Creamy Dal Makhni Recipe

Ingredients:

For Dal:
• 1 cup black urad dal (whole)
• 2 tbsp kidney beans (rajma)
• 1 medium onion (finely chopped)
• 2 medium tomatoes (pureed)
• 1 tbsp ginger-garlic paste
• 1/2 cup fresh cream
• 2 tbsp butter
• 1 tbsp oil
• 1 tsp cumin seeds
• 1/2 tsp turmeric powder
• 1 tsp red chili powder
• 1 tsp garam masala
• 1 tsp kasuri methi (dried fenugreek leaves)
• Salt to taste

For Garnish:
• 1 tbsp cream
• 1 tbsp butter
• Fresh coriander leaves (chopped)

Process:

1. Soak and Cook Dal:
1. Soak urad dal and rajma overnight.
2. Pressure cook with salt and water for 6–7 whistles or until soft. Mash lightly.

2. Prepare Tempering:
1. Heat oil and butter in a pan. Add cumin seeds, then sauté onions until golden.
2. Add ginger-garlic paste, cook until fragrant.
3. Stir in tomato puree, turmeric, chili powder, and salt. Cook until oil separates.

3. Combine Dal and Simmer:
1. Add cooked dal to the tempering. Stir well.
2. Add cream, garam masala, and kasuri methi. Simmer for 20–30 minutes on low heat, stirring occasionally.

4. Final Touch:
Drizzle with cream and butter before serving.

Serve:
Hot with naan, roti, or rice.

Dry Fruits Plum Cake Recipe (Christmas Special)

Ingredients:

For Soaking:
• 1/2 cup raisins
• 1/4 cup chopped dates
• 1/4 cup chopped apricots
• 1/4 cup chopped cherries
• 1/4 cup chopped walnuts, almonds, and cashews
• 1/4 cup orange juice or rum (for soaking)

For Cake Batter:
• 1 cup all-purpose flour
• 1/2 cup unsalted butter (softened)
• 1/2 cup brown sugar
• 2 large eggs
• 1/4 cup milk
• 1 tsp vanilla extract
• 1/2 tsp cinnamon powder
• 1/4 tsp nutmeg powder
• 1/2 tsp baking powder
• 1/4 tsp baking soda
• A pinch of salt

Process:

1. Soak Dry Fruits:
Soak the dry fruits in orange juice or rum for 8 hours or overnight.

2. Prepare Batter:
1. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well.
2. Mix in vanilla extract, milk, cinnamon, and nutmeg powder.
3. Sift flour, baking powder, baking soda, and salt into the mixture. Fold gently.
4. Add soaked dry fruits and nuts (with any remaining liquid) to the batter. Mix well.

3. Bake the Cake:
1. Preheat oven to 180°C (350°F).
2. Grease and line a cake pan. Pour the batter into the pan.

Ingredients:

For Marination:
• 500g mutton (bone-in)
• 1/2 cup yogurt
• 1 tbsp ginger-garlic paste
• 1 tsp red chili powder
• 1/2 tsp turmeric powder
• 1 tsp garam masala
• Salt to taste

For Rice:
• 2 cups basmati rice (soaked for 30 minutes)
• 4 cups water
• 2 bay leaves
• 4 cloves
• 2 cardamom pods
• 1 cinnamon stick
• Salt to taste

For Biryani:
• 2 large onions (sliced)
• 2 tomatoes (chopped)
• 1/4 cup mint leaves (chopped)
• 1/4 cup coriander leaves (chopped)
• 2 tbsp biryani masala
• 1/4 cup ghee
• 2 tbsp oil
• Saffron strands soaked in 2 tbsp warm milk (optional)

Process:

1. Marinate Mutton:
Mix mutton with yogurt, spices, and salt. Marinate for 2 hours.

2. Cook Mutton:
Heat oil, sauté onions until golden. Add marinated mutton, cook for 10 minutes. Add tomatoes, cook till soft, then simmer until mutton is tender.

3. Cook Rice:
Boil water with spices and salt. Add soaked rice and cook until 70% done. Drain and set aside.

4. Layer Biryani:
• In a heavy-bottomed pot, layer cooked mutton, mint, coriander, and half-cooked rice.
• Drizzle saffron milk and ghee. Repeat layers.

5. Dum Cooking:
Cover with a tight lid, cook on low heat for 20 minutes.

Serve:
Fluff gently and serve hot with raita or salad.

Ingredients:

For Vada:
• 1 cup urad dal (soaked for 4 hours)
• 1 green chili (chopped)
• 1 tsp cumin seeds
• 1/4 tsp asafoetida (hing)
• Salt to taste
• Oil (for frying)

For Sambar:
• 1/2 cup toor dal (cooked and mashed)
• 1 onion (sliced)
• 1 tomato (chopped)
• 1 drumstick (cut into pieces)
• 1/2 cup tamarind water
• 1 tsp mustard seeds
• 2 dry red chilies
• 8-10 curry leaves
• 1/2 tsp turmeric powder
• 1 tsp red chili powder
• 2 tbsp sambar powder
• Salt to taste
• 2 tbsp oil

Process:

1. Make Vada:
1. Grind soaked urad dal into a smooth batter. Add green chili, cumin seeds, hing, and salt. Mix well.
2. Shape batter into small donuts and deep-fry until golden.

2. Prepare Sambar:
1. Heat oil, splutter mustard seeds, red chilies, and curry leaves.
2. Add onion, tomato, and drumstick. Sauté for 5 minutes.
3. Add tamarind water, turmeric, chili powder, sambar powder, and salt. Cook for 10 minutes.
4. Add cooked dal, adjust water, and simmer for 10 minutes.

3. Assemble:
Place fried vadas in a bowl, pour hot sambar over them.

Serve:
Garnish with coriander and enjoy with coconut chutney.

Ingredients:

For Marinade:
• 500g chicken (boneless, cut into cubes)
• 1/2 cup yogurt
• 1 tbsp ginger-garlic paste
• 1 tsp red chili powder
• 1/2 tsp turmeric powder
• 1 tsp garam masala
• Salt to taste

For Gravy:
• 2 tbsp butter
• 1 tbsp oil
• 2 medium tomatoes (pureed)
• 1 onion (chopped)
• 1 tbsp ginger-garlic paste
• 1 tsp red chili powder
• 1/2 tsp turmeric powder
• 1/2 tsp cumin powder
• 1 tsp garam masala
• 1/2 tsp kasuri methi (dried fenugreek leaves)
• 1/4 cup fresh cream
• Salt to taste

Process:

1. Marinate Chicken:
Mix chicken with all marinade ingredients and rest for 1 hour.

2. Cook Chicken:
Grill or cook in a pan until golden and set aside.

3. Prepare Gravy:
• Heat oil and butter, sauté onions until golden. Add ginger-garlic paste, cook until fragrant.
• Add tomato puree, spices, and salt. Cook until oil separates.
• Add grilled chicken, mix well. Simmer for 10 minutes.

4. Final Touch:
Add cream and kasuri methi. Mix and simmer for 2–3 minutes.

For Batti:
• 2 cups whole wheat flour
• 4 tbsp ghee
• 1/4 tsp ajwain (carom seeds)
• Salt to taste
• Water (for kneading)

For Churma:
• 1 cup wheat flour
• 4 tbsp ghee
• 1/4 cup powdered sugar
• 1/4 tsp cardamom powder

Process:

Dal:
1. Pressure cook lentils with turmeric and salt for 4–5 whistles.
2. Heat ghee, splutter cumin seeds, add onion, ginger-garlic paste, and sauté.
3. Add tomatoes, chili powder, and garam masala. Cook till soft.
4. Add cooked dal, simmer for 10 minutes.

Batti:
1. Mix flour, ghee, ajwain, and salt. Knead into a firm dough.
2. Shape into balls, bake at 200°C for 20–25 minutes until golden.

Churma:
1. Mix flour and ghee, form a crumbly dough, and shape into balls.
2. Bake until golden, then crush into a fine powder. Mix with sugar and cardamom powder.

Serve:
Enjoy dal with bati (drizzled with ghee) and sweet churma.

For Masala Filling:
• 3 medium potatoes (boiled and mashed)
• 1 onion (sliced)
• 1 green chili (chopped)
• 1/2 tsp mustard seeds
• 1/2 tsp turmeric powder
• 8-10 curry leaves
• 1 tbsp oil
• Salt to taste

Process:
1. Prepare Batter:
Soak rice, urad dal, poha, and fenugreek seeds for 6–8 hours. Grind into a smooth batter, ferment overnight, and add salt.
2. Make Masala:

For Chole:
1. Soak 1 cup chickpeas overnight, pressure cook with salt and a tea bag (optional) for 6 whistles.
2. Heat oil, sauté 1 tsp cumin, 1 tbsp ginger-garlic paste, 1 chopped onion, and 2 pureed tomatoes.
3. Add 1 tsp each of turmeric, chili, garam masala, chole masala, and 1/2 tsp amchur.
4. Mix cooked chickpeas, simmer for 10 minutes.

For Bhature:
1. Mix 2 cups maida, 1/2 cup sooji, 1/4 tsp baking soda, salt, and 1/2 cup curd.
2. Knead dough, rest for 1 hour, roll, and deep-fry till golden.

• 1 cup green peas (matar)
• 1 small boiled potato (optional, mashed)
• 1 tbsp oil
• 1 tsp cumin seeds
• 1 tsp ginger (grated)
• 1/2 tsp turmeric powder
• 1/2 tsp garam masala
• 1/2 tsp red chili powder
• 1/2 tsp dry mango powder (amchur)
• Salt to taste

Method:
1. Prepare Dough:
• In a bowl, mix flour, ajwain, salt, and oil until crumbly.
• Add water gradually and knead into a stiff dough. Cover and rest for 20 minutes.
2. Prepare Filling:
• Heat oil in a pan, add cumin seeds, and let them splutter.
• Add grated ginger, green peas, and mashed potato.
• Mix in turmeric, chili powder, garam masala, amchur, and salt. Cook for 5 minutes. Let it cool.
3. Assemble Samosas:
• Divide dough into small balls and roll into thin oval sheets.
• Cut each oval into two halves.
• Shape each half into a cone, seal edges with water, and fill with the matar mixture.
