Fried Rice Recipe with Dry Fruits 😋

2 cups basmati rice (cooked and cooled)

2 tbsp ghee (clarified butter) or vegetable oil

1 medium onion, finely sliced

2-3 garlic cloves, minced

1-inch ginger, minced

½ cup mixed dry fruits (cashews, almonds, raisins, pistachios, walnuts)

½ cup mixed vegetables (optional: carrots, peas, and beans)

2-3 green chilies, slit

1 tsp cumin seeds

1 tsp garam masala powder

½ tsp turmeric powder

Instructions:

1. Cook the Rice:

Wash the basmati rice thoroughly and cook until just done (grains should be separate).

Spread it on a plate to cool and prevent clumping.

Heat 1 tbsp ghee in a pan.

Lightly roast cashews, almonds, raisins, pistachios, and walnuts until golden and aromatic. Set aside.

3. Sauté the Aromatics:

Add the remaining ghee to the same pan.

Mutton Curry Recipe

Ingredients

Mutton (bone-in): 500g

Onions (finely chopped): 2 large

Tomatoes (pureed): 2 medium

Ginger-garlic paste: 2 tbsp

Yogurt (beaten): ½ cup

Green chilies (slit): 2

Turmeric powder: ½ tsp

Red chili powder: 1 tsp

Coriander powder: 2 tsp

Garam masala: 1 tsp

Whole spices: Bay leaves (2), cloves (4), cardamom (4), cinnamon stick (1 inch)

Fresh coriander leaves (chopped): For garnish

Oil: 3 tbsp

Salt: To taste

Water: 2 cups

1. Marinate the Mutton

Mix mutton with ½ tsp turmeric, red chili powder, and yogurt. Let it marinate for at least 1 hour (overnight for better flavor).
