YUMMY OHA SOUP 😋
Ingredients
• Beef
• Stock fish
• Catfish Mangala
• Ground crayfish
• Ponmo/kpomo
• Palm oil ogiri Igbo
• Cocoyam ( Soup Thickeners)
• Oha leaves (shredding with your fingers)
• Uziza leaves (chopped)
• Seasonings
• Salt
• Water/Stock

Preparation:
1. Put meat, kponmo and stock fish in a pot, add seasoning and let simmer for 5 minutes, then put a little water, cover and let cook till meat is tender.

2. You can either add cocoyam while cooking the meat so it can cook together to save time or cook the cocoyam separately.
3. When it has cooked properly, add 2 cups of water then add palm oil, allow to cook for about ten minutes. (Remove cocoyam and pound in a mortar or blend using a blender or a food processor)

4. Add ground crayfish, ground pepper, salt and let cook for another seven minutes.

5. Add the blended/ pounded cocoyam paste or achi (before you add achi to your soup, make sure you dissolve it in a little water, if not your soup will cake up). Let the soup cook for about three minutes

6. add you're ogiri Igbo turn it

7. Add your uziza first (uziza leaves are stronger than Oha leaves), then add your Oha leaves.

8. Let it cook for one minute, then turn off the cooker

9. Your delicious Oha soup is ready 😋

3 cups all-purpose Flour
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoons salt
3 eggs
1/4 cup butter
1/2 cup milk
Vegetable oil for deep frying.

Procedure: Get your ingredients ready.
Next, combine the dry ingredients: flour, baking powder, sugar, and salt in a bowl and mix well.
Add the wet ingredients: milk, eggs, and melted butter, and stir until properly combined without seed.
Gently scoop little by little of round batter inside the oil. When they are brown on one side, flip them and allow them to continue to cook until they are golden browned on both sides.
Once done, remove them from the oil and place on paper towels or a cooling rack to drain off any excess oil.

* Don't knead your meatpie, use your thumb to bring them together.

* Do not use room temperature water to mix except you are putting the dough back in fridge, always make the dough with chilled water.

* Use enough margarine for your dough ratio should be 2:1, flour 2, margarine 1.

* Do not roll your dough too thin it would likely make your meatpie to burst open.

* Pop your dough in fridge from time to time when you notice it's becoming stretchy, you don't want to have a hard meatoie after all.

* If your aim is to have a flaky pie, make use of minimal cornflour.

* Do not overwork your dough, please it will definitely affect the texture and the look of your meatpie.

* Go easy on spicing the filling, meatpie detects salty taste fast.

* Always allow the filling to cool, if possible let it be very cold.

* Do not bake your meatpie at low heat

Ofada Stew/ palm oil stew

Ingredients:
(4-8 servings)

3 _4 Semi ripe tomatoes
1 small bunch of red chilli peppers
1 small basket of Peppers
1 small basket of Red bell peppers
1 big onions
I wrap of locusts beans/ iru
Assorted meats
Brown cow skin wash and cut
6 hard boiled eggs
3 cooking spoonful of palm oil slightly bleached
Salt
2 stock cubes

Cooking directions:
-Wash the meats and pomo (cow skin) thoroughly and season according with Salt, stock cube, onions, garlic and pepper and boil till almost tender.
-Wash the tomatoes, different peppers and opinions.. blend but dont nment it smoothly.
-Place a lot on fire, Add the palm oil and allow it to heat up till it becomes almost bleached, Add in some chopped onions. (I like onions so I add some despite the fact that onion is already in the blended tomatoes.)
-Pour in the semi smooth but blended tomatoes a d peppers into the pot and stir. Allow it to fry for a say 5_10 mins depending on how much stew you are making.
-Once it the oil start a to show on the surface, pour in the almost tender boiled meats with the cow skin, add salt and iru and if it needs water. You can add plain water if the meat stock wasn't enough. The aroma of the iru at this point is simply divine.
-Stir it and allow to cool till the water content is almost dried. This is the perfect time to add in the already peeled hard boil eggs and allow to simmer on low heat.
-Stir gently and taste for salt and your delicious Ofada Stew is ready.

Serve with its usual companion stoneless Ofada Rice with some fried plantain..😋😋
