1. Bay leaf is a must ve herb in ur kitchen for steaming ur meat and cooking ur stew, jollof rice, fried rice and sauces etc.

2. Removing seeds from ur fresh pepper, helps to reduce its hotness and spiciness.

3. Sprinkling some salt on ur fresh pepper while pounding it, helps it to pound faster.

4. You can put onion in the middle of burning jollof rice to avoid the bad scent in the jollof rice.

5. If ur food is too peppery, u can use palm oil to reduce the hotness of the pepper.

6. Do not use onion when cooking draw soup and not even to season the meat, bcs it will cut the drawness. Y n how?

FISH ROLL RECIPE

INGREDIENTS

◾️2½ Cups Plain Flour
◾️4 Tbsp Margarine
◾️1 Egg
◾️1Tsp Baking Powder
◾️¼ Tsp Salt
◾️350g fish (mackerel)
◾️6-8 Tbsp Water
◾️2 Green Onions
◾️1 Small Onion (finely chopped)
◾️Cayenne Pepper To Taste
◾️Enough Oil For Frying
◾️2 tbsp Sugar

🌟 INSTRUCTIONS

◾️Mash the Fish together with the Onion, Green Onion, and cayenne pepper together in a bowl and set aside.

◾️In another Bowl, add the flour, baking powder, sugar, salt and margarine and use your finger to incorporate the margarine into the flour until it comes out crumbly.

◾️Add the Egg and mix it with the flour until it's totally absorbed by the flour.

◾️Begin to add the water a little at a time until a workable dough is formed.

◾️Transfer the fish roll dough to a work surface and knead for about 3 to 5 minutes.

◾️Then cover up the dough and leave it to rest for about 10 minutes.

◾️Roll Fit the dough to about ⅛th inch thick, then cut it out into small rectangles

(This is dependent on how big you want your Fish rolls to be and you don't need to be perfect while cutting out the rectangles of the Fish Rolls since it's still going to be rolled - no one will see the imperfection.)

◾️Take each of the cut-out rectangles and fill it with 1 to 1½ Tbsp of Fish then tightly roll the dough and secure the tips little bit to prevent the fish spillage into the oil.

◾️Fry the fish rolls in a preheated oil until it's golden brown.

◾️Serve as desired

Kuli Kuli Recipe

Ingredients

*4 cups unsalted peanuts, roasted
*Pinch dried chili, or to taste (optional)
*Pinch dried ginger, or to taste (optional)
*1/4 cup water

For savory kuli kuli: 1 tablespoon salt
For sweet kuli kuli: 1 tablespoon sugar

Instructions

1) Roast the peanuts (groundnuts) or buy already roasted peanuts. Grind the peanut with the dry chili and dry ginger into a thick paste (do not add any water at this point). Use a grinder rather than a blender.

2) Mix 1/4 cup of water into the paste. Consistently mix the paste as if mixing a cake batter. Use a mixer if you have one. You'll start to notice oil forming. The oil will start to form as soon as the water is completely incorporated into the paste.

If you're using a mixer, this should happen in about 1 minute. If you're mixing by hand, it should take 5 minutes.

3) Depending on whether you're making sweet or savory cookies, add the salt or sugar slowly as you knead the batter and extract the oil. Taste intermittently.

(Take care not to add too much salt as this can ruin your cookies. One tablespoon or less is fine for 4 cups of peanuts.)

4) Drain the oil into a pan. Do not add any more water to the paste. Don't worry about the amount of oil you're able to drain.

5) Heat the pan with the drained oil. Mold the cookies into any shape and size of your choice before dropping them into the simmering oil. Don't add more oil into the pan. As you fry the cookies, they will produce more oil.

Tips for frying

* The longer you allow the cookie to fry, the crunchier they will become, but make sure they don't burn. They should have a deep brown color when they are done.

*Frying takes a few minutes, depending on how crunchy you want them to be.

*The shelf life of the cookie depends on how dry it is. The drier it is, the longer it lasts

Palm oil rice.

Ingredients:
3 cups of rice
1 Big Red Bell Pepper (Tatashe)
2 big ball of onion
2-3 Scotch Bonnet (Rodo)
1/2 Cup dried pepper/ata ijosi (Optiona)
125ml palm oil
3 cups chicken/beef stock/water
2-3 medium size smoked fish
2-3 pieces cooked ponmo, diced/sliced (Optional)
1/2 Cup smoked prawns
3 tablespoons grounded crayfish
1 Cup spinach or pumpkin leaves/ugu or basil leaves (Optional)
2 Knorr, Maggi or your preferred cubes
Salt to Taste

Preparation:
-Parboil your rice and set aside…
-Blend the Bell Pepper (Tatashe), Scotch Bonnet (Rodo), dried pepper (Ata Ijosi), 1 Onion with little water and set aside….
-Get a fairly big pot, add the palm oil. Place on medium heat. When the oil is hot, add 1/2 sliced onion, fry till translucent, this should take around 6-8 minutes, add the crayfish, stir and fry for 2-3 minutes….
-Add 3 cooking spoons of the blended pepper, the Knorr, Maggi or preferred cubes, salt to taste, stir and fry for 5-6 minutes, stir occasionally. Try not to add too much salt if you’ll be using stock, remember stock contains a considerable amount of salt…
-Add 3 cups of stock or water if you haven’t got stock, stir and let it cook for 4 minutes to thoroughly combine, then add the Ponmo or any other tough protein you’re using,
-Gently add the parboiled rice…
-Stir and combine thoroughly, then add the shredded smoked fish and prawns, stir; make sure the liquid isn’t too much. Taste for salt and seasoning, adjust if necessary

Note: It’s better to start with a small quantity of water or stock, add more stock or water, preferably stock as you go to prevent overcooking.

-Cover tightly and cook till rice is very tender, stir occasionally to avoid burning.

Note: If you’re using vegetables, add tough vegetables like Ugu 2 minutes before doneness, then switch the heat off and continue to simmer with the residual heat for a further 2-3 mins. If you’re using Spinach, add after doneness and simmer with the residual heat for 3 min.

INGREDIENTS
8 cups raw groundnut
6 eggs
6 cups flour
1 cup sugar
Nutmeg (optional)
1/4 teaspoonbaking powder
A pinch of salt
Vegetable oil
1/3 cup powdered mik
1/2 teaspoon vanilla flavor

PROCEDURE
Whisk the egg in a bowl, add the sugar, vanilla and salt, whisk well.

Pick groundnut to remove wrong ones. Pour in warm water and salt, then seive and spray in a tray to dry, you can olace it under the sun

Mix flour, milk powder, nutmeg, and baking together in a bowl and set aside

In a larger bowl, pour in the groundnut. Take a tablespoon and sprinkle some of the whisked egg pour on the groundnut and shake.
Next, sprinkle the flour mixture and shake again.

Repeat sprinkle of egg and flour until both are exhausted and all the groundnut in the bowl are fully coated.

Fry in hot oil until golden brown and quickly take off the heat else the coated groundnut begins to taste burnt. Repeat the frying until peanuts are exhausted.

Masa (Hausa rice cake).

Ingredients. Serving: 4
3 cups of tuwo rice.
2 Table spoons of sugar.
Teaspoon of yeast.
Teaspoon of potash.
Table spoon of oil
50ml of vegetable oil
Salt to taste.

You will also need the masa baking pan as well as basic cooking utensils.

Masa is mostly taken with miyan taushe but you can still eat with yagi (spiced ground pepper). There are other complimentary meals that can be served alongside.

Get 3 cups of tuwo rice in a bowl. Divide into two equal part. Wash the first part and soak in a bowl with potash. The image below is that of tuwo rice.

Cooking directions:
-Soak a teaspoon of ground potash in half cup of water, allow to setle; Pour into the first part in a bowl, don’t add the residue. Add more water and allow to soak for 8-10hours. It is best if you soak it overnight.
-When you are ready to prepare the masa, get the second part of the tuwo rice. Wash and boil it with just water. Boil it until it is very soft. Go ahead and mash it to pulp.
-Mix the ground rice with the mashed rice together.
-Add sugar and salt to taste. Add teaspoon of yeast, stir and allow frothing for 30 minutes. The batter should be running not thick.
-Grease your masa pan with vegetable oil and scoop your batter into the pan. Allow to cook until it is golden brown. -Turn the other side with a spoon and also observe as it cooks and turn golden brown.

Egg roll.

Ingredients
2 Cups Flour
1 Egg
1 Tsp Baking powder
1/4 Tsp Salt
1/2 Tsp Nutmeg
2 Tbsp Margarine
8-9 Tbsp Water
5 Eggs Boiled
2 Tbsp Sugar

Instructions
-In a large bowl, mix together the Flour, Baking powder, Salt, Sugar and Nutmeg

-Use your fingers to blend the Margarine into the flour until it’s crumbly.

-Add the beaten egg and mix together. The dough should look dry at this point.

-Begin to introduce the water a little at a time and work the dough till dough is soft and sticky but still workable.

-work the dough for about a minute then cover it and let it rest for about 15 to 20 minutes.
-Work the dough again for a couple of seconds to a minute and divide it into 5.

-Tightly wrap each of the dough around each Egg.

-Fry on a medium heat turning over and over again until it’s golden brown.

-Serve your Egg Roll hot or warm. Enjoy!

Please note:
'Do not wrap all the eggs at once except you are ready to fry them right away. Only wrap as you fry. If you do otherwise, the dough around the egg will continue to rise. This will cause the dough to lose its snug fit around the egg by the time you fry.

-The Egg Rolls should be fried on medium heat. Frying on a high heat will prevent the Egg Roll from cooking on the inside. Don’t worry the Egg Roll will not get soggy in the Oil as long as the Oil is not cold.

-Use enough Oil to deep fry in other to get the best result.

-You can also bake this if you choose to, but the Egg Roll will not be as soft on the inside as the deep fried.

PANCAKES

INGREDIENTS :

1 cup | (150g) of plain flour
2 medium eggs
½ cup (125 mls) of evaporated milk (Peak Milk or any other)
2 tablespoons of margarine
1 cup (250 mls) of water
1 tsp Baking Powder
¼ teaspoon of salt
6 teaspoons of sugar (optional)
Vegetable oil.

Before you pan fry the pancake:

Put the margarine is a small bowl and melt in the microwave, on a stove, gas etc; You can also place the bowl in a bigger bowl of hot water to melt the margarine.
Break the two eggs into the melted margarine and beat till smooth then add ½ cup of water.
Add the flour and mix well till there are minimal lumps.
Add the milk, baking powder, salt, sugar (optional) and the remaining ½ cup of water, stir well.
Note: Blend the mix using a liquid blender. This will give the pancake batter the smoothest consistency. If you don't want to blend it, no problem, just mix the ingredients very well so that the lumps are minimal.

DIRECTIONS :

-Set a frying pan over medium heat.
-Add few drops of vegetable oil. Just enough to lubricate the frying pan.When hot, pour some pancake batter into the frying pan. Tilt the pan so that the batter coats the surface of the pan evenly. This should be a very thin coat.
-Fry the underside of the pancake for approximately 1 minute, shaking the pan from time to time till the pancake comes loose. You can also loosen it with the spatula. Check the underside to be sure it has browned to your liking, preferably light brown.
-Flip the pancake so you can fry the top side as well.The pancake is done when both sides are light brown.

For breakfast, serve with Mapple Syrup,Whipped cream & fruits or Custard or Oat Meal. If you just want to snack on the pancake, make sure you have a drink chilling in the freezer before you even start mixing the batter.

INGREDIENTS

- 1 fresh palm fruits or 800g tinned palm fruit concentrate

-Cow tail or any meat of your choice

-Fresh or dry salmon fish or anyone of your choice

-Scent leaves

-Fresh or dry pepper

-2 onion bulbs

-Seasoning cubes

-Crayfish. Grounded!

-One tomato paste( optional)

-Salt to taste

INSTRUCTIONS

-Cook the meat with seasoning cubes, salt and onion until it becomes soft and easy to chew, or season the meat with seasoning cubes and grill in an oven, if you have one. Then set them aside.

-Grind and blend the spices to powder. Also blend the pepper

-Wash the dry fish if you're using dry fishand remove the centre bone. Or boil your fresh fish together with your meat

-Boil the palm fruit for 20 to 30minutes, pound with a mortar and pestle, transfer into a bowl, add water and extract the juice using a sieve.

-Boil the juice for about 15 to 20minutes or till it becomes thick.

-Add the dried fish or your already steamed fresh fish, grounded crayfish mix, precooked meat, ground pepper and salt and seasonings to taste. Then boil for another 10 minutes.

COCONUT CHICKEN SAUCE

INGREDIENTS

Chicken thighs
Coconut cream
Bell peppers
(Yellow,green,red)
Spring Onion(chopped)
Soy sauce( 1/2 tbsp)
Habanero(chopped)

SPICE

Paprika
Chilli powder
Cayenne
Ginger
Garlic powder
Salt
Onion powder
Chicken seasoning

PREPARATION

Add the spices to the washed chicken, you want to add a good amount so that your chicken can be tasty.
Heat some vegetable oil in your frying pan, and fry the chicken on both sides till browned.
Remove a good amount of excess oil, ensure that remaining oil is not much.
Add coconut cream, you can also add some water if it's too thick. Then cook between 20-25 minutes on a low heat.
Add soy sauce, chopped bell peppers ,spring onion and simmer for 5 minute.
Serve with Rice,pasta or Anything of your choice

Mouthwatering palm oil rice.

Ingredients:
3 cups of rice
1 Big Red Bell Pepper (Tatashe)
2 big ball of onion
2-3 Scotch Bonnet (Rodo)
1/2 Cup dried pepper/ata ijosi (Optiona)
125ml palm oil
3 cups chicken/beef stock/water
2-3 medium size smoked fish
2-3 pieces cooked ponmo, diced/sliced (Optional)
1/2 Cup smoked prawns
3 tablespoons grounded crayfish
1 Cup spinach or pumpkin leaves/ugu or basil leaves (Optional)
2 Knorr, Maggi or your preferred cubes
Salt to Taste
4-5 eggs🥚
Locust Beans (Optional)
Preparation:
-Parboil your rice and set aside…
-Blend the Bell Pepper (Tatashe), Scotch Bonnet (Rodo), dried pepper (Ata Ijosi), 1 Onion with little water and set aside….
-Get a fairly big pot, add the palm oil. Place on medium heat. When the oil is hot, add 1/2 sliced onion, fry till translucent, this should take around 6-8 minutes, add the crayfish, stir and fry for 2-3 minutes….
-Add 3 cooking spoons of the blended pepper, the Knorr, Maggi or preferred cubes, salt to taste, stir and fry for 5-6 minutes, stir occasionally. Try not to add too much salt if you’ll be using stock, remember stock contains a considerable amount of salt…
-Add 3 cups of stock or water if you haven’t got stock, stir and let it cook for 4 minutes to thoroughly combine, then add the Ponmo or any other tough protein you’re using,
-Gently add the parboiled rice…
-Stir and combine thoroughly, then add the shredded smoked fish and prawns, stir; make sure the liquid isn’t too much. Taste for salt and seasoning, adjust if necessary

Note: It’s better to start with a small quantity of water or stock, add more stock or water, preferably stock as you go to prevent overcooking.

-Cover tightly and cook till rice is very tender, stir occasionally to avoid burning.

If you’re using vegetables, add tough vegetables like Ugu 2 minutes before doneness, then switch the heat off and continue to simmer with the residual heat for a further 2-3 minutes. If you’re using Spinach, add after doneness for 3 minutes. .
