Changezi Chicken Recipe for 1.5 kg of chicken:

Ingredients:

1.5 kg chicken, cut into pieces
2 large onions, finely sliced
2 tomatoes, pureed
1/2 cup yogurt
2 tablespoons ginger-garlic paste
2 tablespoons red chili powder
1 teaspoon turmeric powder
1 tablespoon coriander powder
1 tablespoon cumin powder
1/2 cup fresh cream
1/4 cup cashew nuts, soaked in warm water
1/4 cup almonds, soaked in warm water
1/4 cup milk
4 tablespoons ghee or clarified butter
Salt to taste
Fresh coriander leaves for garnish
Oil for cooking
Procedure:

Start by making a smooth paste of the soaked cashew nuts and almonds with the help of milk.

Marinate the chicken pieces with yogurt, half of the ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, and a pinch of salt. Leave it for at least 30 minutes.

Heat oil in a large pan or skillet, and add the marinated chicken. Cook until the chicken is browned and almost cooked through. Remove the chicken from the pan and set it aside.

In the same pan, add ghee and sauté the sliced onions until they turn golden brown.

Add the remaining ginger-garlic paste and cook for a few more minutes.

Add the pureed tomatoes and cook until the oil starts to separate from the mixture.

Stir in the cashew-almond paste and cook for a few minutes.

Add the chicken back to the pan and mix well with the tomato-onion mixture.

Pour in the fresh cream and simmer the mixture for about 10-15 minutes, until the chicken is fully cooked and the gravy thickens.

Adjust the seasoning with salt and add more red chili powder if you prefer it spicier.

Garnish with fresh coriander leaves and serve your Changezi Chicken hot with naan or rice.

Butter Pecan Split ice cream is a delightful treat. Here's a simplified process to make it:

Ingredients:

4 ripe bananas, peeled and frozen
1/2 cup chopped pecans
2 tablespoons butter
1/2 cup brown sugar
1 teaspoon vanilla extract
1 cup heavy cream
Instructions:

In a saucepan, melt the butter over low heat. Add the chopped pecans and toast them until they're golden brown. Remove them from the heat and set them aside.

In the same saucepan, add the brown sugar and allow it to melt and caramelize, stirring occasionally. This should take a few minutes. Once it's a golden-brown color, remove it from the heat and let it cool.

While the caramel cools, place the frozen bananas, vanilla extract, and heavy cream in a blender or food processor. Blend until you have a smooth and creamy mixture.

Once the caramel has cooled, break it into pieces and mix it into the banana mixture, along with the toasted pecans. You can either fold them in gently or blend them briefly, depending on your preference for caramel and pecan distribution.

Transfer the mixture into an airtight container and freeze it for at least 4-6 hours or until it reaches your desired ice cream consistency.
