Chana Dal Nu Shaak is a very quick recipe and can be prepared when there are no vegetables available at home. This recipe is prepared in Rajasthani style. First we will boil the dal and then cook it with some special masala. A paste of tomato, onion, chilli, ginger and garlic is prepared for this recipe. I have added additional onions while preparing the shaak to give a nice crunch while enjoying it.

Recipe:
Ingredients:
For Boiling Dal:
1.5-2 Cup Chana Dal
1/2 Teaspoon Turmeric Powder (Haldi)
Salt
Water
For Paste:
1 Tomato
1 Onion
3-4 Green Chillies (Hari Mirch)
1-1.5 Inch Ginger (Adrak)
8-10 Garlic Cloves (Lehsun)
For Shaak:
1 Lengthwise Chopped Onion
2-3 Tablespoons of Curd (Dahi)
1 Teaspoon Cumin Seeds (Jeera)
1/2 Teaspoon Asafoetida (Hing)
1/2 Teaspoon Turmeric Powder (Haldi)
1-1.5 Teaspoon Dhana Jeera Powder
1-1.5 Teaspoon Red Chilli (Lal Mirch) Powder
Coriander Leaves (Dhania)
Salt
Oil
Water

Procedure:
1. Soak chana dal for 3-4 hours.
2. In a deep bottomed vessel boil dal along with turmeric powder and salt.
3. Make a paste of tomato, onion, ginger, garlic and green chilies.
5. Heat oil and add cumin seeds, asafoetida and the prepared masala. Saute it well.
6. Add turmeric powder, dhana jeera powder, red chilli powder and mix it. Close lid and cook for 1-2 minutes.
7. Add curd and stir well.
8. Add water and lengthwise chopped onions. Stir well.
9. Add salt.
10. Add the boiled chana dal and mix well.
11. Add coriander leaves and cook for 2-3 minutes. Don’t cover it while cooking it. Chana Dal Nu Shaak is ready.

Sandwich Masala
Green Chutney
Cheese

Procedure:
1. In a mixing bowl add finely chopped onion, finely chopped capsicum, finely chopped cabbage, finely chopped coriander leaves, black pepper powder, green chilli paste and salt. Mix well.
2. Take two sandwich breads, apply butter and green chutney. Place the stuffing, place some finely chopped tomatoes, sprinkle sandwich masala and grate some cheese. Close the sandwich.
3. Apply butter on both side of sandwich and toast it.
4. Surat Special Hasti Sandwich is ready.

1-2 Tablespoons of Gram Flour (Besan)
1 Teaspoon Cumin Seeds (Jeera)
1 Teaspoon Kalonji
1 Teaspoon Fennel Seeds (Saunf)
1/4 Teaspoon Asafoetida (Hing)
1/2 Teaspoon Turmeric Powder (Haldi)
1 Teaspoon Amchur Powder
1-1.5 Teaspoon Dhana Jeera Powder
1 Teaspoon Red Chilli (Lal Mirch) Powder
Salt
Water
Oil

Procedure:
1. Heat oil and add cumin seeds, kalonji, fennel seeds and asafoetida. Stir well.
2. Add diced green chilies and sauté it well.
3. Add turmeric powder, amchur powder, dhana jeera powder, red chilli powder and salt. Mix well.
4. Add gram flour and roast it well.
5. Sprinkle some water and stir it. Besan marcha nu shaak is ready.

Today we will make a popular sweet dish of Gujarat. This sweet pudla or galya pudla recipe is very simple to make and is simply amazing. We will make this Gujarati pudla recipe using wheat flour and jaggery. I have added little bit of sugar to give the pudla a nice golden colour, you can skip it if you prefer sugar free food. Do try out this gahu na pudla recipe and let me know your feedback regarding the same.

Recipe:
Ingredeints:
1 Cup Wheat Flour (Gehun ka Atta)
1 Cup Water
1/2 Cup Jaggery (Gud)
1/4 Teaspoon Fennel Seeds (Saunf) Powder
1/4 Teaspoon Cardamom (Elaichi) Powder
1/4 Teaspoon Sugar
Sesame Seeds
Ghee

Procedure:
1. Heat water in a kadhai and melt jaggery in it. Strain this mixture and let it cool down.
2. In a mixing bowl take wheat flour, add fennel seed powder, cardamom powder and sugar. Mix it.
3. Gradually add the jaggery water and prepare a slightly thick batter. The consistency should be slightly thick but at the same time you should be able to pour it using a spoon. Let it rest for 10-15 minutes, if you have more time you rest if for 30-60 minutes for a better result or else even 15 minute rest will do.
4. Heat a pan and pour this mixture and prepare a slightly thick pudla. Sprinkle some sesame seeds, add some ghee from the sides and cook it from both sides. Make it nice golden brown from both sides. Gahu Na Pudla are ready to eat.

Khichu is a popular Gujarati recipe and today we will make this Gujarati vangi using Bajra No Lot. Bajra is a millet which is used frequently in Gujarati cuisine. Millets are very healthy for our body and it is a superfood. This recipe is prepared using negligent amount of oil. This less oil recipe is a perfect millet recipe to prepare for your dinner or even for your breakfast. This Gujarati Millet recipe requires very less ingredients to prepare.

Recipe:
Ingredients:
1 Cup of Bajra Flour
1/4 Cup of Rice Flour (Chawal ka Atta)
2 Cups of Water
2-3 Teaspoons of Curd (Dahi)
1 Teaspoons of Green Chilli (Hari Mirch) Paste
1 Teaspoon Cumin Seeds (Jeera)
Salt
Peanut (Moongfali) Oil
Achaar Masala

Procedure:
1. In a kadhai heat 2 cups of water add cumin seeds, salt and green chilli paste. Give it a stir and let it boil.
2. Add curd and mix it.
3. Add bajra flour and rice flour. Mix well.
4. After it is cooked switch off the gas.
5. In a deep bottomed utensil heat some water to steam the mixture. Place a hole sieve and grease it with oil. Place the mixture, cover it and steam for 5-7 minutes on medium gas.
6. Once it is steamed serve it in plate and top it with groundnut oil and achaar masala.

1 Teaspoon Dhana Jeera Powder

1 Teaspoon Kasuri Methi

Water

Procedure:
1. Take wheat flour, add semolina, turmeric powder, red chilli powder, dhana jeera powder, pav bhaji masala, cumin seeds, carom seeds, kauri methi, coriander leaves, green chilli-ginger paste and mix well.
2. Add some water and knead a firm dough for puri. Cover it and let it rest for 10 minutes.
3. Roll out puris.
4. Heat oil for deep frying puris, deep fry the puris well. Masala Puri is ready.

For Paste:
1 Cup Green Peas (Matar)
8-10 Green Chillies (Hari Mirch)
Coriander Leaves (Dhania)

For Sabzi:
1 Cup Green Peas (Matar)
4 Mashed Potatoes
1 Teaspoon Mustard Seeds (Rai)
1 Teaspoon Cumin Seeds (Jeera)
1 Teaspoon Coarsely Crushed Coriander Seeds (Sabut Dhania)
1/4 Teaspoon Asafoetida (Hing)
Coriander Leaves (Dhania)
Juice of 1/2 Lemon
Salt
Oil

Procedure:
1. In a mixer cup add green peas, green chilies and coriander leaves. Grind it coarsely.
2. Heat some oil in kadhai add mustard seeds, cumin seeds, coarsely crushed coriander leaves and asafoetida.
3. Add the green peas paste and saute it well. Add some whole green peas and mix it. Close lid and cook for 3-5 minutes.
4. Mash potatoes.
5. Add salt as per taste and lemon juice. Close lid and cook for 3 minutes.
6. Garnish it with coriander leaves and Lila Vatana Batata Nu Shaak is ready.

Today we will make instant and quick chole chana nu shaak recipe. This chole chana nu shaak recipe doesn’t involve sauté of onions or frying tomato puree, etc. Just boil the kabuli chana, add some masalas and top it with a tasty tempering and our chole are ready. Ingredients:
250 grams Kabuli Chana (Chickpeas)
1 Chopped Onion
1 Chopped Tomato
1-2 Lengthwise Chopped Green Chillies (Hari Mirch)
2-3 Bay Leaves (Tej Patta)
3-4 Cloves (Laung)
4-5 Black Peppercorns (Sabut Kali Mirch)
2-3 Cinnamon Sticks (Dalchini)
2 Black Cardamom (Badi Elaichi)
1/2 Teaspoon Turmeric Powder (Haldi)
1-2 Teaspoon Red Chilli (Lal Mirch) Powder
1 Teaspoon Dhana Jeera Powder
3/4 Teaspoon Garam Masala
1 Teaspoon Kasuri Methi
Salt

For Tempering:
Lengthwise Chopped Ginger (Adrak)
Lengthwise Chopped Green Chillies (Hari Mirch)
1 Teaspoon Cumin Seeds (Jeera)
1/4 Teaspoon Asafoetida (Hing)
Ghee

Procedure:
1. In a pressure cooker add kabuli chana, chopped onion, chopped tomato, water, bay leaves, cloves, black peppercorns, cinnamon sticks, cardamom, lengthwise chopped green chilies and salt. Mix it and pressure cook for 5-6 whistles.
2. After it is cooked, mash it slightly.
3. Add turmeric powder, red chilli powder, dhana jeera powder, garam masala and kasuri methi. Add salt if required and cook for 5-10 minutes.
4. For tempering heat some ghee and add cumin seeds, asafoetida, lengthwise chopped ginger and lengthwise chopped green chilies. Saute it.
5. Add the tempering to the chole and mix it. Tasty and Instant Chole Chana Nu Shaak is ready, serve it with hot puris and onion and lemon.

2 Cups of Curd (Dahi)
2 Tablespoons of Gram Flour (Besan)

1-1.5 Teaspoon Red Chilli (Lal Mirch) Powder
Salt
Water

For Tempering:
1 Lengthwise Chopped Onion
1-2 Teaspoons of Ginger-Garlic (Adrak-Lehsun) Paste
1 Teaspoon Mustard Seeds (Rai)
1 Teaspoon Cumin Seeds (Jeera)
1 Teaspoon Coriander Seeds (Sabut Dhania)
2-3 Dried Red Chilies (Sukhi Lal Mirch)
8-10 Curry Leaves (Kadi Patta)
1/2 Teaspoon Red Chilli (Lal Mirch) Powder
Ghee

For Kadhi:
2 Cups Finely Chopped Fenugreek (Methi)
1 Teaspoon Sugar
1 Teaspoon Kasuri Methi
Coriander Leaves (Dhania)
Oil

Procedure:
1. In a bowl whisk curd, water, gram flour, turmeric powder, dhana jeera powder, red chilli powder and salt.
2. Heat some oil and add finely chopped fenugreek. Sauté it well.
3. Add curd mixture and stir well. Let it come to a boil.
4. Add sugar and mix well. Let it boil.
5. For tadka heat some ghee and add mustard seeds, cumin seeds, coriander seeds, dried red chilies, curry leaves, ginger garlic paste and lengthwise chopped onion. Sauté it well.
6. Once it is sautéed well add red chilli powder.
7. Add tempering to the kadhi. If required add water.
8. Add kasuri methi and coriander leaves. Mix well.
9. Top it with ghee and yummy Methi Kadhi is ready.
