CHICKEN SATAY
Delicious chicken satay or grilled chicken skewers marinated in spices and serve with delightful peanut sauce. One of the most popular Asian appetizers and you'll gonna love this.
Ingredients are:
2 lbs boneless/skinless chicken thighs, leg or breast meat
Bamboo skewers(soaked in cold water for 2 hrs)
1 cucumber (cut in small pcs)
1 onion (diced or quartered)
Oil for basting

Marinade Ingredients:
3 tbsp oil
2 stalks of lemongrass (white part)
3 garlic cloves (peeled)
7small shallots (peeled)
2 tsp turmeric powder
1 1/2 tsp coriander powder
1 tsp chili powder
1/2 salt or more to taste
2 tbsp sugar or honey

Method of Cooking:
Grilled Pan/ charcoal grill/oven

Cut chicken into cubes. Set aside while marinating the chicken. Blend all the marinade ingredients in a food processor, add a little water if needed.
Combine all the chicken and marinades, mix well and marinate in the fridge for 6 hrs or best overnight. Soaked the skewers in cold water for 2 hrs. When ready thread 3 to 4 pieces of chicken onto bamboo skewers.
Grill the chicken 2 to 3 mins on each side. (Pan grilled). In oven, I set 200°C and cooked for 25 minutes, checking and basting( brushing with some oil). Until fully cooked or nicely charred. Serve with hot peanut sauce , cucumber and onion pieces. Enjoy!

For Peanut Sauce:
1 cup dry roasted peanut (unsalted) grounded in mortar and pestle or food processor
1tbsp tamarind pulps(soaked in 1/cup warm water, mix and drained, keep the drained tamarind for use, discard the tamarind pulps)
1/4cup vegetable oil
1cup water
1/2 tsp salt,
ⁿ2 1/2 tbsp sugar or honey
1 tsp coriander powder
1 tbsp sweet soy sauce

Spice paste:
8 red chillies dried , seeded and soaked in warm water
3 cloves garlic
4 sml shallots
1 stalk lemongrass (cut in 3 strips, use 1 strip at the bottom )
1/2 inch galangal

Method: Blend all the spice paste in food processor. Heat up the oil in the pan and saute the spice paste until fragrant, put in the remaining 2 strips of lemongrass for more aroma. Add in the peanut, tamarind juice,salt, sugar and soy sauce. Simmer until the oil and peanut looks in separate form. Transfer in a container and serve with chicken satay.

Banana & Peanut Butter Breakfast Thumbprint Cookies for Babies, Toddlers, Kids

Ingredients

1 banana medium ripe
1/2cup oats
pinch of cinnamon powder
2 drops 0f vanilla extract
1tbsp Peanut Butter
5 to 6 blueberries

Method

Preheat oven to 350F /170C.
In a bowl, mash the banana, add in oats, cinnamon and vanilla, mix together until dough is formed. Line a baking tray and form 5 to 6 Cookies into a ball shape and gently press down in the middle to create a dent. Spoon Peanut Butter into the dent and top with blueberry each. Bake for 10 to 12 minutes until lightly browned. Enjoy!😋❤️
