🍫 Chocolate Raspberry Roll Cake 🍓
Ingredients:For the Cake:
4 eggs
¾ cup granulated sugar
1 tsp vanilla extract
¼ cup cocoa powder
½ cup all-purpose flour
1 tsp baking powder
¼ tsp salt
For the Filling:
1 cup heavy cream
¼ cup powdered sugar
1 tsp vanilla extract
1 cup fresh raspberries
For Decoration:
Powdered sugar
Fresh raspberries
Instructions:
Preheat Oven: Heat oven to 350°F (175°C). Grease a 10x15-inch jelly roll pan and line with parchment paper.
Prepare Batter: In a large bowl, beat eggs and granulated sugar until thick and pale. Stir in vanilla extract. In a separate bowl, sift cocoa powder, flour, baking powder, and salt. Gently fold dry ingredients into the egg mixture until just combined.
Bake Cake: Pour batter into the prepared pan, spreading evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
Prepare for Rolling: Lay a clean kitchen towel on the counter and dust with powdered sugar. Once the cake is done, immediately invert it onto the towel. Carefully peel off the parchment paper.
Roll & Cool: Roll the cake and towel together from the short end. Let cool completely on a wire rack.
Make Filling: In a bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Fill Cake: Gently unroll the cooled cake and spread whipped cream over the surface. Scatter fresh raspberries evenly over the cream.
Re-Roll Cake: Carefully roll the cake back up without the towel. Place seam side down on a serving platter.
Decorate: Dust the top with powdered sugar and decorate with fresh raspberries.
Chill & Serve: Chill for at least 1 hour before slicing and serving.
