Ο χρόνος είναι φευγαλέος. Μετακινείται γρήγορα, σταθερά, πάντα χωρίς προειδοποίηση. Έρχεται μπροστά σε ένα σταθερό ρυθμό, χωρίς μια δεύτερη σκέψη για το παρελθόν. Αλλά σε ένα μπουκάλι κρασί, ο χρόνος σταματά και στέκει. Στάζει εκεί, περιμένοντας μέχρι να αφαιρεθεί τελικά ο φελλός και να αρχίσει να ξετυλίγεται η ιστορία. Σε μια μόνο γουλιά, ο χρόνος παγιδεύεται και οι μνήμες επιστρέφουν. Το κρασί είναι κάτι περισσότερο από ένα ποτό που συμπληρώνει το φαγητό στο τραπέζι. Είναι ο χρόνος σε ένα μπουκάλι. Αποτυπώνει την ιστορία της ζωής ενός ατόμου, γιορτάζοντας ανεκτίμητες στιγμές. Μέσα από τη δουλειά μας ερχόμαστε καθημερινά σε επαφή με τον πολιτισμό, την τέχνη, τη λογοτεχνία και την ιστορία. Η ιστορία ενός ανθρώπου όπως εξελίσσεται στο χρόνο είναι το αγαπημένο πεδίο έρευνας και μελέτης. Στόχος αυτής της προσπάθειας είναι η ανάδειξη του οινικού πολιτισμού μέσα από εκείνες τις ιστορίες των ανθρώπων που σκέφτονται, δημιουργούν και αφήνουν το στίγμα τους στο πέρασμα του χρόνου.
