What happens when you add Wight Whiskey to your Christmas pudding 🎄🔥

Ok so I’ll admit we may have added a touch more than we meant to, 20% of the bottle 😅 but despite that, it was unbelievably delicious. It came with a kick but was rich, spicy and delicious. I can not wait to do this again on Christmas Day. Mixed with some double cream, it felt like a pudding and a cocktail all in one.

The easiest way to LEVEL up your Christmas dinner this year is quite simply, to level up your produce.

If you're anything like me, and the idea of bringing a fantastic Christmas meal to your family gets you giddy, then you should be sure to make your go-to local ingredient. Let's start with the cauliflower cheese and upgrade it to the Briddlesford & Harvey Browns 3 Cheese Cauliflower Delight.

How to Cook the 3 Cheese Cauliflower Delight:

Prepare the Cauliflower:
Cut a fresh, local cauliflower into florets and blanch them in boiling water for 5–6 minutes, until just tender. Drain and set aside.
Make the Cheese Sauce:
In a pan, melt butter over medium heat, stir in flour, and cook for 2–3 minutes to create a roux.
Gradually add milk, whisking constantly to avoid lumps, and let it simmer until thickened.

Assemble the Dish:
Place the cauliflower florets into a baking dish and pour the cheese sauce over the top.
Sprinkle your cheeses—mature cheddar, Red Leicester, and Gouda from Briddlesford and Harvey Browns—over the sauce to cover evenly.

Bake:
Bake in a preheated oven at 180°C (350°F) for about 20 minutes, or until bubbling and golden on top.
This rich and creamy three-cheese cauliflower will steal the show at your Christmas dinner. It’s the ultimate comfort food and a delicious way to showcase local Isle of Wight ingredients. Your family will be begging for seconds! 🎄

My Journey, telling your story is my passion.

My name is Reuben Mowle, I am a film maker, Photographer, Entrepreneur & Musician.

I am 25 years old. I’ve had an interesting journey in my career so far.

I started as a musician studying with Chichester uni learning about commercial music, at uni I performed and recorded music with several different projects. My band and I needed a music video, but as students we were on a shoe string budget. So after having a bit of experience with creating and editing memes on the internet (Not my proudest moment) I decided to give creating a music video a go.

At the time I thought the music video I had made was the best thing since sliced bread. But looking back it was pretty bad. But it fired up a passion inside of my for making films.
