(ad) 🍔FESTIVE FRIED CHICKEN BURGER🍔 (recipe below) Get yourself in the festive spirit with this #glutenfree crispy fried chicken burger in a lovely soft @scharglutenfreeuk Brioche Bun. With bacon, brie, cranberry sauce, red cabbage slaw, lettuce and drizzle of hot honey, it's the best fakeaway I've had in ages! Who wants one?!
The Schär Brioche Buns have amazing texture and can hold up to this amount of fillings without crumbling or falling apart. And they are so nice and soft, I really rate them and enjoy them straight from the pack. No wonder they won Silver at the Free From Food Awards. You can find them in @sainsburys and @asda stores nationwide.
🍔Here's the recipe (makes 2 burgers):
1) Flatten two chicken breasts with a rolling pin until 3cm thick. Place in a tupperware with 280ml buttermilk, 1 tsp cider vinegar, 1 tsp garlic granules and 1 tsp smoked paprika. Marinate in the fridge if you've time, up to 24 hours for really juicy chicken. Or if not you can get cooking straight away.
2) Make the red cabbage slaw - shred a quarter of a red cabbage. Then add 1 tbsp red wine vinegar, 0.5 tsp dijon mustard, a drizzle of honey, a drizzle of olive oil and salt and pepper. Mix well to combine.
3) Back to the chicken - mix 100g cornflour, 1 tsp garlic granules and a big pinch of salt to make the dredge. Now prepare your deep fat fryer or a pan with 10cm of vegetable oil and heat to 180C. Take your chicken breasts out of the buttermilk and coat them really well in the dredge. Carefully place them in the oil and fry for 6-8 minutes (turning occasionally) until cooked through. Set aside on kitchen paper to drain the excess oil.
4) To assemble the burgers, take two Schär Brioche Burger Buns and slice them in half. Spread a tsp cranberry sauce on the bottom half of each bun, top with lettuce and sliced brie. Then place the fried chicken on top and drizzle with hot honey. Top with crispy bacon, some slaw and the bun. Enjoy!

(ad) 🍛BAKED CHICKEN CURRY WITH GARLIC NAAN 🍛 (recipe below) Minimal effort, maximum flavour, this baked chicken curry with cheat #glutenfree garlic naan is a delicious winter warmer dinner.
I used the @scharglutenfreeuk Foldable Flatbreads to make these 5-minute garlic naan - such an excellent option to have when you've not enough time or energy to make your own. You can bend and fold them without them falling apart or crumbling, making them perfect for mopping up this thick curry sauce.
As for the curry, you simply pan fry the chicken to get the skin crispy and golden, then all the other ingredients are mixed in a dish to make the sauce, then the chicken is added and it's baked - so easy, yet the flavour is gorgeous and rich.
Finishing it with flaked almonds, pomegranate seeds and coriander leaves adds wonderful freshness and crunch, as well as making it look so festive and pretty. You could even adapt it and use leftover turkey, simply stirred into the sauce and baked, for a wonderful betwixmas meal.
You can grab the Schär Foldable Flatbreads in Tesco, Sainsbury, Asda and Waitrose nationwide. And they are freezer friendly too, so are a handy thing to have on hand for the festive season.
RECIPE (serves 3)
For the curry:
6 Chicken Thighs (Bone-in and skin-on)
1 tsp caster sugar
1 tsp ground coriander
2 tsp ground cumin
1 tsp ground turmeric
2 tsp garam masala
1 tbsp ginger puree
2 cloves garlic, crushed
400ml tomato passata
200ml single cream
Juice of half a lemon
100ml chicken stock
Flaked almonds, pomegranate seeds and fresh coriander to finish
For the garlic naan:
1 Pack Schär Foldable Flatbreads
30g butter, softened
1 clove garlic, crushed
1 tbsp olive oil
Nigella seeds
0.5 tsp dried parsley
Fresh coriander to finish (optional)
1) Place the chicken thighs, skin side down, in a large frying pan over a medium heat. Cook for 5-10 minutes until the skin is crispy and golden. Then remove from the pan and set aside.
2) Preheat the oven to 180C (fan).
🍞30 MINUTE ROLLS🍞 I'm starting a little recipe series showing you how to make yummy #glutenfree things in under 30 minutes. And first up, these DELICIOUS scone-like cheddar and spring onions rolls, inspired by the lovely @amysheppardfood over on Instagram.
I saw Amy bake a (very gluten-full) herby leek and cheese loaf the other day using this pastry-style dough as a base and I thought it was such a clever idea! So I set about converting her recipe into a gluten free one, making a few changes and tweaks along the way.
Rolls work better for me, as I can easily freeze the leftovers, and I was too lazy to cook any leeks so used spring onions instead.
The result was these utterly divine rolls, which were ready in 30 minutes, with no yeast or proving time needed. A very handy side dish to have up your sleeve. Thanks Amy for the inspo! My gf recipe is below (or see my website www.mygfguide.com for a more detailed version):
RECIPE - makes 4 large rolls
80g unsalted butter
400g gf self raising flour
1 tap baking powder
1 tsp dried parsley
0.5 tsp smoked paprika
4 spring onions, finely sliced
150g grated cheddar
1 large egg
170ml milk, plus extra for brushing
1) Mix the flour, baking powder, parsley and smoked paprika in a mixing bowl.
2) Use a cheese grater to grate the butter into the bowl, rub into the flour with your fingers.
3) Add the egg and milk and mix/knead until you have a dough.
4) Add the grated cheddar and spring onions, knead until well distributed.
5) Divide the dough into 4 and shape each into a burger-shaped roll about 4cm tall. Place on a lined baking tray and brush each with milk. Bake for 20 mins at 200C (fan) until risen and golden!

My 3 year old spent the summer gazing enviously at his big sister's packed lunches, so last week I made him one and we went for a picnic 💗.
I used the fresh Schär Balance of Both loaf to make some dinosaur sandwiches, which is baked in the UK to ensure it's fresh - no toasting needed. Plus it has those lovely big and soft slices, which meant I could get two dinos out of each (and offcuts for me!).
Then in went our favourite crunchy munchy treat, Schär Wild Biscuits. Tasty little vanilla biscuits in cute animal designs, which come in snack pack size. Plus lots of healthy crinkle-cut veggies and some fresh and frozen fruit to keep it all cool.
And those are olives on the heart stick 😆, are anyone else's kids massive olive fans too?!

It's designed for pizza ovens (to get that mega puffy crust), but I've trialled it in my kitchen oven too and it was delicious.
This bread has blown my #coeliac socks off, and my non gf friends have been loving it too, which is always wonderful to see. I tweaked my wood fired pizza recipe, giving this a short proving time and adding an extra bit of lift into the recipe to give that epic oven rise.
You can use this as a #Pizza base as well, just pop on your sauce and toppings it bakes up a treat!
I use a flour containing #glutenfree wheat starch for this one, which is fine for coeliacs but not suitable for anyone with a wheat allergy. But you'll find an alternative wheat free recipe on my website too if you need it, called "Epic Gluten Free Garlic Pizza Bread". Enjoy! Laura ###
