I've probably made thousands of dumplings, and eaten many more! π
Dough:
250g plain white flour (plus extra for dusting)
150ml warm water
Filling:
500g minced pork/chicken/turkey (higher fat content is better)
ΒΌ head of small white cabbage, finely chopped
2 to 3 spring onions, finely chopped
Small bunch coriander, finely chopped (optional)
2 tbs light soy sauce
Β½ tsp white pepper
1 tsp sesame oil (optional)

Finding my tribe... I've started a new mushroom growing course @sowthecity and today we made our own mushroom grow bags. π
The growing medium I'm exerimenting with is straw, cardboard and coffee grounds. β Fun fact, the oyster mushrooms that grow will take on the flavour of the coffee!
It was day two of the course today and I've never felt so instantly comfortable in a group of new people before. We are connecting over our fascination with the fungi kingdom!
I'm now home with a warm and fuzzy feeling, and my mushroom bag is safely wrapped in a towel in the bathroom to keep it all cozy until the mycelium begin to grow.

Harissa and garlic mushrooms, hummus, avocado and goats cheese
A weekend lunch prepared and eaten slowly in the beam of the winter sun β It was so good I made it again the next day, adding cherry tomatoes and fresh coriander too.
πMushrooms are one of my ingredients, there are so many to choose from and they have their own unique textures and flavours.
π¦ This is a gut friendly lunch that can be easily adapted with whatever ingredients you have to hand. Make it vegan by switching out the goats cheese. πΏ
My hack for adding quick flavour is @belazu_co rose harissa paste. I teaspoon goes a long way and gives an instant hit of spice and flavour.
