🍞EPISODE 28: ICED BUNS🍞 Evening all! Here's a little bake along video for those of you who have my cookbook and fancy trying the #glutenfree Vanilla Bean Iced Buns recipe on page 198. They are lovely and fluffy, topped with a luscious vanilla icing.

These are caputo based but in the book you'll find an alternative dough option for those of you who are gf and wheat free (remember caputo flour contains gluten free wheat starch so isn't suitable for wheat allergy sufferers, but is fine for coeliacs and gluten intolerant people).
You can have fun with the flavours for these too, I've made lovely fresh raspberry icing for them before or you can slice them and pipe crème pat in the middle, or jam and cream for a nostalgic treat!

🍪FAMILY FAVES - EPISODE 2🍪 These NYC style #glutenfree cookies take 25 minutes to make (no chill time needed) and they are utterly delicious. With a soft centre and crispy edges, these are cookies I bake again and again.

🍪170g unsalted butter
🍪200g light brown sugar
🍪100g caster sugar
🍪1 tsp vanilla essence
🍪1 large egg and 1 large egg yolk
🍪400g gluten free plain flour
🍪1 tsp baking powder
🍪0.5 tsp fine salt
🍪0.5 tsp xanthan gum
🍪150g white chocolate (or chocolate of your choice), chopped into chunks
Bake for 10-12 mins at 180C (fan). Makes 12 cookies.
You can also chill or freeze these dough, simply add a minute onto the bake time if baking from chilled or 3 mins if baking from frozen.

🍞EPISODE 27: HOT CROSS BUNS🍞 Yummy squishy squashy #glutenfree #wheatfree hot cross buns with a sticky orange glaze, studded with dried fruit and orange zest.
Is everyone familiar with hot cross buns or are they a British bake?
This is the hot cross buns recipe from my cookbook (Eat & Enjoy Gluten Free), comment "book" and I'll send you a link to it. It also has recipes for the chocolate babka, naan, fluffy rolls, focaccia, bagels, baguette, flatbread and wraps that I've shared in this gf bread series.

🍫EPISODE 26: CHOCOLATE BABKA🍫 Time to throw some of our magic ingredients together to make this epic #glutenfree chocolate babka! It is one of the best gluten free breads I've eaten and my husband (who isn't gluten free) scoffed the last one I baked with lightning speed. I've had to hide the last slice in the freezer 😆, shhhh don't tell Dave!

We've got a wonderful combo of psyllium husk plus caputo flour, enriched with egg and butter, to make this one of the softest breads I bake. It's glorious! The caputo gives us that lovely fluffy and light texture and the psyllium helps hold in extra moisture, ensuring the bread stays softer for longer, as well as creating a dough we can shape easily.
The Caputo flour contains gluten free wheat starch so if you've a wheat intolerance see my cookbook for the alternative base dough (detailed in the notes section on page 201).

🍞EPISODE 23: BREAD MAKER WHITE LOAF🍞 A really easy 6-ingredient #glutenfree loaf that you can bake in a bread maker. Minimal effort, maximum fluffiness!

⭐500g Mulino Caputo Fioreglut Gluten Free Flour (Pizza e Pane variety) *NO SUBS*
⭐470ml warm water
⭐1 tsp fine salt
⭐10g instant yeast (I use the Allison's Fast Bake Yeast)
⭐2 tbsp olive oil
⭐1 tsp sugar
Bake on a Quick Bake programme (mine is 1 hour 40 mins), using "dark" for the crust setting.

🍞EPISODE 20: FLATBREAD 2.0🍞 Wonderfully pliable #glutenfree flatbread, which are ideal for kebabs and gyros, these are quick to make and totally delicious. Made with the magic Caputo flour.

⭐180g Mulino Caputo Fioreglut Gluten free flour (pizza e pane variety)*
⭐ 1 tsp baking powder
⭐ 1 tsp fine salt
⭐ 150g full fat Greek yoghurt (or Skyr for a low fat version)
⭐ 1 tbsp olive oil
Cook over a medium flame for about 3 minutes each side, until springy and cooked through.
* NOTE: this flour is not suitable for wheat allergy sufferers, but is fine for coeliacs and gluten intolerant people. It contains gluten free wheat starch (see Coeliac UK's excellent article for more info on this ingredient). Happy to answer any questions you may have!

🍕EPISODE 19: PIZZA🍕This is my original #glutenfree pizza recipe, made with a plain gf flour blend base, before I dived off into the world of caputo pizza making (more on that next week). And it's still a recipe we make regularly, as it's cheaper to make than shop bought and tastes awesome!
Crispy crusts, a proper "pizza flop" in the base, and can be rolled out nice and thin.

🍕160ml (5.25 floz) warm water
🍕7g (0.25 oz) dried active yeast
🍕55g (2 oz) tapioca starch
🍕195g (6.75oz) gluten free plain flour/all purpose - I use FREEE
🍕1 tsp fine salt
🍕1.5 tbsp olive oil, plus extra for brushing the crusts
🍕Toppings of your choice
Bake at 230C/475F (fan) for 12-14 minutes on a preheated baking tray.

🥯EPISODE 17: BAGELS🥯 Proper yeasted, boiled and baked #glutenfree bagels that I bake on repeat at home. We are rarely without a freezer stash of these lovelies.
This is a recipe from my cookbook Eat & Enjoy Gluten Free, page 182 in the Bread, Glorious Bread chapter! They are lovely and chewy, not just bread shaped like a bagel, perfect for slathering with cream cheese and smoked salmon, or your bagel topping of choice.

I egg washed mine today before adding seeds, but if you want to keep the recipe egg free or vegan simply brush with oil or plant based milk instead. 🥯

🍞EPISODE 15: CRUSTY BREAD ROLLS🍞 We're making these lovely little #glutenfree rolls today and introducing our final new ingredient of the series - tapioca starch - to our gf bread making!
Comment "rolls" and I'll send you the recipe link. They are crusty on the outside, soft and bouncy in the middle, very yummy little morsels to bake.
Tapioca starch is different to cassava flour so don't mix them up, you want the pale and very fine white flour I've shown in the video. I get mine from @shiptonmill (excellent for good value gf flour and they have a huge range), or @bobsredmill also does a variety called Tapioca Flour.
These rolls can be frozen (slice first for easy toasting when defrosting) so you can always batch bake and make yourself a freezer stash. I do this with many of my bread recipes.

🍞EPISODE 13: FOCACCIA🍞 Our first yeasted #glutenfree bread of this series is this wonderfully fluffy focaccia. It's a great first yeasted bread to try as it's a real mix and bake bread - no major shaping needed, and you can have fun adding toppings of your choice (adding green olives is a fave variation in our house).
I'm using the Caputo Fioreglut Gluten Free Pizza e Pane flour for this bread, which is gluten free (and fine for coeliacs) but not wheat free (it contains gf wheat starch).

⭐ 12g dried active yeast
⭐2 TSP caster sugar
⭐320ml warm water

⭐40ml olive oil for the dough - 20ml for topping
⭐1 TSP cider vinegar
Bake at 200C (fan) for 25 mins.
