I think I’ve improved my ‘Tam O’Shanter Oyster’!!
As Jill from Kintaline House, suggested in my previous post, I added some whisky over the haggis topped oyster before grilling.
It is truly delicious!!
As a Perthshire lass, I had a bottle of Blair Atholl given to me at Christmas (thank you Ewen - I hope you forgive me for cooking with it 🫣) but I’m sure a drizzle of Oban would be delicious too 😉

I took some oysters home for my haggis & oyster experiment.
I gently warmed up one slice of haggis in the oven, and another in a frying pan.
The first oyster has the fried haggis on top and I ate that one raw - good but not my favourite. The second oyster has the oven-warmed haggis on it. And the third one has the fried haggis with a drizzle of single cream on top. These two I put under the grill for a few minutes to warm through the oyster.
My favourite was the third oyster - I liked the crisped up texture of the haggis contrasting with the oyster meat.
Now the third oyster has pale gills - and I do not know why before anyone asks. Any guesses?

All very quiet here after Storm Eowyn has passed through. I hope everyone managed with their Christmas candles - my camping gas stove was a god-send! And I hope there’s no damage to your property. My bird table cowped over but that’s all.
Picked up the Oban Times and there’s our oysters on the front page!! That was a great night at The Rockfield Centre - great effort from everyone involved.

There’ll be no oysters on the stand today but hopefully tomorrow will be a safer day to go out and about.
I’m thinking of trying an oyster with haggis recipe. What do you think?
Keep safe and cosy - my To-Do list is getting too long!! Might just stay in bed and drink tea 🤔

Grading oysters this morning and fresh large ones out on the stand. It isn’t BBQ weather but Grilled Oysters with Parmesan & Cream is my choice of recipe today 👍🏻
