Garden eggs, also known as African eggplants or aubergines, are a type of vegetable that are native to Africa.
They are part of the nightshade family, which includes other vegetables such as tomatoes and potatoes.
They are grown in different parts of Africa, and they are a staple in many African diets.
The forms of eating garden eggs seem endless in our society as it is eaten raw, cooked (in the form of sauce) while others make salad from them.
Garden eggs come in many different colours, but the most common in this part of the world is white, green, and yellow.

1. It reduces cholesterol
Garden egg is low in calories, sodium, and protein and is very high in dietary fibre and potassium. The high fibre content in eggplant helps to reduce bad cholesterol in the body, thereby protecting the heart.
Garden egg is also the perfect recipe for achieving weight loss within a short period of time because it is very low in calorie content.
2. It helps in the prevention and treatment of diabetes
African garden egg is also a perfect snack for those with diabetes or those concerned about preventing complications of diabetes in their liver.
Research has shown that garden eggs curb elevated blood sugar by inhibiting key enzymes associated with the development of type 2 diabetes.
3. It boosts the immune system
The numerous components existing in the garden egg like; iron, Vitamin B6, Vitamin B9, Vitamin C, Vitamin E, zinc, and protein- give a massive boost to your immune system. Ways to enjoy garden eggs
Garden egg and groundnuts.
As simple as that..
Wash your garden eggs with salt or vinegar to remove germs.
Rinse with tepid water and refrigerate.
Serve with groundnut/ pea nuts ๐ฅ๐ฅ
You can also make paste with your peanut and scoop with your garden eggs
Garden egg sauce with yam or plantains
Procedure
Your plantain with the back do not peel the plantain if it's plantain you're using that is .
However if it's yams you are using slice your yam wash it and place inside the saucepan , wash your garden eggs add water and boil all together once your garden egg is soft ,remove and keep aside or set.
Then continue to monitor your yam until ready. Pour out the water from your yam and set aside.
get your tomatoes your onion your peppers and blend into a puri . pound your garden egg into a pulp then you may decide to use either palm oil or vegetable oil or groundnut oil whatever suits you put in the dry saucepan put on the fire and make a sauce. When it is ready add your garden egg pulp. remember the garden egg has already been cooked so you do not have to leave it for too long just add seasoning your fish, crayfish, prawn or whatever you wanna add . Then serve with yam or plantains .
