PINOY STYLE PINEAPPLE PIE 🥧

Ingredients:
4 cups bread flour or all-purpose flour (plus more for kneading)
½ cup sugar
⅔ cup butter or margarine, cut into small cubes
½ cup powdered milk
2 tsp baking powder
1 tsp salt
1 ½ cups water

Pineapple Filling:

1 pack pineapple flavor powdered juice
6 cups water
2 cups sugar
¼ tsp egg yellow food color
3 ½ cups cornstarch (dissolve in 3 cups of water)
1 tbsp vanilla extract

For the Egg Wash:

1 egg, beaten
1 tbsp water
a drop of egg yellow food color

Procedures:

1.In a large bowl, combine the dry ingredients: 4 cups bread flour, ½ cup powdered milk, 2 tsp baking powder, 1 tsp salt and ½ cup sugar.

2. Mix until combined.

3.Add 1 ½ cups water and ⅔ cup butter or margarine. Mix until well incorporated and forms into a dough. Add more flour for kneading.

4.Knead until the dough becomes smooth.

5.Cut the dough into two parts. Flatten the first half of the dough using a rolling pin.

6.After flattening the dough, place it into the greased baking pan. You may cut the excess dough but I prefer to leave it there and fit it on the sides of the pan.

7.Poke holes on the dough using a fork. Set aside.
Knead the other half of the dough. Flatten using a rolling pin. Set aside.

8.In a medium bowl, combine 3 ½ cups cornstarch and 3 cups of water. Mix until cornstarch dissolves. Set aside.

Pineapple Filling:

1.In a large cooking pan, combine 6 cups water, 2 cups sugar and 1 pack pineapple flavor powdered juice. Stir to combine.

2.Turn on the heat. Add 1 tbsp vanilla extract and ¼ tsp egg yellow food color. Stir to combine. Bring to a boil.

3.Add the cornstarch mixture. Stir continuously until mixture becomes thick.

4.mmediately pour the pineapple filling into the prepared baking pan.
Then, place the other half flatten dough on top of the filling. Cut the excess dough. Make sure to cover and seal the filling.

5.Brush the top of the pie with egg wash.

6.Poke holes on the dough using a fork.
Bake in a preheated oven at 350 F / 180 C for 30-40 minutes.

PINOY PORK BARBEQUE ❣

1 Kilo Pork Belly, (slice)
1 Tsp. Garlic,( minced)
1/2 cup toyo
1/4 cup katas ng kalamansi
1/2 cup ketchup
1 Can sprite
1/2 cup brown Sugar
1 Tsp asin
1 Tsp pamintang durog

(PROCEDURE)
1)In a bowl, mixed together minced garlic, soy sauce, calamansi juice, catsup, sprite, salt, black pepper.
2) Leave ½ cup of the marinade and sugar aside.
3)Put pork in a bowl and pour the rest of marinade.
3)Cover with plastic wrap, leave it for 2 hours or refrigerate overnight.
4)Pre-soak the bamboo skewers in hot water for 15 minutes.
5) skewer the pork on a bamboo stick with up to 6 pieces per stick.
6)Prepare the grill and pre-heat.
7)Mix together 1/2 cup marinade, sugar, and remaining sprite
8)Grill the pork, about 10 minutes on each side. Check constantly to avoid burning.
9)Total grilling time should take about 20 minutes.
10)Brush the pork barbecue with the marinade every few minutes to preserve the taste.

Patatim Recipe

Ingredients:
1 pork leg(pata), slice into serving pieces.
3 teaspoons salt
1 teaspoon peppercorn
6 cloves garlic, pounded
2 onions, chopped
2 cups soda(sprite, 7-up, lemonade or root beer)
5 cups pork broth
1/2 cup soy sauce
1/2 cup oyster sauce
2 bay leaves(laurel)
2 pieces star anise (optional)
1/4 cup dried banana blossoms(puso ng saging)
2/3 cup brown sugar
1 tablespoon cornstarch(dissolved in 1/2 cup water)
2 bundles steamed bok choy(Pechay)(optional)
cooking oil for frying

Procedures:
Part 1
1. In a pot, place pata then pour enough water to cover the meat.
2. Add salt and peppercorn then bring to boil for 15 minutes. Drain and reserve the broth.

Part 2
1. In a pot, heat oil then fry pork pata until golden brown. Drain.

Part 3
1. In a pot, heat oil and saute garlic and onion.
2. Add fried pata, broth, soda, soy sauce, oyster sauce, bay leaves, banana blossoms, star anise and brown sugar.
3. Simmer over low heat for 1 to 1 1/2 hours or until pata is tender. Add water if necessary.(Cook in pressure cooker takes 30 minutes).
4. Add dissolved cornstarch and adjust seasoning according to taste.
5. Continue cooking until the sauce thickens and a few sauce is remaining.
6. Transfer to serving plate then serve with steamed bok choy and rice.

HOMEMADE LEMON SOAP
INGREDIENTS :
500 ml of water
500 g of sugar
70 ml of lemon juice
500 ml of alcohol
2 bars 200g of lemon glycerin soap

PREPARATION:
1. Grate the bars of soap and place in a frying pan in a bathtub until it melts.
2. Add water, lemon juice and sugar. Mix well and let simmer for 2 minutes.
3. Put out the fire, slowly add alcohol, mix carefully.
4. Transfer the mixture to plastic jars and wait about 6 hours to dry.

MACARONI FRUIT SALAD

Ingredients:

400 grams Macaroni salad
1 can Jolly cow condensed milk
1 can Jolly fruit cocktail ( drained)
1 can Jolly mandarin oranges ( drained)
1 bottle sweet kaong (red or green-drained)
1 cup mayonnaise
1/2 cup diced cheddar cheese
125 ml all purpose cream
PROCEDURE:
1. Cook macaroni accdg. to package directions
2. In a large bowl combine jolly condensed milk, mayonnaise and all purpose cream, mix to combine. Ccto by Kat
3. Add the macaroni salad, Jolly fruit cocktail, jolly mandarin oranges, sweet kaong and diced cheddar cheese.
4. Gently fold all yhe ingredients until well blended. Chill before serving.

Easy twisted donuts

Ingredients
• 3 cups of flour
• 2 tablespoons of butter
• 7 grams of baker’s yeast
• 5 tablespoons of sugar
• 1 cup of milk
• 1 egg
• ½ teaspoon of salt
• Oil for frying
• ½ tablespoon cinnamon powder

Preparation
1. Put the yeast in a bowl, pour some lukewarm water to dilute it, add the flour and mix well. Make the dough, ideally with a robot or a bread machine, if not by hand … courage!
2. Add the milk, then 2 tablespoons sugar, the egg. Then add the salt. Work the dough 3 minutes, it must be smooth. Then add the soft butter, the dough becomes shiny
3. Shape a ball, cover with cling film, and let rise an hour
4. The dough will double in volume, make pieces of dough of identical size, shape balls, give the shape you want (here braid)!
5. Put on a baking sheet lined with parchment paper and let rise for 30 minutes minimum. The donuts will take volume, they are ready to be fried
6. Fry on each side 3 minutes, drain and roll in a mixture of cinnamon sugar (3 tablespoons and ½ tablespoons cinnamon powder), or cover with frosting.

PORK HUMBA RECIPE

INGREDIENTS

✔️1 kg. pork belly (cut into serving pieces)
✔️1/4 cup vinegar
✔️1/4 cup soy sauce
✔️3/4 cup pineapple juice
✔️1 medium onion (chopped)
✔️5 cloves garlic (minced)
✔️2 tbsp. brown sugar
✔️2 pieces star anise (optional)
✔️1/4 cup banana blossom
✔️1/4 cup salted black beans (rinsed)
✔️1 tsp. whole peppercorns
✔️2 pcs. bay leaf
✔️2 - 3 cups water (as needed)

PROCEDURE

1. Marinate the pork in soy sauce, vinegar and pineapple juice for at least 1 hour.

2. After marinating, drain the meat and reserve the marinade. Then, sear the meat until light brown and the oil is rendered. Then, remove from the pan and leave the oil for sauteing.

3. Saute' onion and garlic until fragrant. Put the seared meat back to the pan. Saute' for a minute. Then add the reserved marinade. Add the star anise, peppercorns, brown sugar, bay leaf and enough water to cook the meat until tender. Simmer in low heat for 1 hour or until the meat is soft and tender.

4. Once the meat is tender, add the banana blossom and salted black beans. Simmer for another 5 minutes or until the sauce is reduced.

Enjoy with hot rice!

Cucumber Salad Recipe
Ingredients:
3 Baby Cucumbers
1 Small Carrot
1 Tomato
1/4 Small Red Onion
1 tbsp Vinegar
4 tbsp Mayonnaise
1 tbsp Honey
2 Boiled Eggs

Instructions:
Prep the Vegetables:
Wash the baby cucumbers, carrot, tomato, and red onion thoroughly.
Peel the carrot and cut it into thin slices or julienne strips.
Cut the baby cucumbers into thin slices or half-moons.
Dice the tomato into small pieces.
Finely chop the red onion.
Peel the boiled eggs and chop them into bite-sized pieces.
Combine Ingredients:
In a large mixing bowl, combine the sliced cucumbers, sliced carrots, diced tomato, chopped red onion, and chopped boiled eggs.
Prepare the Dressing:
In a small bowl, mix together the vinegar, mayonnaise, and honey until well combined.
Dress the Salad:
Pour the dressing over the cucumber mixture in the mixing bowl.

SPANISH BREAD RECIPE!❤️☕
6cups All purpose flour or bread flour
1/3 cup brown sugar
1/2 tsp salt
1Tbsp instant dry yeast
1 cup evaporated milk
1 cup water
2 eggs
4 Tbsp vegetable oil
1/4 cup softened butter
fine breadcrumbs for coating

FOR FILLING:
3/4 cup butter or margarine
1/2 cup brown sugar
1 cup bread crumbs

Mix all the ingredients:
Knead for about 15-20minutes until dough
is elastic and smooth
add softened butter while kneading form a ball and put into oiled bowl
let it rise for 45 minutes
after 45minutes punchdown the dough to remove air bubbles
Gentle flaten each portion of dough then add filling then roll the dough into a log
coat with fine breadcrumbs and arrange into a baking pan and let it rise again for 20minutes

bake into a preheated oven for 25minutes at 160c

Pork Pochero Recipe

Ingredients

2 pounds pork belly - cut into cubes
2-3 tablespoons oil
2 ripe saba bananas - each cut into 3 pieces
1 small carrots - cut into chunks
1 big or 2 medium potatoes - cut into quarters
2 cloves garlic - minced
1 medium onion - chopped
2 medium tomatoes - cut into chunks
1 tablespoon tomato paste
2 tablespoons fish sauce
⅛ teaspoon ground pepper
2-3 cups pork broth - or water
1 cup baguio beans
1 cabbage sliced into 4

Instructions

Boil pork belly in water until it becomes tender. Separate the meat and broth when ready to cook.

Heat oil in a deep pan or a pot and fry the potatoes, carrots, and bananas until the edges are slightly browned. Remove from oil and transfer to a plate.

In the same oil saute garlic, onion, and tomato until limp.

Add the pork belly cuts and the tomato paste.
Season with fish sauce and ground pepper.

Next, add back the fried potatoes, carrots and banana (saba) and also the baguio beans

Pour in the broth/water and let it simmer to cook the potatoes and carrots and until the broth turns into a thicker sauce.

Lastly, add the cabbage and Cover the pot for 3 minutes to cook the cabbage

CHICKEN & DUMPLINGS SOUP RECIPE

Ingredients:
4 tablespoons butter
1/2 cup chopped onion
2-3 chopped carrots
3 celery stalks, sliced
1 tablespoon cloves garlic, minced
8 cups chicken broth
2 pounds cooked chicken, shredded
1 teaspoon salt
1/2 teaspoon black pepper
2 bay leaves
1 tbsp dried parsley

To Thicken Soup
3 tablespoons cornstarch
3 tablespoons water

Dumplings
1 1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons butter, cold
3/4 cup milk

Instructions:
In a large 8 quart pot, melt the butter and add in the onions, carrots and celery. Cook and stir until the onion is soft and translucent. Add in the garlic and cook for 30 seconds.

Pour in the chicken broth and add in the shredded chicken. Season with salt, pepper, bay leaves and parsley. Bring to a boil, then turn down the heat and allow to simmer while you make the dumplings.

For Dumplings:
In a large mixing bowl combine the flour, baking powder and salt. Using a cheese grater, grate the cold butter into the flour mixture and stir to coat the butter.

Pour in the milk and stir until a ball forms with the dough. You can knead it a few times in the bowl if needed.

Pull off one inch pieces of the dough and drop into the soup. Cover with a lid and allow to simmer for 15-20 minutes, until the dumplings are floating at the top of the soup.

To thicken the soup, combine the cornstarch and cold water and pour into the soup. Stir continually until thickened.

PUTONG BIGAS recipe ✍️✍️✍️

Ingredients:👇👇👇
2 cups rice flour
1/4 teaspoon salt
3/4 cup white sugar
2 teaspoons baking powder
2 teaspoons instant yeast
1 cup coconut milk
1 cup warm water
1 -2 tablespoon oil

Procedures :👇👇👇
1. Combine all dry ingredients in a large mixing bowl.
2 cups rice flour, 1/4 teaspoon salt, 3/4 cup white sugar, 2 teaspoons baking powder, 2 teaspoons instant yeast.

2. Mix coconut milk and hot water to make it lukewarm. You can also combine both and heat to lukewarm. Add this to the dry ingredients.
1 cup coconut milk, 1 cup hot water.

3. Add oil and mix, using a spatula or whisk, until completely blended. The texture will be a bit runny at this point.

4. Let it rest for 10 minutes and then gently mix several times, you will notice that the texture becomes thicker.

5. Transfer the mixture to the molds or pan and let it rest for another 20 minutes.

6. 5 minutes before the batter is ready, prepare the steamer. Fill the bottom pot with enough water and bring to boil. If you desire to have the cracked top, use medium heat, Lower the temperature to low to bring the water to a gentle simmer to get a smooth top .

7. Place the mold in the steamer basket and cover with the lid, lined with cloth. Steam for 15-20 minutes or until inserted toothpick comes out clean.

8. Remove the mold from heat and let it cool down a bit before unmolding.

Bibingkang Latik❤️😋
Ingredients:
2 cups glutinous rice - washed and drained
1 cup canned coconut milk
1 cup water
2 pieces pandan leaves

LATIK SYRUP
2 cups canned coconut milk
1 cup dark brown sugar
1 teaspoon vanilla (optional)
vegetable or coconut oil - for greasing the pan

Procedures:
1. Generously grease an 8x8-inch square baking pan and set aside.
In a large pot over medium heat, mix together the 1 cup coconut milk and 1cup water. Add the glutinous rice and pandan leaves. Bring to a simmer then turn heat to low and cover. Let it cook until all liquids are absorbed. The rice should only be almost cooked at this point.
2. While waiting, prepare the latik syrup by combining the 2 cups coconut milk and 1 cup dark brown sugar on a large pan or pot. Cook over medium heat while constantly stirring until the liquid thickens into a camarel.
3. Scoop and reserve ½ cup of the latik syrup for the topping later. Add the cooked rice without the pandan leaves to tha pan with the remaining latik syrup. Gently fold the sticky rice and the syrup until completely coated. Cook while stirring from time to time until the rice completely absorbs the syrup and the rice is fully cooked.
4. Transfer the rice into the greased pan and spread out evenly. Pour the reserved latik syrup on spread evenly on top of the rice. Bake in a preheated oven at 350°F/180°C for 20-30 minutes or until the latik is reduced and becomes bubbly.
5. Remove from oven and let it cool down. Cut into squares and serve.

(LUMPIANG TOGUE /Veggie)

(INGREDIENTS)

1/2 kilo Togue
1 carrot (cut juliened)
1 tsp garlic (minced)
1 tbsp onion (minced)
2 tbsp patis
1 cup dried shrimps
1 cup fried tofu (chopped)
1/2 tsp ground black pepper
Spring roll wrapper
3 cups cooking oil

(PROCEDURE:)

1)Heat a wok or a frying pan and put-in 2 tablespoons of cooking oil.
2)When the oil is hot enough, Sauté the garlic and onions.
3)Add the dried shrimps and cook for 1 minute.
4)Put-in the fried tofu then stir.
5)Add the fish sauce and ground black pepper.
6)Put-in the mung bean sprouts and cook for 2 minutes.
7)Add the carrot and cook for 1 to 2 minutes. Remove from the pan and let cool.
8)Wrap the cooked vegetable in spring roll (lumpia) wrapper.
9)Pour the remaining cooking oil in a cooking pot or deep fryer then apply heat.
10)Deep fry the wrapped lumpia until the color of the wrapper turns golden brown.
11)Remove from the cooking pot or deep fryer and place in a container lined with paper towel to absorb excess oils.
