over medium heat, heat oil. Add onions and garlic and cook, stirring occasionally, until limp.
Add pork knuckleand cook, stirring occasionally, until lightly browned.
Add reserved marinade and bring to a boil without stirring for about 2 to 3 minutes.
Add peppercorns, Star Anis and bay leaves,
Add black beans, pineapple Juice, and banana blossoms. Stir to combine.
Lower heat, cover, and simmer until pork is tender.
Add brown sugar and stir until dissolved. Season with salt to taste.
Continue to cook until liquid is reduced and begins to render fat. Serve hot.

Fluffy Pancake Recipe!
Ingredients :
- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 1/2 tablespoon sugar
- 1 1/4 cups fresh milk (any type)
- 1 large egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract (optional)

Instructions:
1. Make the batter:
- In a large bowl, sift together the flour, baking powder, salt, and sugar.
- Add milk, egg, melted butter, and vanilla (if using). Mix until well combined.

2. Cook the pancakes:
- Heat a non-stick griddle or pan over medium heat and grease it.

Ingredients
2 lbs. pork belly sliced into serving pieces
2 cups pineapple juice
20 ounces pineapple chunks
6 cloves garlic crushed
6 tablespoons soy sauce
3 tablespoons brown sugar
2 teaspoons whole peppercorn
3 tablespoons cooking oil
Salt to taste

Instructions:
1.Heat the oil in a cooking pot. Fry each side of the pork belly for 2 minutes.

2.3 tablespoons cooking oil, 2 lbs. pork belly
Pour-in the soy sauce, pineapple juice, and half of the pineapple chunks.

3.2 cups pineapple juice, 6 tablespoons soy sauce, 20 ounces pineapple chunks

4.Add the garlic and whole peppercorn. Cover and let it boil.

5.6 cloves garlic, 2 teaspoons whole peppercorn
Reduce the heat to a simmer. Continue cooking until the pork tenderizes. Note: This should take around 60 minutes. You can add water as needed.

6.Add the remaining pineapple chunks and brown sugar. Season with salt as needed. Cook for 2 minutes.

Ingredients :

Crust

2 cups all-purpose flour
1 tsp. sugar
1/2 tsp. salt
1/2 cup margarine or butter, cut into thin slices
1/4 cup shortening
5-6 tbsp. cold water
eggwash
Filling

1/2 cup sugar
1/3 cup cornstarch
1 cup evaporated milk
1 cup buco water/juice
1 tsp. vanilla
2 cups grated buco (young coconut meat)
(Kitchen Measuring)

Cooking Procedures :

Preheat oven to 375°F (190°C). Prepare an 8-inch pie plate.
Filling
(a) Combine sugar and cornstarch in asaucepan. Add evaporated milk and bucowater. Cook over medium heat until thickened.

(b) Add vanilla and grated buco meat. Cook for another 5 minutes and then set aside to cool.
Crust

(a)Combine flour, sugar and salt in a bowl. Cut in the butter (if using) and shortening until the mixture looks like coarse crumbs.

(b)Add a tablespoon of water one at a time. Mix with a fork until the dough is smooth and does not stick to the sides of the bowl.

(c) Form into two balls, one of which should be bigger than the other.

(d) Roll out the bigger dough to form a 9-inch circle that is about 1/4-inch thick. Fit this dough into the bottom and sides of the pie plate. Filled up with the buco mixture filling. Set aside.
2.Roll out the smaller dough into a circle, big enough to cover the top of the pie. To seal the sides of the pie, pinch the top and bottom crusts together.

3. Using a knife or fork, prick holes on the top crust so that steam can escape the pie while baking. Brush the top crust with eggwash.

4. Bake in the oven for about 30 minutes or until golden brown. Allow to cool before slicE

DEEP FRY PORK Recipe😋

INGREDIENTS:

2 lbs pork belly, skin on
1 tbsp salt
1 tsp black peppercorns
2 bay leaves
1 head of garlic, crushed
1 onion, quartered
Water, enough to cover the pork belly
Oil, for deep frying

INSTRUCTIONS:

1. Boil the pork belly:
In a large pot, combine the pork belly, salt, peppercorns, bay leaves, garlic, onion, and water.
Bring to a boil, then lower the heat and simmer for about 30mins or until the pork belly is tender.
Remove the pork belly from the pot and let it cool completely.
Pat it dry with paper towels.
Score the skin of the pork belly in a criss-cross pattern or
Slice the pork belly like in a picture below pattern. (optional)
2. First fry:
In a large wok or deep fryer, heat oil to 350°F (175°C).
Carefully lower the pork belly into the hot oil and fry for 10-15 minutes, or until the skin starts to turn golden brown.
Remove the pork belly from the oil and let it drain on paper towels.
3. Second fry:
Increase the oil temperature to 375°F (190°C).
Fry the pork belly again for 5-7 minutes, or until the skin is crispy and golden brown.
Remove the pork belly from the oil and let it drain on paper towels.
4. Serve:
Slice the pork belly into serving pieces and serve with your favorite dipping sauce.

Delicious Chicken and Green Onion Stir-fry Recipe

Ingredients:

2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon vegetable oil
1 bunch green onions, chopped (white and green parts separated)
2 cloves garlic, minced
1 tablespoon ginger, minced
1/4 cup chicken broth
1 tablespoon honey
Salt and pepper to taste

Instructions:

In a bowl, combine chicken, soy sauce, and cornstarch. Mix well and set aside.

Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from pan and set aside.

Add white parts of green onions, garlic, and ginger to the pan. Cook for 1-2 minutes, or until fragrant.

Pour in chicken broth and honey. Bring to a simmer, scraping any browned bits from the bottom of the pan.

Return chicken to the pan, Cook for another 1-2 minutes, or until heated through.

Season with salt and pepper to taste.

Serve over rice or noodles.

• 2 Ibs cassava grated
• 2 cups coconut milk
• 6 oz evaporated milk
• 3 pieces egg
• 1/4 cup butter melted
• 6 tablespoons cheddar cheese grated
• 1/2 cup condensed milk
• 14 tablespoons granulated white sugar

Topping Ingredients:

• 2 tablespoons flour
• 2 tablespoons sugar
• 1/2 cup condensed milk
• 2 tablespoons cheddar cheese grated

Procedure:

1. Grease pan or baking dish with butter and set aside.

2. In a big, deep bowl, combine all the ingredients for the cassava cake and mix well until the sugar is dissolved.

3. Pour the mixture into the greased pan or baking dish and bake for 45 minutes to 1 hour at 375°F/180°C.

3. After the cake is baked, combine and mix all the ingredients for the topping in a bowl. Pour this on top of the pre-baked cassava cake and bake for another 15-25 minutes or until custard is cooked and turns golden.

Suman Malagkit Recipe❤️
Ingredients:
3 cups glutinous rice
3 cups coconut milk
1/2cup sugar
Pinch of salt
banana leaves ,- pambalot

INSTRUCTIONS:
1. Clean the banana leaves using a wet cloth. Cut them into 9x6-inch rectangles. Set aside. If leaves feel stiff, briefly pass over gas flames for about 10 to 20 seconds until pliable.

2. Rinse and drain glutinous rice .

3. In a large pot over medium heat, mix coconut milk, sugar, and salt. Stir until sugar and salt are completely dissolved.

4. Add the glutinous rice. Bring to a simmer then turn heat to low and cover. Let it cook until all liquids are absorbed. Add water if needed. The rice should only be almost cooked at this point. Let the rice cool down a bit for easier handling.

5. Scoop about 2-3 tablespoons of rice into a banana leaf and roll into a thin log. Fold 2 inches of each end towards the middle to enclose the rice. Do the same to the rest until all the rice is used.

6. Place the logs in a steamer basket, fold side down, and steam for about 30-40 minutes.

7. Remove the suman from the steamer and allow to cool. Unwrap banana leaves and transfer to a serving plate.

3/4 cup sugar
1 cup All purpose flour
1/2 cup cocoa powder
1/2 teaspoon salt
1 teaspoon Baking soda
1 teaspoon Baking powder
1 whole egg
1/4 cup vegetable oil
1/2 cup milk
1 teaspoon Vanilla essence
1/4 cup hot water

For Dark Chocolate Butter Ganache Recipe (OPTIONAL)
1/2 cup heavy whipping cream
1/2 cup salted butter
1 1/2 cup dark chocolate

Procedure for the Moist Chocolate Cake:

Sift together 1 cup All purpose flour and 1/2 cup cocoa powder then Add 3/4 cup white sugar. Mix well

Add in 1/2 teaspoon salt, 1 teaspoon baking powder, 1 teaspoon baking soda, Add 1/4 cup vegetable oil, 1 egg, and 1/2 cup milk. Beat well using hand mixer.

Add 1/4 cup of boiling water and 1 teaspoon of vanilla. Beat again until well incorporated.

Grease a baking pan with butter or margarine then sprinkle with flour. Pour the chocolate batter into the baking pan evenly. Bake in a preheated 350* F oven for 10 minutes then lower the temp to 260 *F until cooked or UNTIL A TOOTHPICK INSERTED COMES OUT CLEAN.

For Dark Chocolate Butter Ganache Recipe (OPTIONAL)
1/2 cup heavy whipping cream
1/2 cup salted butter
1 1/2 cup dark chocolate

Procedure:

Place a glass bowl on top of the boiling water.
Put in the dark chocolate, butter, and heavy whipping cream. Melt the mixture together for 3 minutes. Whisk them to incorporate all. The texture should be very liquid.

Then put the choco mixture in the fridge for 1 hour to thicken up before pouring it over the cake.

🤤 PORK BINAGOONGAN 🤤

Ingredients :
Oil
2 large eggplant, stems trimmed and cut into 2-inch lengths
1 medium onion, peeled and sliced thinly
2 cloves garlic, peeled and minced
1/2 pound pork belly, cut into 1-inch cubes
2 tablespoons shrimp paste
2 large tomato, chopped
1/4 cup vinegar
1 cup water
1 teaspoon sugar
1 Thai chili pepper, minced
salt and pepper to taste

Instructions :
In a skillet over medium heat, heat about 2 tablespoons of the oil. Add eggplant and cook until lightly browned, turning as needed. Remove from pan and drain on paper towels. Eggplants soak up a lot of oil, you might need to add more oil during frying.
In the skillet, heat about 1 tablespoon of oil. Add onions and garlic and cook until softened.
Add pork and cook until lightly browned.
Add shrimp paste and cook, stirring regularly, until it darkens and pork begins to render fat.
Add tomatoes and continue to cook, mashing with back of spoon, until softened.
Add vinegar and bring to a boil, uncovered and without stirring, for about 3 to 5 minutes.
Add water, sugar, and chili peppers.
Lower heat, cover, and cook until pork is fork-tender.
Add eggplant and continue to cook until liquid is reduced.
Season with salt and pepper to taste. Serve hot with rice!

🌸 Bibingkang Malagkit Recipe🌸

Ingredients:
🔸6 cups coconut milk
🔸3 cups glutinous rice, washed
🔸1 1/2cup brown sugar
🔸1 tsp salt
🔸Banana Leaves

Toppings:

🔸2 1/2 cups Coconut Cream (Latik)
🔸1 cup Brown Sugar
🔸½ tsp salt

INSTRUCTIONS:
✅In a pot combine glutinous rice and 6 cups of coconut milk and bring to a boil then reduce heat to low.
✅Simmer gently while occasionally mixing to cook them evenly and not burn the bottom, let the mixture thicken until it’s nearly dried out.
✅Add sugar and salt then mix continuously on medium-low heat for 10 minutes.
At this stage, it will be really sticky.
✅Line a 9x 13 baking tray with banana leaf then transfer the cooked glutinous rice. Set it aside.
✅Prepare your topping by mixing all topping ingredients together in a pan, bring it to a boil and simmer on medium heat uncovered until heavily reduced but still runny.
✅Pour topping over the rice cake on the baking pan then bake in a 180C preheated oven for 20 minutes or until topping becomes really thick and dark (not burnt).
✅Remove from oven and set it aside to cool down.
Serve.

PORK KARE-KARE RECIPE❤️
Ingredients:
800 g pork hock
2 tablespoons oil
2-3 tablespoons annatto (achuete) powder
¼ cup peanuts (roasted or raw), ground
1 large red onion, chopped
4 cloves garlic, minced
2 -3 cups pork broth
2 tablespoons creamy peanut butter
fish sauce, to taste
salt and pepper to taste
string beans (sitaw), sliced into 2-inch pieces
1-2 medium pieces eggplant, sliced into 2-inch pieces
bok choy (pechay)
bagoong, to serve

Instructions:
Put pork hock in a large pot and fill it with water until level with the pork. Bring to boil over medium high heat until pork is tender. Take pork hock out and reserve the broth.

Heat a deep frying pan or sauce pan over medium heat, add oil and when oil is hot enough, add garlic and onion and cook until fragrant, add annatto powder and ground peanuts and cook for about a minute or two

Add pork broth, about 3 cups, season with fish sauce, bring to a boil then add cooked pork hock. Cover and let simmer for about 10 minutes.

Add peanut butter and stir, adjust consistency to your liking; add string beans and eggplant.

Cover again and cook for about 3 minutes, then add bok choy, cover and let simmer for just a minute. Taste and adjust seasoning if necessary.

Serve with rice and sauteed bagoong on the side

1/2 cup soy sauce
1/4 cup white vinegar
1 cup Sprite (mismo size)
1 medium onion minced
3 pieces dried bay leaves
1 teaspoons whole peppercorn
1 bulb cloves garlic crushed
3 tables spoon oyster sauce
1 cup water
cooking oil

Procedure:
😘 In a large bowl, combine soy sauce and Sprite with the pork . Mix well. Cover the bowl and refrigerate. Let the pork marinate for at least 30mins-1hour
😘Drain the marinade out of the bowl. Set it aside.
😘 Heat oil in a cooking pot
saute garlic and until light brown
😘 Add pork belly. Stir and cook until light brown
😘 Pour the marinade sauce (Sprite and soy sauce). Add 1 cup of water and oyster sauce stir well Cover the pot and it let boil.simmer for 10mins
😘 Add whole peppercorn and dried bay leaves. Cover the pot and continue to cook for 20 minutes in medium heat.

- 2 pounds of chicken wings
- 1/3 cup honey
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- Zest of 1 lemon
- Fresh parsley for garnish

Instructions:

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

6. Once done, let the wings cool for a few minutes. Drizzle with any leftover honey mixture if desired.
