Changezi Chicken Recipe
Changezi Chicken Recipe for 1.5 kg of chicken:
Ingredients:
1.5 kg chicken, cut into pieces
2 large onions, finely sliced
2 tomatoes, pureed
1/2 cup yogurt
2 tablespoons ginger-garlic paste
2 tablespoons red chili powder
1 teaspoon turmeric powder
1 tablespoon coriander powder
1 tablespoon cumin powder
1/2 cup fresh cream
1/4 cup cashew nuts, soaked in warm water
1/4 cup almonds, soaked in warm water
1/4 cup milk
4 tablespoons ghee or clarified butter
Salt to taste
Fresh coriander leaves for garnish
Oil for cooking
Procedure:
Start by making a smooth paste of the soaked cashew nuts and almonds with the help of milk.
Marinate the chicken pieces with yogurt, half of the ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, and a pinch of salt. Leave it for at least 30 minutes.
Heat oil in a large pan or skillet, and add the marinated chicken. Cook until the chicken is browned and almost cooked through. Remove the chicken from the pan and set it aside.
In the same pan, add ghee and sauté the sliced onions until they turn golden brown.
Add the remaining ginger-garlic paste and cook for a few more minutes.
Add the pureed tomatoes and cook until the oil starts to separate from the mixture.
Stir in the cashew-almond paste and cook for a few minutes.
Add the chicken back to the pan and mix well with the tomato-onion mixture.
Pour in the fresh cream and simmer the mixture for about 10-15 minutes, until the chicken is fully cooked and the gravy thickens.
Adjust the seasoning with salt and add more red chili powder if you prefer it spicier.
Garnish with fresh coriander leaves and serve your Changezi Chicken hot with naan or rice.
