Eggless Chocolate Vanilla Swirled Cake Recipe 😋😋

Ingredients:

🌺 For the Dry Ingredients:

1 ½ cups (190g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
Pinch of salt

🌺 For the Wet Ingredients:

¾ cup (150g) sugar
½ cup (120ml) vegetable oil or melted butter
1 cup (240ml) milk
1 tsp vanilla extract
1 tsp vinegar or lemon juice

🌺 For the Chocolate Batter:

2 tbsp cocoa powder
2 tbsp milk

Method :-

1- Preheat your oven to 180°C (350°F). Grease and line a loaf pan or round cake pan with parchment paper.

2- In a bowl, sift together the flour, baking powder, baking soda, and salt.

3- In a separate bowl, whisk together sugar, oil, milk, vanilla extract, and vinegar until smooth.

4- Gradually add the dry ingredients into the wet mixture. Fold gently until just combined. Avoid overmixing.

5- Divide the batter into two equal portions.

6- Mix cocoa powder and 2 tbsp milk into one portion of the batter, stirring until smooth.

7- Alternate spoonfuls of vanilla and chocolate batter into the prepared pan. Use a skewer or knife to swirl the batters lightly for a marbled effect.

8- Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.

12 small flour or corn tortillas (6-inch)
2 cups cooked and shredded chicken
1 cup enchilada sauce (red or green)
1 cup shredded Mexican blend cheese (or cheddar)
1/2 cup black beans (optional)
1/2 cup corn kernels (optional)
1/4 cup chopped green onions
1/4 cup chopped cilantro (optional)
Non-stick cooking spray

Method :-

1- Preheat Oven: Preheat your oven to 375°F (190°C). Spray a muffin tin with non-stick cooking spray.

2- Prepare the Tortilla Cups:

Cut each tortilla into smaller circles to fit into the muffin tin (use a cookie cutter or trim with scissors).

Press each tortilla piece into the muffin cups to form a little bowl.

3- Make the Filling:

Black Gulab Jamuns Recipe 😋😋 Definitely you must Love it !!

Ingredients

❣️ For the Jamun Dough:

Khoya (mawa): 1 cup (crumbled)
All-purpose flour (maida): 2 tablespoons
Baking soda: A pinch
Milk: 2-3 tablespoons (as needed for kneading)
Ghee or oil: For frying

❣️ For the Sugar Syrup:

Sugar: 2 cups
Water: 1 ½ cups
Cardamom pods: 3-4 (crushed)
Rose water or kewra essence: 1 teaspoon (optional)
Saffron strands: A pinch (optional)

Method :-

1- Prepare the Sugar Syrup

In a large pan, combine sugar and water. Heat until the sugar dissolves completely.

Add crushed cardamom pods, rose water, or saffron. Simmer for 8-10 minutes.

Set the syrup aside and keep it warm.

2- Make the Dough

In a mixing bowl, combine crumbled khoya, all-purpose flour, and baking soda.

Mix well and add milk gradually to form a smooth, soft dough. Avoid over-kneading as it can make the jamuns hard.

Divide the dough into small portions and roll them into smooth, crack-free balls.

3- Deep Fry the Jamuns

Heat ghee or oil in a deep pan over low-medium heat.

Test the oil by dropping a small piece of dough; it should rise slowly without turning too dark immediately.

Fry the jamun balls in small batches, stirring gently to ensure even frying.

Cook them until they are deep brown to almost black in color (but not burnt).

This slow frying process gives them their signature dark color.

4- Soak the Jamuns

Once fried, transfer the jamuns directly into the warm sugar syrup.

Let them soak for at least 2-3 hours, allowing them to absorb the syrup and become soft.

5- Serving

1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp garam masala
1/2 tsp baking soda

1-2 tbsp oil (for brushing)

Method :-

1- Place the sliced onions in a large bowl and sprinkle salt over them. Let it sit for 5-10 minutes to release water.

2- Add gram flour, rice flour, green chilies, cumin seeds, carom seeds, turmeric, red chili powder, garam masala, and baking soda.

3- Mix everything well. Add a small amount of water if needed to bind the mixture. The batter should be thick, not runny.

4- Preheat your air fryer to 180°C (350°F) for about 3 minutes.

5- Take small portions of the batter and shape them into uneven balls or fritters. Do not over-pack them; they should have an airy texture.

Tandoori Mushroom Tikka 🍄 😋 Recipe!!

Ingredients:

🌺 For Marinade:

200g button mushrooms, cleaned
½ cup thick yogurt (hung curd works best)
1 tbsp gram flour (besan), roasted
1 tsp ginger-garlic paste
1 tsp red chili powder
½ tsp turmeric powder
1 tsp garam masala
1 tsp coriander powder
½ tsp cumin powder
½ tsp chaat masala
1 tsp kasuri methi (dried fenugreek leaves), crushed
1 tbsp lemon juice
1-2 tbsp mustard oil (optional, for authentic flavor)
Salt to taste

🌺 For Garnish:

Slices of onion, capsicum, and tomato (optional, for skewers)
Lemon wedges
Fresh coriander leaves
Chaat masala for sprinkling

Method :-

1- Wash the mushrooms thoroughly and pat them dry. Cut large mushrooms into halves, keeping small ones whole.

2- In a mixing bowl, combine yogurt, roasted gram flour, ginger-garlic paste, red chili powder, turmeric, garam masala, coriander powder, cumin powder, chaat masala, kasuri methi, lemon juice, mustard oil, and salt.
Mix well to form a thick, smooth marinade.

3- Add the mushrooms to the marinade and gently coat them. If using onion, capsicum, or tomato slices for skewers, add them to the marinade too.

4- Cover and refrigerate for at least 30 minutes to 2 hours for best results.

5- Thread marinated mushrooms, onions, capsicum, and tomatoes onto skewers, alternating for color and flavor.

6- Grill/Barbecue: Preheat the grill or barbecue. Place the skewers on the grill and cook on medium heat for about 10-15 minutes, turning occasionally, until mushrooms are golden and slightly charred.

Tawa/Pan: Heat a non-stick pan or tawa. Grease it lightly and place the mushrooms (and vegetables if using). Cook on medium-high heat, flipping occasionally.

Oven: Preheat the oven to 200°C (392°F). Place the skewers on a baking tray lined with parchment paper. Bake for 15-20 minutes, flipping once halfway. For a charred effect, broil for 2-3 minutes at the end.

7- Arrange the tikkas on a plate. Sprinkle chaat masala on top, garnish with fresh coriander leaves, and serve hot with mint chutney and lemon wedges.

🌺 For the Potato Filling:

3 large potatoes (boiled and mashed)
2 tbsp dabeli masala (store-bought or homemade)
2 tbsp oil
1 medium onion (finely chopped)
2 tbsp tamarind chutney
Salt to taste

🌺 For the Garnish:

Pomegranate seeds
Roasted peanuts
Fresh coriander leaves (chopped)

🌺 For Assembly:

6 pav buns
Butter for toasting
Sweet tamarind chutney
Garlic chutney
Sev (thin fried gram flour noodles)

Method :-

1- Dry roast all the masala ingredients until aromatic.Cool and grind to a fine powder. Store in an airtight container.

2- Heat oil in a pan. Add the chopped onion and sauté until soft.

3- Add dabeli masala and mix well.

4- Stir in the mashed potatoes, salt, and tamarind chutney.

5- Mix until the filling is evenly coated. Cook for 2-3 minutes and set aside.

6- Cut the pav buns horizontally but not completely through.

7- Spread sweet tamarind chutney on one side and garlic chutney on the other.

8- Place a portion of the potato filling inside.

9- Garnish with pomegranate seeds, roasted peanuts, and chopped coriander.

10- Heat a tawa (griddle) and spread butter on it.

11- Place the stuffed pav and toast until golden and slightly crispy.

12- Roll the edges of the pav in sev for an authentic touch.

1 tsp mustard seeds
1 tsp fennel seeds
1 tsp nigella seeds (kalonji)

🌺 For the Curry:

1 medium cauliflower (cut into medium florets)
2 tbsp mustard oil (or regular oil)
1 tsp turmeric powder
1 tsp red chili powder
1 medium onion (finely chopped)
2 medium tomatoes (pureed)
1 tbsp ginger-garlic paste
1 green chili (slit)
1/2 cup yogurt (whisked)
1 tsp coriander powder
1 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish

Method :-

1- Dry roast mustard seeds, fennel seeds, nigella seeds, fenugreek seeds, cumin seeds, and dried red chilies in a pan over low heat until fragrant.

2- Cool the spices and grind them coarsely. Set aside.

3- Heat 1 tbsp oil in a pan. Add cauliflower florets, sprinkle turmeric powder, and sauté until slightly golden. Remove and set aside.

4- Heat the remaining oil in the same pan. Add the achari masala and sauté for 30 seconds.

5- Add the chopped onions and cook until golden brown.

6- Stir in the ginger-garlic paste and green chili; sauté for a minute.

7- Add tomato puree, red chili powder, coriander powder, and salt. Cook until the oil separates.

8- Lower the heat and add whisked yogurt, stirring continuously to prevent curdling.

Large green chilies (mild or medium-spicy) – 6-8
Besan (gram flour) – 1 cup
Asafoetida (hing) – a pinch
Turmeric powder – 1/2 tsp
Coriander powder – 1 tsp
Cumin seeds – 1/2 tsp
Red chili powder – 1 tsp (adjust to taste)
Amchur (dry mango powder) – 1/2 tsp
Fennel seeds (saunf) – 1/2 tsp (optional)
Salt – to taste
Sugar – 1/2 tsp (optional)
Oil – 3-4 tbsp (for roasting and cooking)

Method :-

1- Wash the green chilies and pat them dry.

2- Slit each chili lengthwise without cutting through completely. Remove seeds if you prefer less heat.

3- Heat 1-2 tsp of oil in a pan. Add cumin seeds and let them splutter.

4- Add asafoetida, turmeric powder, and besan. Roast the besan on medium heat until aromatic and golden brown.

5- Mix in coriander powder, red chili powder, amchur, fennel seeds, sugar, and salt. Stir well.

6- Let the mixture cool slightly and stuff this spiced besan into the slit chilies.

7- Heat 2-3 tbsp of oil in a non-stick pan.
Place the stuffed chilies in the pan and cook on low-medium heat.

8- Cover and cook, turning occasionally, until the chilies are tender and slightly charred.

Ghee (clarified butter): 4 tbsp (for the dough) + extra for layering
Water: 2-3 tbsp
Sesame seeds or nigella seeds: 1 tbsp (for garnish)

Method :-

1- In a large mixing bowl, combine all-purpose flour, semolina, sugar, salt, baking powder, and cardamom powder. Mix well.

2- Add ghee and rub it into the flour mixture until it resembles breadcrumbs.

3- Gradually add warm milk and knead into a soft and pliable dough. If needed, add water a little at a time.

4- Cover the dough with a damp cloth and let it rest for 30 minutes.

5- Divide the dough into small balls (about the size of a golf ball).

6- Roll out one dough ball into a thin circle.

7- Brush a thin layer of ghee on the rolled dough.

8- Fold the dough into a rectangle or triangle, roll again, and repeat the ghee layering 2-3 times for a flaky texture.

1½ cups water
½ teaspoon turmeric powder
½ teaspoon ginger-green chili paste
¼ teaspoon asafoetida (hing)
Salt to taste

🌺 For the tempering:

2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon sesame seeds
5-6 curry leaves
2 green chilies (slit)

🌺 For garnishing:

2 tablespoons grated fresh coconut
2 tablespoons chopped fresh coriander leaves.

Method :-

1- Prepare the batter:

In a bowl, mix gram flour, curd, water, turmeric powder, ginger-green chili paste, asafoetida, and salt.

Whisk the mixture well to ensure there are no lumps.

2- Cook the batter:

Transfer the mixture to a thick-bottomed pan or kadhai.

Cook on low to medium heat while stirring continuously to avoid lumps.

Keep stirring until the mixture thickens and starts to leave the sides of the pan (about 7-10 minutes). The consistency should be like a thick paste.

3- Roll the khandvi:

Quickly spread the hot batter onto a clean, flat surface (like a steel plate, back of a baking tray, or countertop).

Spread it thinly and evenly using a spatula or the back of a spoon.

Allow it to cool for 3-4 minutes.
Once set, cut into strips about 2 inches wide.

Gently roll each strip into tight spirals.

4- Prepare the tempering:

Heat oil in a small pan.

Add mustard seeds, and let them crackle.

Add sesame seeds, curry leaves, and slit green chilies. Sauté for a few seconds.

Homemade Rajbhog Kulfi Recipe 😋😋!!

Milk (full-fat) - 1 liter
Condensed milk - 1/2 cup
Sugar - 1/4 cup (adjust to taste)
Saffron strands - a pinch (soaked in 2 tbsp warm milk)
Cardamom powder - 1/2 tsp
Almonds - 2 tbsp (finely chopped)
Pistachios - 2 tbsp (finely chopped)
Cashews - 1 tbsp (chopped)
Rasgulla pieces - 1/2 cup (squeeze out the syrup and crumble)
Rose water - 1 tsp

Method :-

1- Boil the milk in a heavy-bottomed pan over medium heat. Keep stirring occasionally to prevent burning.

2- Once it reduces to about half its volume, add the condensed milk and sugar. Mix well.

3- Add the saffron-soaked milk and cardamom powder to the reduced milk mixture. Stir to combine.

4- Let the milk simmer for another 5-7 minutes until thick and creamy.

5- Turn off the heat and let the milk cool slightly.

6- Add the chopped almonds, pistachios, and cashews. Mix in the crumbled rasgulla pieces and rose water gently.

7- Pour the kulfi mixture into kulfi molds or small cups.

8- Cover with foil and insert a popsicle stick in the center.

9- Freeze the molds for 6-8 hours or overnight until fully set.

10- To unmold, dip the kulfi mold in warm water for a few seconds and gently pull out the kulfi.

Homemade Creamy Rasmalai Recipe 😋😋 !!

Ingredients

🌸 For Rasmalai Balls:

1 liter full-fat milk
1-2 tbsp lemon juice (or vinegar)
1 tsp plain flour or semolina (optional, for binding)
4 cups water
1 cup sugar

🌸 For Rabri (Milk Syrup):

1 liter full-fat milk
1/2 cup sugar (adjust to taste)
4-5 green cardamom pods (crushed or powdered)
8-10 saffron strands (soaked in 2 tbsp warm milk)
2 tbsp chopped nuts (almonds, pistachios, cashews)
1 tsp rose water (optional)

Method :-

Step 1: Prepare the Chhena (Cottage Cheese)

1- Boil the Milk: Heat 1 liter of milk in a heavy-bottomed pan. Once it comes to a boil, reduce the heat to low.

2- Curdle the Milk: Add lemon juice or vinegar gradually while stirring gently until the milk curdles and the whey separates.

3- Strain: Strain the curdled milk using a muslin cloth. Wash the chhena under cold water to remove any acidic taste.

4- Drain Excess Water: Squeeze the cloth gently to remove excess water. Hang the cloth for 30 minutes to drain further.

Step 2: Make the Rasmalai Balls

5- Knead the Chhena: Transfer the chhena to a clean surface and knead for 8-10 minutes until smooth and soft.

6- Shape the Balls: Divide the dough into small, smooth balls and flatten them slightly into discs.

Step 3: Cook the Balls

7- Prepare Sugar Syrup: In a large pot, boil 4 cups of water with 1 cup of sugar until the sugar dissolves.

8- Cook the Balls: Add the flattened discs to the boiling syrup. Cover and cook on medium heat for 10-12 minutes. They will double in size.

9- Cool Down: Remove from heat and let the balls cool in the syrup.

Step 4: Prepare the Rabri

10- Boil Milk: In another pan, heat 1 liter of milk. Simmer on low heat, stirring occasionally, until it reduces to half its original volume.

11- Add Flavorings: Add sugar, cardamom powder, saffron milk, and chopped nuts. Cook for another 5-10 minutes.

Step 5: Assemble

12- Combine: Gently squeeze the syrup-soaked rasmalai balls and transfer them to the prepared rabri.

13- Chill and Serve: Let the rasmalai soak in the rabri for at least 2 hours in the refrigerator before serving. Garnish with more nuts and saffron.

इलायची पाउडर - 1/2 चम्मच (वैकल्पिक)

विधि:

1- एक कढ़ाई में तिल डालकर मध्यम आंच पर हल्का सुनहरा होने तक भूनें। तिल का रंग बदलते ही और सुगंध आने लगे, गैस बंद कर दें।
तिल को ठंडा होने के लिए अलग रख दें।

2- कढ़ाई में 1-2 चम्मच घी डालें।
उसमें कद्दूकस किया हुआ गुड़ और 2-3 चम्मच पानी डालें।

3- गुड़ को धीमी आंच पर पिघलाएं और एक चिकना मिश्रण तैयार करें।

4- पिघले हुए गुड़ में भुने हुए तिल डालें और अच्छी तरह मिलाएं।चाहें तो इसमें इलायची पाउडर डाल सकते हैं।

5- मिश्रण को थोड़ा ठंडा होने दें, लेकिन पूरी तरह ठंडा न करें।

6- हल्के गुनगुने मिश्रण से अपने हाथों से छोटे-छोटे लड्डू बना लें।अगर मिश्रण ज्यादा चिपचिपा लगे तो हाथ पर थोड़ा घी लगाएं।

7- तिल के लड्डू तैयार हैं। इन्हें एयरटाइट कंटेनर में स्टोर करें।

Diabetic Friendly Version Of Dhokla Without Rice & Semolina Recipe 😋😋

Ingredients:

👉Chickpea flour (besan) – 1 cup (high in protein and fiber)
👉Flaxseed meal – 2 tablespoons (helps with blood sugar control)
👉Baking soda – 1/2 teaspoon
👉Curd (yogurt) – 1/4 cup (unsweetened)
👉Ginger paste – 1 teaspoon
👉Green chili – 1 finely chopped (optional)
👉Erythritol or Stevia – 1 teaspoon (optional, for sweetness)
👉Salt – as needed
👉Water – to adjust batter consistency (about 1/2 cup)
👉Mustard seeds – 1 teaspoon (for tempering)
👉Curry leaves – a few (for tempering)
👉Oil – 1 tablespoon (for tempering)
👉Cumin seeds – 1/2 teaspoon (optional)
👉Asafoetida – 1/4 teaspoon (optional)

Method :-

1- Prepare the batter:

In a large bowl, mix chickpea flour, flaxseed meal, ginger paste, chopped green chili, salt, and erythritol or stevia (if using).

Add the yogurt and enough water to form a smooth batter with a slightly thick consistency.

Add baking soda and mix well just before steaming.

2- Steaming:

Grease a dhokla steamer or a round dish that fits inside a steamer with some oil.

Pour the batter into the dish.

Boil water in the steamer, and place the batter-filled dish inside. Cover and steam for about 20-25 minutes, or until a toothpick comes out clean.

3- Tempering:

Heat oil in a small pan, and add mustard seeds, cumin seeds, curry leaves, and asafoetida. Let it splutter.

Pour the tempering over the steamed dhokla once it's done.

4- Serve:

Let the dhokla cool for a few minutes before cutting it into pieces.

Serve with sugar-free chutney or plain yogurt.

This version is rich in protein and fiber, making it more suitable for diabetic patients, and is low in glycemic index.

Uttar Pradesh Special Matar Ka Nimona Recipe 😋😋 !!

Ingredients

👉Fresh green peas (matar): 2 cups (roughly mashed or ground).

👉Potatoes: 2 medium-sized (peeled and diced).

👉Mustard oil or vegetable oil: 3-4 tbsp

👉Asafoetida (hing): A pinch

👉Cumin seeds: 1 tsp

👉Bay leaf: 1

👉Green chilies: 2-3 (finely chopped)

👉Ginger-garlic paste: 1 tsp

👉Tomatoes: 2 medium-sized (finely chopped or pureed)

👉Turmeric powder: 1/2 tsp

👉Red chili powder: 1/2 tsp (optional)

👉Coriander powder: 1 tsp

👉Garam masala: 1/2 tsp

👉Salt: To taste

👉Water: 2-3 cups (as needed)

👉Fresh coriander leaves: For garnishing

Method :-

1- Coarsely grind the green peas in a mixer or mash them using a pestle. Set aside.

2- Heat 2 tbsp oil in a pan.Fry the diced potatoes until golden and half-cooked. Remove and set aside.

3- In the same pan, heat the remaining oil.

4- Add a pinch of asafoetida, cumin seeds, and bay leaf. Let them crackle.

5- Add green chilies and ginger-garlic paste. Sauté until aromatic.

6- Add the chopped tomatoes, turmeric, red chili powder, and coriander powder. Cook until the oil separates from the masala.

7- Add the coarsely mashed green peas to the masala. Stir well and cook for 5-7 minutes.Stir occasionally to prevent sticking.

8- Add the fried potatoes and mix.
Pour water to adjust the consistency of the curry. Cover and let it simmer for 10-12 minutes until the potatoes are fully cooked and the flavors blend.

9- Add garam masala and adjust salt.
Cook for another 2-3 minutes.

10- Garnish with fresh coriander leaves.
Serve hot with steamed rice, roti, or paratha.

Dahi Chicken ( Yogurt Chicken) Recipe 😋😋

Ingredients:

500g chicken (bone-in or boneless, cut into pieces)
1 cup plain yogurt (curd/dahi)
2 large onions, finely chopped
2 medium tomatoes, finely chopped or pureed
1 tablespoon ginger-garlic paste
3-4 green chilies (slit)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1 teaspoon garam masala powder
1 teaspoon cumin seeds
2-3 tablespoons oil or ghee
Fresh coriander leaves (chopped, for garnish)
Salt to taste

Method :-

1- In a bowl, mix the chicken pieces with yogurt, turmeric powder, and a pinch of salt. Let it marinate for 30 minutes to 1 hour.

2- Heat oil in a large pan or kadhai over medium heat. Add cumin seeds and let them splutter.

3- Add the chopped onions and sauté until golden brown.

4- Add ginger-garlic paste and sauté until the raw smell disappears.

5- Add the tomatoes, green chilies, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil begins to separate from the mixture.

6- Add the marinated chicken (along with the yogurt) to the pan. Mix well to coat the chicken with the masala.
Cover and cook on medium heat for 15-20 minutes, stirring occasionally.

7- If the curry seems too thick, add a little water to adjust the consistency. Simmer for 5 more minutes.

8- Add garam masala powder and mix well. Cook for another 2-3 minutes.
Garnish with fresh coriander leaves.

9- Serve hot with steamed rice, roti, naan, or paratha. Enjoy your flavorful Dahi Chicken!
