Jaffna Spiced Pork Chops
Turmeric Coconut Sauce and Fresh Salad with Lentils 😋

I have been thinking of making more food using local ingredients lately. Especially these days when ingredients are hard to find. We have such a rich cuisine and sometimes I don’t know if we are taking the advantage of that. Even though I’m not an expert I’m gonna do my part to help the cause of a modern Sri Lankan cuisine. These are just the first such steps.

This pork chop is marinated with a mixture of spices that resemble the sensational spices in Jaffna. The entire dish I feel like is a homage to the northern Sri Lankan cuisine and I hope you’ll love it as its simple and easy to make.

It’s been a minute. ❤️

It all started when I was shooting my last recipe video. A peaceful protest became violent. Since then all of us went to the streets to protest the current President and the government. The Aragalaya started.

A lot has changed since then. While we have achieved many great things through protesting, we also have dark stormy clouds forming in the horizon. Things are about to get more difficult for us Sri Lankans.

I lost my will to create food content. I was forced to put my passion on hold. It didn’t make sense to me to talk about food when we are struggling to find the most essential items in the midst of the darkness of power cuts. I felt that I was doing something insensitive. Ingredients have become harder to find and even harder to afford.

But I’m not gonna give up. I have come such a long away to do that now. Best we can do is to adapt. Cook with what’s available to us. Create new things with new ingredients. I think cuisines are polished during the hardest of times.

So this is the time content creators like us need the support of you. Small local businesses thrive on our support. My content may give you some sense of positivity and reassurance in the middle of this chaos. Sometimes with all the negativity, you need a distraction.

So as I’m gonna restart my posting, I would like to apologize if it may seem insensitive. I assure you that all I want to do is inspire. Next few years are bleak but let’s not let that light inside us die down. Let’s get through this together ❤️

CHRISTMAS ROAST CHICKEN 🍗 🎄

Christmas is right around the corner and we are all looking for easy ways to make the Christmas table special while not putting stress on our wallets. ☺️

This roast chicken is gonna be the star on your table I promise you that. A little time consuming but man the end result is worth rocking around the Christmas tree! 🎄

CHRISTMAS ROAST CHICKEN 🍗 🎄

Christmas is right around the corner and we are all looking for easy ways to make the Christmas table special while not putting stress on our wallets. ☺️

This roast chicken is gonna be the star on your table I promise you that. A little time consuming but man the end result is worth rocking around the Christmas tree! 🎄

Ingredients
-Full Chicken 1.5kg
-Salt and Pepper
-Garlic, 1/2 bulb
-Thyme, 4 to 5 sprigs
-Lemon, 1/2

Curry Butter
- Butter 50g
- Garlic, minced, 10 cloves
- Curry Leaves, chopped, 3 sprigs
- Curry Powder 1/2 tsp
- Chili Powder 1/2 tsp
- Lemon Juice 2 tbsp

Method
1. Pre Heat the oven to 200°C
2. Dry the chicken as much as possible with power towels and rub salt all over and inside the chicken. Leave open to cure in the fridge overnight or for a day.
3. Rub the excess salt off and season the inside with salt and pepper. Insert the garlic, thyme and lemon wedge.
4. Mix all ingredients for Curry Butter and rub all over the chicken.
5. Put on a roasting tray and roast in the oven for 10 - 15 minutes. Then reduce the temperature to 185°C and cook for 1 hour or until the chicken looks golden brown or until the meat is at 165°F.
6. Rest the chicken for about 1 hour before serving.

FILIPINO SPICY PORK ADOBO 🇵🇭

I keep making adobo whenever I need an easy and yet an amazing pork dish! No wonder the Filipinos go nuts over adobo. You can make this with Chicken too 🙌🏼

-Ingredients for the Marinade-
Pork, shoulder or belly pieces - 500g
Bay Leaves - 4
Soy Sauce - 2tbsp
Coconut Vinegar - 2tbsp
Black Peppercorns - 1tbsp

- Marinate everything well and leave for about 30 minutes to 1 hour
- Sear the meat until brown
- Save the marinating juice for later

-Rest of the Ingredients-
Onions, slices - 1
Garlic, chopped - 10 cloves
Lemongrass, smashed - 1
Chili Flakes - 1tbsp
Coconut Milk - 1/2 cup
Sugar - 1 tbsp

-ADOBO-
- Heat a plan on medium heat with some coconut oil and fry the onions, garlic, lemongrass and chili flakes until onions are translucent
- Add the seared pork and mix well
- Add the saved marinade and water I until pork is almost covered
Simmer in low medium heat for 30 minutes or until reduced to a thick consistency
- Add the coconut milk and sugar, mix and cook for another 5 minutes
- Serve with rice

It has been sometime! Here’s my signature Chocolate Biscuit Pudding to start things off again 🙌🏼

For the last few months I have been through a lot. Focusing on my MBA 🎓, starting and ending a relationship and all while planning my future.

OH MAN! Not another Hot Cross Buns post! 🙄

Yeah I feel ya! 😂 This year more than ever there has been a bombardment of Hot Cross Buns on the gram. But hey it all ends today! 😬

I made Hot across Buns for the first time ever and I must say it was an interesting experience. These buns were sweet and fruity with a whisper of cinnamon which made it extra special.

Definitely a must for Easter. 🙌🏼

Never in a million years did I think I’ll get to make these but man these were fun to make! You see them at kid’s birthday parties and random coffee shops but never imagine making them at home. But now you can! It’s super fun and super easy.
