I love to drink enough water daily, during breaks you’ll see me leaving the lecture hall to go refill my half liter water bottle.

It’s advisable to take up to 2 liters (8 cups) of water daily for women and men about 2.6 liters (10 cups) of water daily.

Do this in moderation too, remember anything taken into the body in excess can cause problems.

I have on different occasions noticed a remarkable difference between the ice cream 🍦 sold here and what I was used to back home.

I realized the ones here takes a bit longer time to melt, so it doesn’t mèss with the cone and stain your hands.

This is because of the ingredients and the way it was produced. Stabilizers are added to the ones made here, which I doubt is same case with this cone ice cream back home.

Also the kind of milk used too, if an ice cream is made with a milk which has an intact fat content, it has more creamier mouthfeel and also takes longer time to melt.

Also weather or environment is another factor.

Finally the entire cone is filled with ice cream, you keep biting into it till the end (check my last two slides) 😁🤪

Each semester presents a unique opportunity to learn more.

Here in Lund University, Sweden, I’ll be dïgging deep into packaging development from start to finish. Covering all aspects of packaging material science, designs, supply chain optimization and many more. The course cordinator have started addressing us as “Packaging wïzaards and disciples” 🤣🤣

I’ll also have the opportunity to learn more about sustainable food processing.

One thing I love about Danes is the way they like their country flag 🇩🇰

You’ll see it hoisted in their homes, workplaces and it’s common to have the small ones placed on top of cakes for birthdays and other celebrations.

Let me give a little background of what I’ve learnt about this beautiful flag.

The name of the Danish flag is “Dannebrog” which means “the clothe of the Danes”.

In the year 1219, leg and has it that the Danish flag fell from heaven during a battlè in present day Estonia this helped the Danish army seal an unexpected victòry.

From that day till now it’s become a unique identity for the people of Denmark. And the story has been passed down from generation to generation.

The Danish flag was not always Danish. During the European crusades from the 11th to 13th centuries, a red flag with a white cross was used frequently, without connection to Denmark. It became a Danish flag around the mid-14th century, which makes it one of the world’s oldest national flags in continuous use. Back then, the flag was carried by the Danish king Valdemar Atterdag (Valdemar “Another Day”), probably taking inspiration from the Holy Roman Emperor Louis IV of Bavaria who used a similar flag.

For centuries, the Danish flag was a royal flag. In 1834, the king even prohibited ordinary citizens from using it. This changed, however, in the mid-19th century, in connection with The First Schleswig War, a Danish-German military conflict. When the Danish soldiers returned home after winning the war, they were met with the sight of red-and-white flags hanging from private homes across the country. A few years later, the ban was formally lifted.

There are certain terms commonly used in food processing and technology and you may have come across them before.

They are: food restoration, food fortification and food enrichment. All are used to represent improving the nutritional quality of foods, but have different purpose.

Let me explain them.

Food restoration; is used when micronutrients are added to recover the original levels in a food that has partially or totally lost them during processing. For example, adding vitamin A and D to defatted milk to reproduce the content of those vitamins in whole milk, and nutritional equivalence, when the content of micronutrients of a manufactured food is modified to imitate the content of a natural food that is intended to be replaced.

Food fortification; this is a process of adding micronutrients not originally or nĂ turally present in a food product or present in small amounts before processing of that product. It is done for the purpose of preventing or correcting a demonstrated deficiency of one or more nutrients in the population or specific population groups (elderly, children, teenagers or pregnant women). So you can say it is targeted and carried out on commonly eaten foods that are centrally processed.
And this activity does not change the dietary practices of the population and so does not require special individual compliance.
Foods commonly fortified are: bread, breakfast cereals, fruit juice and milk products.

Food enrichment; it’s a practice of adding micronutrients back to a food product that were lost during processing. Thesè micronutrients are those nutrients we need in small amounts and our body can’t synthesize most them so we must get them from food products. Examples are vitamins and minerals.
Examples of enriched food products: enriched wheat flour (this can be with folic acid, riboflavin etc).

You can check the label of any food products and see if can spot out “fortified with…” or “enriched with….”

Wrote this on my phone notebook since 6 months ago and I just realized I haven’t shared it.

Food adulteratíon is one major problem faced in the food industry and it didn’t just start today. It’s been in existence long ago.

Let’s start off by explaining what it actually is; Food adulteration is a conscious act of altering the quality of a food. This happens in different forms; adding or replacing the food substance with undeclared alternative components or by removing some valuable components, concealing poor labeling, giving a new production date or best before date to a product that’s about to expire and selling expired food products.
The main aim of this act is to make more profit.

Some examples of food and common adulterants used.

Milk/milk products: melamine, skim milk powder, starch flours and glucose. These adulterants are added to thicken the milk or milk products, increase volume and sweetness.

Wheat flour: Benzóyl peroxidè (BPO). Adulterånt is added as a whitening agent.

Honey: sugar, beets inverted syrup, rice molasses and syrup. They’re added to increase sweetness and volume.

Beef/beef products: horse and donkey meat.

Spice: paprika and chili powder. Added to increase quantity.

During my NYSC days, I learnt from NAFDAC that some restaurants use paracetamol to cook their meats so this can make the meat tenderize faster and reduce cooking time.
I also got to know some use certain hazardòus chemicals on cow skin (kpomo) to make it appear thicker and then aesthetically pleasing to consumers.

Should we talk about those who add red dyès to palm oil or what’s going on in the dairy industry? The list is just endless.

Adulterated food is usually not identified until it shows a health hazard. These adulterĂ nts can be picked out through different food analytical methods (GC-MS etc).

Powdered food products are the most vulnerable because of the complex supply chain and drift in nutritional quality over time. As a result, ground material with a texture and color similar to the original powder can be added to increase the amount.

At the end of the day, the consumer suffèrs the impact of all of this. Adulterants of food products not only decrease the quality of food but if we eat these adulterated food products daily, then it affects our health very dangerously. For instance, adulteration causes many diseases such as cancer, liver disease, cardiac failure, kidney diseases, and nervous system-related diseases and even deàth in some cases.

Preventing food adulteration is a complex task that requires a multifaceted approach.

The following measures can prevent and mitigate the adulteration of food products: strengthening regulations and enforcement, enhancing testing and quality control, promoting public awareness and consumer education and strengthening supply chain management.

Mold growth on onion bulbs

Based on posts I have seen in several places on my timeline, I want to talk about mold growth on onion bulbs.

Study the picture below very well, I know you must have seen it couple of times.

That picture shows visible black mold growth on onions.
The black mold is usually AspergĂŽllus species especially AspergĂ­llus niger
The microorganĂŽsm is know to cause spoilage in onions and the source is mostly soil.

Now see the bad part, when onions that has them is ingested, it could cause a food infectîon known as “Aspergíllosis”

AspergĂ­llosis affects mainly the respiratory system, the symptoms vary depending on the immune system of the individual. For those who are termed as Imuno compromised individuals (aged, pregnant) symptoms can be more severe.

Some symptoms associated with it are; fever, cough, shortness of breath, fatigue and so on.

You might be tempted to say heating kĂŻlls off all organisms. Please read the next paragraph carefully.

Aspergíllus is a mould and forms spores. They can survive a long time and under extremely harsh conditions and are extremely resistant to heat, cold, and dryness. Freezing doesn’t achieve anything.
Heating to boiling point for at least 30 minutes can kÎll almost all living form but not the spores which would germinate or reactivate after cooling. To kÎll them you have to sterilize them, meaning hearing at 125°C combined with high pressure.

It’s best to discard onions that have mold growth on them. Use fresh onions.

Food p.o.i s.o.n.i.n.g is what most people overlook and when they eventually fall sick as result of one. Some blame village people.

The distance I cover by trekking every day amazes me.

Over here you can sit in the bus for 15 minutes then come down and trek up to 30 minutes. Or trek for 20 minutes and sit in the bus for 5 minutes.

I do buy monthly bus ticket (420 DKK) but e come be like I dey wastè the money because I still have to trek like say I no get ticket.

I have two bus stop’s situated 5 minutes Aprox from my place but it doesn’t change anything

On my video the other day about my trip to Barcelona, I mentioned using Booking.cĂłm for checking out cheĂ p flights.

Here is a detailed explanation on what the websĂ­te looks like and how you can navigate it.

On the websíte, you have to type in the airport you’ll be flying from, the airport you’ll be landing at, the date, if it is one way or return (round trip), the cabin class (economy, premium economy, business or first class), include how many adults and children.

Then go ahead and search, different airlines traveling on the said date will spring up.

You have to go through the options available and choose the one that best suits your budget, convenience and any other factor you’re considering.

I’ve attached some screenshots to give an example.

1st slide: The portal before search

2nd slide: I selected one way as it is intended for one way ticket. I’ve also included tentative travel plans

3rd/4th slide: Available flights on that day. Different fare charges and details. You’ll notice there’s self transfers in some, it means it’s your duty to pick up your luggage after you land at the connecting airport and check it in yourself to board the connecting plane. For some trips, there won’t be self transfers as the airline will do so for you. Read all instructions carefully, to know layover duration and other vital information.

5th/6th slide: I clicked on one of the options and here you can see the baggage allowance. If you want more bags, the charges for that is there too.

When you’re done providing all required information and going through for confirmation. You can go ahead and select and finalize the booking.

For students who will be coming to study abroàd next session; here’s is a list of things that you can bring along (you can tailor it to your preference)

I would start with, don’t mind anyone that tells you not to pack so much things. My deaars, pack as much as your weight allowance (two boxes 23 kg each can contain). Buy a luggage scale and use it to weigh as you package so you don’t exceed the weight specifications.

Wears: quality sneakers, under-wears, jean trousers, leggings, sweaters, hand bags, flat indoor slippers and outdoor slippers, shoes, plain trousers, shirts and other necessary outdoor outfits

Others: thick winter jacket (buy from ndi okirika wears sellers) thick socks, Pyjamas, body and hair cream, toothpaste shaving bic or cream, bathing soap, detergent, few rolls of toilèt paper, tooth paste, toothbrush, school bag, sanitary pads (for ladies), towel, razor blade (very very important), needle and thread of different colors, spare buttons, nail cutter, attachments (for braiding), shampoo, conditioner, relaxer, wig laces and other stuffs for wig making (My elder shopped all these for me, God bless you Adanne ❤️).

If you’re the type that love food like me, I will advise you come with enough foodstuffs, the foodstuffs I brought with me since last year is what I’m still using here especially as I’m in a country where I have limited access to them.

My mum and I shopped weeks non stop for local foodstuffs and packaged them in ziplock pouches and most importantly labeled them well.

Here’s a non exhaustive list:
Well dried egusi/ogbono, crayfish, stock fish, seasoning cubes (maggi, k**r chicken etc, uziza seed, dried uziza leaf, scent leave, oha leaf, local spices for stew, ofe akwu, pepper soup and co, small pack of salt, small Garri, rice, beans, dried meat/kpomo, milk and milo, corn flakes, oats, pap powder, red oil (please freeze this well).

Another thing you should include is medications like: paracetamol, malarià medicine (this is in case you have any untreatèd malarià in your system when you arrive, I came with 2 packs and I have not had need to use them because no mosquitóe bites, I will probably throw them away as they’re expiríng by end of the year) and any other medications and remember to put them in one ziploc bag and label properly.

Biko include Abonikí balm 😂🤣, it was a life savèr during the very cold winter days. If not I don’t know what I would have done.

Please add at least one bedsheet and pillow case, I spent £10 to buy bed sheets days after I arrived because I didn’t bring any and I almost cried that day 😁.

When you newly arrive you’ll think the household items are expensivè because you will be forced to still be converting £ to Naira, and if you have most of the things from Naija, you’ll only have to buy things like meat, egg, vegetable oils and co here and then save spending from day 1.

If you’re into make up, bring your tools (aburom onye ntecha so I didn’t bother).

The list might seem a lot, believe me you’ll be happy you packed them.

After you have bought all these, pack them, remember you have two boxes 23kg each. Balance the packing, have a mix of wears and foodstuffs in each box (so ndi airpórt check’s won’t worry you too much, ighata go 😬😉). Make use of your hand luggage too.

After you’re done packing and weighing, you’re half ready for the D day.

Weeks back, I stumbled on a post where someone was advising people to get a schèngen visit vísa and then when they get to their dèstination, they can convÊrt to work vísa with it. You needed to sèe the number of persons jumping up at such update.

I dropped my two cènts and advisèd people in the comment section to rÚn from such offers.
It’s very difficult to convèrt from such vísa to work visa.

Firstly, the Schengen visa does not give you right to work. And it’s valid for 3 months only (90 days). It’s strictly for the purpose it was given, which is for visit and tourism.

You can only work in any schengen countries if you have the D type of visa (Long stay visa) or Residence work permit and converting from the schengen visit visa to this kind of visa isn’t straightforward. You will need to leave the country and apply for a work permit outside the European Union. You can do your research to know more.

I know people are enthusiastíc to japà but biko don’t let agènts sweet talk you into impossiblè missions. You gó sufa tire and it’s not worth it at all.

After travelling for my studies last year, I bought a new sim, and because iPhone does not have two sim ports, I had to remove my MTN sim to make way for the new sim. After a few weeks, I had to reslot my MTN sim and made a call to my husband to keep the line active. Then I read (cannot remember where) about how to keep your MTN number when you japa. I went to my browser to check the steps and followed them.

I recharged my MTN line and paid 511 NGN for my sim to be valid for a year. I will renew it later this year.

So, if you, like me, is scarrèd to loosè your numbers to recycling and the likes, you can use this option as well.

They have option to keep your sim valid for one year, three years, and so on. Check out the second image for more.
