Chicken Adobo Recipe
**Ingredients:**
- 1 kg chicken breast (cut into pieces)
- 1 cup coconut aminos or Kikkoman soy sauce
- 1 cup vinegar
- 2 tablespoons chopped garlic
- 1 tablespoon sugar (erythritol as a substitute)
- Black pepper and chili pepper to taste
- Optional: Bay leaves (if available)
- Optional: Cheese (for added flavor)
- Optional: Boiled eggs (for serving)
**Instructions:**
1. In a large pot, combine the chicken pieces, soy sauce, vinegar, chopped garlic, and sugar. Mix well to ensure the chicken is evenly coated.
2. Add black pepper, chili pepper, and bay leaves (if using) to the pot.
3. Allow the mixture to marinate for at least 30 minutes for enhanced flavor.
4. After marinating, bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 30-40 minutes, or until the chicken is tender and cooked through.
5. If desired, add cheese during the last few minutes of cooking to melt it into the sauce.
6. Serve the Chicken Adobo with boiled eggs on the side, and enjoy!
