Today, I want to take a moment to honor and celebrate you, a woman who has been a pillar of strength, wisdom, and unwavering support in my life. Words fall short when I try to express how much you mean to me and my family. You have been one of the very few people who has always been there, through every high and low, offering your time, your heart, and your intellect to make our journey smoother.

Your dedication goes beyond what words can capture. From helping me navigate challenges in the church to the countless times you’ve quickly responded to my questions with grace and patience, you’ve been a constant source of guidance. When my husband and I were planning our wedding, your involvement was invaluable. You left your own family to stand by me, ensuring that everything was perfect—your attention to detail, financial advice, and hands-on support made all the difference. Without your contributions, so much could have gone wrong, but instead, everything fell into place beautifully, and we have you to thank for that.

As I reflect on your presence in our lives, I’m reminded of the scripture from Numbers 6:24-26: “The Lord bless you and keep you; the Lord make his face shine on you and be gracious to you; the Lord turn his face toward you and give you peace.” Loretta, you embody this blessing. Your life is a testament to God’s grace and love, and I pray that He continues to shower you with His endless blessings.

Ingredients For the swee & sour sauce

* mix 100ml pineapple juice
* 3 tbsp of honey
* 4 tbsp ketchup
* 2 tbsp light soy sauce
* 3 tbsp rice wine vinegar
* 100ml sriracha sauce
* 1 egg to coat your diced chicken with it (optional)
* spices- garlic powder, salt, stock cube, black pepper, white pepper, my home made spice
* cornflour
* Chopped vegetables (Pepper)

Preparation
NB: I deep fried my chicken but you can air fry for 15 mins at 200C

* Add to your sauce pan 100ml of water and put to a boil
* Add your wet ingredients (sauces) to boiling water
* Add in fried chicken
* Add chopped vegetables
* Stir in chicken when it's done

Ingredients For Fried Rice

* Boiled Rice
* Eggs
* Chopped spring onions
* Grated carrots
* Shrimp
* Soy sauce
* Sesame oil

Thinking of the mystery behind our love and how our journey began makes me teary, but God declared in his infinite wisdom, and it manifested. 🥰

I can’t seem to imagine what life would be like without you over the years. You came into my chaotic life and turned everything around in a way I could not fathom. The joy, laughter, and peace you brought into my life are incredible, and I must admit that you are my answered prayer.

Isaiah 43:18-19 NKJV

Behold, I will do a new thing, Now it shall spring forth; Shall you not know it? I will even make a road in the wilderness And rivers in the desert.”

Indeed, God did a new thing and made a road even in the wilderness, and I am grateful for this blessing of an imperfectly perfect human.
