While many coffee shops serve hand-pulled milk tea, 13 Units still use the traditional Hong Kong method of hand-pulling tea that's actually part of Hong Kong's intangible cultural heritage. According to the owner, one pot yields only 8 cups since the tea leaves cannot be reused or diluted. The tea master goes through the process of brewing, braising, colliding, and reheating every time, which explains why it takes 20 minutes just to brew a whole pot...
