4 eggs

¾ cup granulated sugar

1 tsp vanilla extract

¼ cup cocoa powder

½ cup all-purpose flour

1 tsp baking powder

¼ tsp salt

For the Filling:

1 cup heavy cream

¼ cup powdered sugar

1 tsp vanilla extract

1 cup fresh raspberries

For Decoration:

Powdered sugar

Fresh raspberries

Instructions:

Preheat Oven: Heat oven to 350°F (175°C). Grease a 10x15-inch jelly roll pan and line with parchment paper.

Prepare Batter: In a large bowl, beat eggs and granulated sugar until thick and pale. Stir in vanilla extract. In a separate bowl, sift cocoa powder, flour, baking powder, and salt. Gently fold dry ingredients into the egg mixture until just combined.

1 tbsp fish sauce
Juice of 2 limes
1 tsp brown sugar
1 cup baby spinach
1 red bell pepper, sliced

Lime wedges, for serving

Instructions:

Instructions:

Directions
1️⃣ Prepare the Crust:

Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
In a mixing bowl, combine the chocolate cookie crumbs with melted butter, mixing until well combined. Press the mixture firmly into the bottom of the prepared pan and set aside.
2️⃣ Make the Cheesecake Filling:

In a large bowl, beat the cream cheese and granulated sugar together until smooth and creamy.
Dissolve the coffee granules in the hot water, then add it to the cream cheese mixture along with the vanilla extract.
Add the eggs one at a time, beating well after each addition until just combined.

Ingredients:
For the Chocolate Cake:

1 3/4 cups (220g) all-purpose flour
3/4 cup (65g) unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup (200g) granulated sugar
1/2 cup (100g) brown sugar, packed
2 large eggs
1 cup (240ml) whole milk
1/2 cup (120ml) vegetable oil
2 teaspoons vanilla extract
1 cup (240ml) boiling water
For the Chocolate Mousse Filling:

8 oz (225g) semisweet or bittersweet chocolate, chopped
1 1/4 cups (300ml) heavy cream, divided
2 tablespoons granulated sugar (optional)
1 teaspoon vanilla extract
For the Chocolate Ganache (optional):

4 oz (115g) semisweet chocolate, chopped
1/2 cup (120ml) heavy cream
Instructions:
1. Make the Chocolate Cake:
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or line them with parchment paper for easier removal).
Sift the dry ingredients: In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
Mix wet ingredients: In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, milk, vegetable oil, and vanilla extract until smooth and combined.
Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Add boiling water: Stir in the boiling water (the batter will be thin, but this is normal).

3. Assemble the Cake:
Level the cakes: Once the cakes are completely cool, use a serrated knife to level the tops if necessary, ensuring they are flat and even.
Add mousse filling: Place one layer of cake on a serving plate. Spread a thick layer of chocolate mousse on top of the cake. Place the second layer of cake on top of the mousse.
Chill the cake: Refrigerate the assembled cake for at least 2–3 hours (or overnight) to allow the mousse to set.
4. Optional Ganache Topping:
Make the ganache: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 2 minutes. Stir until smooth.
Pour over cake: Once the ganache is smooth and slightly cooled, pour it over the top of the chilled cake, letting it drip down the sides. You can also spread it evenly with a spatula.
Chill again: Return the cake to the refrigerator for about 30 minutes to set the ganache.
5. Serve:

1 cup boiling water (or coffee)
For the cherry filling:
1 jar morello or tart cherries in syrup
1/4 cup cherry syrup or cherry liqueur
For whipped cream:
2 cups heavy cream
3 tbsp powdered sugar
1 tsp vanilla
Instructions:
Make the cake: Preheat oven to 350°F (175°C). Mix dry ingredients, then add eggs, milk, oil, and vanilla. Stir in boiling water (batter will be thin). Bake in two 9-inch pans for 30-35 mins. Cool completely.

Prepare cherry filling: Heat cherries with sugar (optional) until softened. Add cornstarch slurry if needed to thicken. Cool.

Make whipped cream: Whip cream, powdered sugar, and vanilla to soft peaks.
