CHRISTMAS ROAST CHICKEN 🍗 🎄
Christmas is right around the corner and we are all looking for easy ways to make the Christmas table special while not putting stress on our wallets. ☺️
This roast chicken is gonna be the star on your table I promise you that. A little time consuming but man the end result is worth rocking around the Christmas tree! 🎄
Ingredients
-Full Chicken 1.5kg
-Salt and Pepper
-Garlic, 1/2 bulb
-Thyme, 4 to 5 sprigs
-Lemon, 1/2
Curry Butter
- Butter 50g
- Garlic, minced, 10 cloves
- Curry Leaves, chopped, 3 sprigs
- Curry Powder 1/2 tsp
- Chili Powder 1/2 tsp
- Lemon Juice 2 tbsp
Method
1. Pre Heat the oven to 200°C
2. Dry the chicken as much as possible with power towels and rub salt all over and inside the chicken. Leave open to cure in the fridge overnight or for a day.
3. Rub the excess salt off and season the inside with salt and pepper. Insert the garlic, thyme and lemon wedge.
4. Mix all ingredients for Curry Butter and rub all over the chicken.
5. Put on a roasting tray and roast in the oven for 10 - 15 minutes. Then reduce the temperature to 185°C and cook for 1 hour or until the chicken looks golden brown or until the meat is at 165°F.
6. Rest the chicken for about 1 hour before serving.

FILIPINO SPICY PORK ADOBO 🇵🇭
I keep making adobo whenever I need an easy and yet an amazing pork dish! No wonder the Filipinos go nuts over adobo. You can make this with Chicken too 🙌🏼
-Ingredients for the Marinade-
Pork, shoulder or belly pieces - 500g
Bay Leaves - 4
Soy Sauce - 2tbsp
Coconut Vinegar - 2tbsp
Black Peppercorns - 1tbsp
- Marinate everything well and leave for about 30 minutes to 1 hour
- Sear the meat until brown
- Save the marinating juice for later
-Rest of the Ingredients-
Onions, slices - 1
Garlic, chopped - 10 cloves
Lemongrass, smashed - 1
Chili Flakes - 1tbsp
Coconut Milk - 1/2 cup
Sugar - 1 tbsp
-ADOBO-
- Heat a plan on medium heat with some coconut oil and fry the onions, garlic, lemongrass and chili flakes until onions are translucent
- Add the seared pork and mix well
- Add the saved marinade and water I until pork is almost covered
Simmer in low medium heat for 30 minutes or until reduced to a thick consistency
- Add the coconut milk and sugar, mix and cook for another 5 minutes
- Serve with rice
