Pork Riblets Noodles Recipe

Ingredients:

500g pork riblets
1 onion, peeled and quartered
5-6 whole peppercorns
1 tbsp salt
1 tbsp sugar
2 stalks of leeks, chopped (separate white and green parts)
2 star anise
1 small cinnamon bark (about 2 inches)
1 cup corn (fresh or frozen)
1 bunch pechay (bok choy), chopped into bite-sized pieces
200g noodles (egg noodles or your preferred type)
Water (enough to cover the riblets and make a broth)
Instructions:

Prepare the Broth:
In a large pot, add the pork riblets, onion, whole peppercorns, salt, sugar, leeks (white parts), star anise, cinnamon bark, and enough water to cover the riblets.
Bring to a boil over medium-high heat, then reduce the heat and simmer for about 1 to 1.5 hours, or until the pork is tender and the broth is flavorful. Skim off any scum that rises to the top.

Cook the Noodles:
While the broth is simmering, cook the noodles according to the package instructions. Drain and set aside.

Prepare the Vegetables:
Add the corn and pechay to the broth about 10 minutes before the pork is finished cooking. Let the corn cook through and the pechay wilt.

Assemble the Dish:
Once the riblets are tender, remove them from the broth and set them aside.

Strain the broth, discarding the aromatics (onion, peppercorns, star anise, cinnamon bark).

In the same pot, return the strained broth to a boil. Add the cooked noodles and the riblets back into the pot. Let everything heat through for about 5 minutes.

Serve:
Serve the noodles and riblets in bowls, garnishing with the green parts of the leeks for added freshness.

Chicken Sisig Recipe

Ingredients:

4 chicken thighs (boneless, skinless, filleted)
1 medium onion, finely chopped
1 green bell pepper, finely chopped
2-3 calamansi (or 1-2 tablespoons of lemon juice)
1/4 cup mayonnaise
2 tbsp chicken liver (finely chopped or blended)
1 tbsp liver spread (canned or homemade)
2 tbsp soy sauce
1 tsp garlic powder
2 tbsp vegetable oil (or oil of choice)
Salt and pepper to taste

Instructions:

Prepare the Chicken:
Cut the chicken thighs into small, bite-sized pieces.
Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until they are browned and cooked through (about 8-10 minutes). Set aside.

Cook the Chicken Liver:
In the same skillet, add another tablespoon of oil if needed. Add the chopped chicken liver and sautΓ© for 3-4 minutes until fully cooked and browned. Once done, mash it into small bits using a spoon or spatula. Remove from heat and set aside.

Prepare the Sisig Base:
In a large bowl, combine the cooked chicken, sautΓ©ed chicken liver, and liver spread. Stir well to blend all the ingredients together.
Add the finely chopped onion, green bell pepper, and garlic powder. Mix thoroughly.

Season and Add Flavors:
Pour in the soy sauce, calamansi juice (or lemon juice), and season with salt and pepper to taste. Adjust the seasoning according to your preference.

Finish with Mayonnaise:
Add the mayonnaise and mix everything together until the chicken and liver are evenly coated.

Optional Sizzling Step:
For an authentic sisig experience, you can serve this on a sizzling plate. Heat a cast-iron skillet over medium heat, drizzle with a little oil, and place the chicken sisig mixture in the skillet. Let it sizzle for a few minutes until it's crispy on the edges, then remove from heat.

Serve:
Serve hot, garnished with extra calamansi wedges on the side. You can also serve it with a fried egg on top for extra richness.
