Welcome to Ramadan special Iftar series episode 9.
Today’s recipe is SPAGHETTI BOLOGNESE 🍝

Ingredients-
Bolognese sauce
250gm mince meat
2 tbsp oil
3-4 garlic cloves
1 onion
4 tomatoes puree
1-2 bay leaves
1.5 tsp mixed Italian herbs
1 tsp red chili powder
1 tsp tsp chili flakes
1 tsp crushed black pepper
1.5 tsp Salt
3/4 cup water
1 tsp sugar
1 tsp vinegar

Pasta
Spaghetti 🍝
Method-
Heat oil, add garlic & onion saute until soft. Add minced meat & brown it. Then add tomato puree & mixed Italian seasoning. Add water & simmer for 20-25 mins. Then add sugar to balance the flavors & vinegar. Finally add crushed black pepper.
Boil the Spaghetti according to package instructions.
You can either make the bolognese & then spoon it on top of the pasta or add the pasta to the pan with the bolognese & mix it together.
Personally I like with bolognese on top of the Spaghetti 🍝.

Welcome to Ramadan Special Iftar Series episode 8.
So let’s make TURKISH PIDE
Ingredients
For dough
1/2 cup lukewarm water
1 tbsp sugar
2 tsp instant yeast
1/4 cup oil
1/3 cup curd
1 tsp salt
3 cups flour
For Filling
200gm Mince meat
1 tsp oil
1 chopped onion
3-4 crushed garlic cloves
2 tomatoes puree
1.5 tsp black pepper powder
1 tsp paprika (red chili powder)
1/2 tsp basil leaves
1 tsp oregano
1/2 cup water
1 chopped bell pepper
Additional
Mozzarella cheese
Sesame seeds
Curd for brushing sides
Method-
In lukewarm water mix sugar & yeast & let it rest for 5-10 mins. After that mix in all the dough ingredients. Knead a soft dough & let it rest for 30-45 mins in a warm place or until it doubles in size.
Make filling for Pide. Heat oil add crushed garlic & chopped onions. When translucent add the mince meat & cook until water evaporates. Add tomato purée & spices & cook for 5-8 mins. Add water & simmer for 15mins.
When done add chopped bell peppers & switch off the flame.
Now divide the dough & roll it.
Fill in cheese in the sides & tug in. Spread the ground beef filling in the center & top with mozzarella cheese.
Brush the sides with curd & sprinkle sesame seeds.
** keep in mind do this process on a baking sheet so that you can easily lift it**
Bake in a preheated oven for 12-15 mins at 180 degree celsius.

How to make Apple Fritters | Ramadan Iftar recipe | Best Fritters Recipe
Apple fritters is that comfy food recipe that you can make it at breakfast or an evening snack or even as a dessert. Also as Ramadan is here, It will become a much loved recipe if you make it at IFTAR time.

Ingredients-
2 Apples
1 lemon
1 egg
1/3 cup milk
1 tsp vanilla essence
2 tbsp sugar
1 cup All purpose flour
1/2 tsp cinnamon powder
A pinch of nutmeg
2.5 tsp baking powder
3/4 tsp salt
2 tbsp butter
Oil for deep frying
**For the glaze**
1 cup powdered sugar
juice of 1/2 lemon
1-2 tbsp water

Method-
1)Peel apples & remove its stalk & seeds. Cut in small cubes.
2)In a mixing bowl transfer the apple cubes & squeeze 1/2 lemon. Mix well & keep it aside.
3)In another bowl crack an egg & add milk, vanilla essence & sugar. Mix well Until sugar dissolves.
4)In a mixing bowl add flour. cinnamon powder, nutmeg, baking powder & salt.
5)Now add the wet ingredients to the dry ingredients. Mix & add the apples.
6)Mix well & finally add the melted butter. The apple fritter batter is ready.
7)Heat oil for deep frying.
8)While oil is heating prepare the glaze, for it mix powdered sugar with lemon juice & some water. Whisk it until dripping consistency.
9)Take a tablespoon full of fritter batter & deep fry them. While pouring the batter to oil try to flatten it with the same spoon.
10)Fry them until dark golden brown & crisp.
11)Take out on a kitchen towel & don't overcrowd them , place them a bit far from each other.
12) When all are fried place them on a serving tray & drizzle the glaze on top.
13)And voila! the yummiest apple fritters are ready to enjoy.

Welcome to Ramadan Special Iftar Series episode 7.
So today’s recipe is everyone’s favorite…
SHAWARMA
Ingredients-
For Shawarma flat bread
2 cup flour
1.5 tsp baking powder
1/4 cup curd
2 tbsp butter
1 tsp salt
1 tsp sugar
1/2 cup or little more lukewarm water
For Garlic Sauce
1/2 cup mayonnaise
2 garlic cloves
1/2 lemon
1 tsp black pepper powder
1 tsp sugar
1/4 cup curd
1/2 tsp salt
For Shawarma Marinade
Watch my Ramadan Prep series episode 4 from my highlights.
Method-
Marinate chicken for atleast 30mins or more. Best is to use chicken tighs but you can also use chicken breast but keep in mind to slice chicken breast for shawarma.
Knead the dough & let ot rest for 15-20mins. Then cut small ball size portions. Thinly roll & cook on top flat pan.
Grease pan with little oil & add marinated chicken. Cook until tender. Then slice the chicken & keep it aside.
Slice onions, bell peppers, mild green chilies 🌶️ & tomatoes. Saute them on the same pan add salt & 1tsp vinegar.
Make garlic sauce with above mentioned ingredients.
Now assemble the Shawarma- spread garlic sauce on shawarma bread add slices cabbage, shawarma chicken pieces then saute veggies & fries top it with more garlic sauce.
Wrap & enjoy 😋

Hot and sour Vegetable soup
This soup is perhaps the most in demand soup in the restaurants all over the globe.
As the name implies, this soup has a hot & spicy flavor & is made up of veggies selection which you can alter as per your taste & choice.
Usually served before the main course as an appetizer. The recipe for this soup is very simple, the only time required process is the chopping & cutting of vegetables, you can chop your favorite vegetables in around 15-20 minutes.
