1 Onion
2 carots
1 zuchinis
1 red peper
1 yellow peper
1 chayote
2 laurel leaves
2 cup water
Salt and peper

Ingredient:
1/5 kg of pork ribs
2 zucchini cut into rings
1 whole onion cut into small pieces
5 Belgian leaves
3 diced potatoes
2 liters of vegetable or meat broth (or 2 bouillon cubes)
procedures:
brown the onion in the oil, then put the pork ribs and brown with the onion, add the broth. If you don't have broth, use water and put two cubes of data. Ingredients
2 tablespoon canola oil
1 onion, peeled and chopped
2 cloves garlic, peeled and minced
1/2 pound pork belly, cut into 1-inch cubes
1 tablespoon shrimp paste
2 Roma tomatoes, chopped
2 cups water
1/2 small kalabasa, peeled and cut into pieces
8 okra, ends trimmed
1/2 bunch long beans, ends trimmed and cut into 3-inch lengths
1 medium ampalaya (bittermelon), seeded, halved and cut into 1-inch thick
1 large eggplant, ends trimmed and cut into 1-inch thick
salt and pepper to taste
In pot over medium heat, heat oil. Add onions and garlic and cook, stirring regularly, until softened.
Add pork and cook, stirring occasionally, until lightly browned.
Add shrimp paste and continue to cook, stirring occasionally, until it begins to brown.
Add tomatoes and cook, mashing with the back of a spoon, until softened and have released juice.
Add water and bring to a boil. Lower heat, cover and cook for about 15 to 20 minutes or until meat is tender. Add more water in 1/2 cup increments as needed to maintain about 1 cup of liquid.
Add squash and cook for about 2 minutes or until almost tender.
Add long beans and continue to cook until tender-crisp.
Add ampalaya, eggplant, and okra. Continue to cook for about 4 to 5 minutes or until vegetables are tender yet crisp.
Season with salt and pepper to taste. Serve hot.
PORK MENUDO
1 Β½ lbs. pork shoulder cut into cubes
4 ounces pork liver cubed
6 pieces of frankfurters
2 pieces potato cubed
1 piece carrot cubed
4 pieces dried bay leaves
2 cups of beef broth
8 ounces tomato sauce
1 piece onion chopped
3 cloves garlic minced
1 cup of green peas
5 tablespoons cooking oil
4 tablespoons soy sauce
3 tablespoons oyster sauce
Salt and ground black pepper to taste
nstructions
Heat oil in a wok. SautΓ© garlic and onion until the onion softens.
Add pork. Continue sautΓ©ing until the outer part turns light brown.
Add soy sauce and oyster sauce. Cook for 1 minute.
Pour tomato sauce and beef broth. Let boil.
Stir and then add dried bay leaves. Cover the wok. Adjust heat to a low setting. Cover the wok and continue cooking until the pork tenderizes. Note: add water if the sauce starts to dry-up while the pork is not tender yet.
Add pork liver. Cook for 8 minutes.
Add potato and carrot and green peas. Cook for 10 minutes.
Season with salt and ground black pepper. Serve with warm rice.
