Time to dive into seed starting for spring!
Here are the supplies to gather to give them the best chance at success!

β€’ Seed Starting Trays: Sturdy, re-usable trays with drainage holes. I prefer to start in trays as I don’t mind the up potting process and find in sowing more I get a better success rate overall. Sowing in plugs also gives me strong roots to on plant and saves sooo much room and use far less starting mix. You can re-use small pottles like yoghurt containers, egg trays, plastic/ paper cups etc but will require more soil to begin and take up a lot more space on your shelf.

β€’ Potting Mix: High-quality, well-draining seed starting mix or a sieve to create your own fine mix is great but is the most expensive part of the process. The benefits of using are that it is finer and easier for wee seeds to push up through with little resistance. BUT, It is a myth that you MUST use seed starting mix, you can make your own with other mediums and perlite. Or sieve the big pieces out of standard potting mix. Remember seeds in the wild don’t get to start with fancy seed raising mix! Don’t start in straight compost as this is too strong for baby seedlings.

β€’ A dibber, popsicle stick, teaspoon handle, pencil or your finger for making the hole to pop your seed into.

β€’ Seeds: Your favorite vegetable, herb, or flower seeds – choose a variety that suits your gardening goals and family’s tastes.

β€’ Labels or Popsicle Sticks: Keep track of what's growing where! Label your trays to avoid mix-ups. So many times gardeners ( me included) tell ourselves we will remember that tray or batch and then when they come up and you have 6 tomato varieties or look alike brocolli and cauli seedlings it becomes a problem and you wish you took the time to put a quick label on.

β€’ Grow Lights or sunny windowsill: Provide ample light for strong and healthy seedlings. You can pop them under grow lights or place your trays on a sunny windowsill. If you don’t have enough light or they aren’t close enough you will get leggy seedlings.

β€’ Humidity Domes or Plastic Covers: Maintain a consistent level of humidity to promote germination and early growth. Some seeds [prefer more than others. You can also use cling wrap over a tray to capture the moisture and then take off when they sprout.

β€’ Spray Bottle: Gently mist your seeds and seedlings to keep the soil moist without disturbing them. You will see the colour of the soil change to a lighter colour when they are dry.

β€’ Bottom Watering Tray without holes : Nice option for when the seeds get larger post the misting phase. Over watering can provide a prime environment for fungus gnats and damping off so avoid this. If you find you have bad issues with fungus gnats in your area – you can sterilise your soil by baking it in the oven before you use – which will kill the gnats and their eggs.

β€’ Heat Mat (optional): Speed up germination and encourage strong root development with a seedling heat mat. Good for seeds like chilli peppers that like a higher temp to kick off.

β€’ Fan – source of air movement so that the seeds get strengthened before they go outside into all elements and wind.

β€’ Diary or Journal: Take notes and record your seed starting journey so you know how long they took to germinate, what your germination rate was. There is much benefit in noting these things. It helps you plan when you need to pot up etc and also give you a wealth of information for next season on how to improve with what worked and what didn’t. You aren’t born with a green thumb – you grow one through trial and error!

β€’ Transplant Pots: Have larger pots or trays ready for when your seedlings are ready to move to upsize.

Want to make your very own halloumi cheese from scratch?

This girl loves me some squeaky cheese with a big brekkie!

Don't worry, it's not as tricky as it sounds.

You will need:
- 3.8 liters of raw milk
- A pinch (about 1/4 teaspoon) of calcium chloride (if needed)
- A pinch (about 1/4 teaspoon) of liquid rennet
- Non-iodized salt (to taste)

Equipment:
- Big stainless steel pot
- Thermometer
- Cheese mold (optional)
- Cheesecloth
- Colander
- Cheese press (optional)

1. Heat the milk: Pour the raw milk into a large stainless steel pot and gently heat it over medium heat until it reaches around 30Β°C. Stir every now and then to avoid burning.

2. Add calcium chloride (if needed): If you're using pasteurized raw milk or the milk isn't coagulating well, mix about 1/4 teaspoon of calcium chloride with 1/4 cup of non-chlorinated water. Stir it well then add it to the milk, gently stirring.

3. Coagulate the milk: Once the milk reaches 30Β°C, take the pot off the heat. Dilute about 1/4 teaspoon of liquid rennet in 1/4 cup of non-chlorinated water, and add it to the milk.
Stir gently up and down for about 30 secs.

4. Let the curds form: Cover the pot and leave it alone for about 45 minutes to 1 hour, or until you notice a clean break. The curds should become firm and separate from the whey.

5. Cut and cook the curds: Grab a long knife and cut the curds into 1.3 cm (1/2-inch) cubes. Let them rest for 5 minutes. Then, put the pot back on low heat and slowly warm up the curds to around 40Β°C (105Β°F). Stir gently to prevent sticking.

6. Remove the whey: Once the curds reach the desired temperature, take the pot off the heat and let the curds settle for 5 minutes. Use a ladle or cheesecloth to skim off the whey from the surface.

7. Shape the cheese: Line a colander with cheesecloth and carefully transfer the curds into it, allowing the whey to drain. Let it sit for about 10 minutes, giving it a gentle stir occasionally to release more whey. Now's the time to add salt to taste and mix it in evenly.

8. Press the cheese (optional): If you prefer a firmer texture, shape the curds into a compact mass using your hands or use a cheese mold. Apply gentle pressure for about 1-2 hours to remove more whey.

9. Brine or refrigerate: Want to enhance the flavor and shelf life? You can soak the cheese in a 10% saltwater brine for 4-8 hours. If not, skip the brining step and pop it in the fridge directly.

😍 Enjoy: After it is brined or refrigerated - your homemade Halloumi cheese is ready to be devoured!
Slice it, grill it, or pan-fry it. Halloumi has a high melting point, so it won't lose its shape when cooked.

✨ Start with the right variety: Look for cold-hardy silverbeet varieties, such as 'Bright Lights' or 'Rhubarb Chard,' which can withstand lower temperatures.

🌱 Choose a sunny spot: Rainbow silverbeet thrives in full sun, so select a location in your garden that receives at least six hours of direct sunlight each day.

πŸ’§ Water consistently: Keep the soil moist but not waterlogged. Aim for regular, moderate watering to ensure proper growth and avoid drying out or overwatering.

🌱 Provide well-drained soil: Rainbow silverbeet prefers well-drained soil with organic matter. Ensure good drainage by adding compost or well-rotted manure to the soil.

Headache?

Ditch the panadol or tylenol and try these effective natural remedies.

Panadol and tylenol have a number of side affects especially associated with long term use.

Known for causing liver damage, GI issues such as ulcers and intestinal bleeding, to name just a few.

So, once you know the natural options that are available to you - you can make a different choice!

My favourite are Turmeric and White Willowbark - both of which we have coming out very shortly in tincture form!

When we know better, we can do better for our own health and for our family's.

Store-bought Mayo might taste good, but those jars are filled with weird ingredients like GMOs and soybean oil.

Making your own homemade mayo lets you control what goes in it.

The recipe I wanna share with you today is super easy - you probably have all the ingredients at home already!

An immersion blender is the ideal tool for homemade mayo.
You can submerge it directly into ingredients blend smooth mayo fast.

Other options work but take longer and require slowly drizzling oil. The hand blender lets you emulsify the mayo right in the jar!

Ingredients:

β€’ 1 whole egg - not just yolk, use the entire egg for best results. Make sure it's very fresh.
β€’ 1 teaspoon any mustard - it emulsifies, no added flavor. Yellow, dijon, brown, spicy - your choice!
β€’ 1/2 teaspoon salt - for flavor, use a nice sea salt. Don't skimp on it.
β€’ 2 teaspoons lemon juice - acid helps emulsify too.
β€’ 1 teaspoon vinegar - the recipe uses white distilled but apple cider vinegars work too.
β€’ 3/4 cup oil - see tips below for choosing the right type of oil!
Choosing the oil is key for flavor and texture. Store-bought uses tasteless soybean oil. For homemade, use a mild oil like grapeseed or avocado that stays liquid when chilled so mayo spreads nicely when cold.

Method:
β€’ Add egg, mustard, salt, lemon juice and vinegar to a 500ml jar.
β€’ Slowly pour oil on top. Let sit for 1 minute so ingredients separate before blending.
β€’ Put immersion blender all the way to bottom of jar. Turn on and leave put - don't lift it until emulsified!
β€’ Once white and creamy, slowly move blender up and down to incorporate rest of oil.
β€’ Keep blending until completely thick and emulsified with no oil left.
β€’ Lid it and refrigerate up to 2 weeks!
Is your Mayo not quite right?

Runny or "broken" mayo means it didn't emulsify right. Mustard, vinegar and lemon juice should help avoid this. Also don't lift blender until it thickens.

To fix, whisk in mustard or egg yolk to broken mayo until emulsified again.

With this method, you get perfect emulsification every time!
No more broken mayo.

Storage tips:
Keep chilled in fridge up to 2 weeks. Use clean utensils each time to avoid contamination.

Raw egg safety is personal choice. Use your best judgment with store eggs. I use fresh ones from my own chickens.

I just love seeing the bright orange and yellow fruit laden trees , driving around in winter!πŸ‹

Thought I'd share some advice for caring for lemon trees over the winter months here in New Zealand.

πŸ‹ Meyer and Yen Ben are good lemon varieties that handle our wet winters.

πŸ‹ When planting, the hole you dig should be twice the depth and width of the rootball of the plant.

πŸ‹ Soak your tree in a bucket of seaweed tonic before you plant and allow to drain. This helps prevent transplant shock, giving your lemon tree a healthy start.

πŸ‹ Shelter from frosts which citrus hate.

πŸ‹ Prune off any dead wood or leaves to direct energy into new flowering.

πŸ‹ Feed your lemon tree in spring and summer to encourage maximum fruiting and flowering.

πŸ‹ Magnesium deficiencies can be common in citrus, which will appear as yellowing leaves. Apply epsom salts around the drip line of the tree to correct the deficiency.

πŸ‹ Protect your plants from the elements with layers of mulch, so you can keep their roots moist.

πŸ‹ Water regularly if it is dry as lemons fruit heavily in winter here so they need water to produce juicy fruit.
Don't let soil dry out.

πŸ‹ Expect juicy ripe lemons in winter/early spring!
Harvest when fully yellow.

πŸ‹ Treat leaf roller caterpillars with organic Bacillus thuringiensis spray.

πŸ‹ Watch for citrus scale insects. Control with prune oil or insecticidal soap.

πŸ‹ Add lime to soil if needed to keep the pH ideal for lemons.

πŸ‹ If your lemon is dropping leaves it is likely to be stressed, too cold, have too much fertiliser, or not enough fertiliser, if there’s frost, or they are too wet.
You can try regular dosing of seaweed tonic every seven days until the tree starts bursting into leaf.

πŸ‹ Don't feed it in winter as the tree isn't actively growing.

πŸ‹ If the lemon is root bound, it'll become undersized and wont be producing new leaves or growth. Check for visible surface roots and instability in the pot. The soil dries out faster when the roots have filled the container. Slow growth and yellowing leaves indicate it's time give it a bigger pot!

πŸ‹ Also good to remove fruit in the first year to let the lemon put its energy into its roots and leaves

Be kind to your lemon and they will reward you handsomely!

So, there you have it!
With the right care you can get armloads of lemons to make all sorts of goodies from lemon meringe pie, to lemon honey and butter and all your great cold and flu remedies.

We don't all live on hectares and hectares of farmland but the good news is even if you live in the city, an apartment or don't have much space to play with, there are still ways to grow some of your own yummy fruits and veggies.

You can grow herbs and seedlings on your kitchen windowsill.

Some people grow bigger plants in lovely sunny areas of their home, keeping them warm from the winter chill and adding greenery to the indoors.

You can make the most of a small yard by planting vertically with trellises and cages.

Containers like pots, buckets, and fabric grow bags let you garden on a porch, patio, or balcony.

Try straw bale gardening in the driveway or yard.

Repurposed and up-cycled items like old buckets, milk bottles, yoghurt pottles and the like with holes drilled in, make inexpensive planters.

Place containers where they'll get plenty of sun for your plants.

Make sure the floor or structure can hold the weight when they're filled with soil and water as they will be MUCH heavier once wet.

Shelter them from wind if needed.

Join or start a community garden to share space and work with others, in Europe they have had allotments for decades if not longer where people have their own plots away from their house.

Consider indoor hydroponic or aquaponic systems. Hydroponics uses nutrients in water, aquaponics uses fish waste to feed plants that filter the water.

Both grow plants faster indoors without soil.

Ask friends or family if you can use part of their land for a garden, sharing produce or paying rent.

Grow lights let you grow indoors but plants will need hand pollinating.

The key is you CAN grow your own food without huge spaces.

Get creative with vertical planting, containers, repurposed planters, and indoor systems.

And my favourite, growing food not lawns and converting lawn into beautiful, productive gardens to feed your family!

Have fun getting your hands dirty, even in small spaces!

I am thrilled to announce that this Sunday our first will be lovingly poured, labelled and ready for their new homes - truly worth the wait!

Tinctures take TIME to macerate which extracts the special properties of the herbs, so they can provide optimal health benefits.

Our first is Cayenne Pepper Tincture – refer to our next post for all it’s uses!

Some helpful info if you haven’t used tinctures before:

β€’ Tincture colors vary based on the herb used. They may be golden, clear, red or other colours. Embrace the beautiful hues🌈
