The Best BADAMI CHICKEN CURRY Recipe 🍛 😋!!
Ingredients:-
1- For the chicken marinade:
👉 500g chicken (cut into pieces)
👉 1/2 cup yogurt
👉 1 tbsp ginger garlic paste
👉 1/2 tsp turmeric powder
👉 1/2 tsp red chili powder
👉 Salt to taste
2- For the curry:
👉 2 tbsp oil
👉 2 medium onions (finely chopped)
👉 1 tbsp ginger garlic paste
👉 2-3 green chilies (slit)
👉 1 large tomato (pureed)
👉 1/2 cup almonds (blanched and ground into a paste)
👉 1/2 tsp cumin powder
👉 1/2 tsp coriander powder
👉 1/2 tsp garam masala powder
👉 1/2 tsp turmeric powder
👉 1/2 tsp red chili powder
👉 1/2 cup coconut milk (optional for extra richness)
👉 Salt to taste
👉 Fresh cilantro (for garnish)
Method :-
1- Marinate the chicken:
In a bowl, mix the chicken pieces with yogurt, ginger garlic paste, turmeric powder, red chili powder, and salt.
Let the chicken marinate for at least 30 minutes (or up to 2 hours).
2- Prepare the curry base:
Heat oil in a large pan over medium heat.
Add the chopped onions and cook until they turn golden brown.
Add the ginger garlic paste and green chilies, and sauté for another 2 minutes.
3- Cook the chicken:
Add the marinated chicken to the pan and cook on medium-high heat until the chicken pieces are browned on all sides.
Add the pureed tomato and cook for 5-7 minutes until the oil starts separating from the masala.
4- Add the almond paste:
Add the ground almond paste to the pan and stir well. Let it cook for a couple of minutes.
Add cumin powder, coriander powder, garam masala powder, turmeric, red chili powder, and salt. Mix everything together.
5- Simmer the curry:
Add water (around 1 to 1.5 cups) to achieve the desired curry consistency. Stir well.
Cover and simmer the curry for about 15-20 minutes, or until the chicken is cooked through and tender.
6- Add coconut milk (optional):
For extra richness, you can add coconut milk and let it simmer for an additional 5 minutes.
7- Garnish and serve:
Garnish with fresh cilantro.
Serve the Badami Chicken Curry hot with rice or naan.
