No. 10 Bar & Kitchen •
Visited this quaint restaurant/bar in Blackpool last weekend to satisfy our cravings for Thai food and they did not disappoint.

We sampled the following:
》Chicken and Prawn Pad Thai | Stir-fried rice noodles with beansprouts, spring onions, carrots, egg with a wedge of lemon and peanuts on the side
》Duck spring rolls drizzled with sweet chilli sauce
》Chicken Satay (chicken skewers) marinated in turmeric and drizzled with peanut sauce
》Green Curry cooked with coconut milk, peppers, carrots, courgette, green beans and bamboo shoots
》Sticky Toffee Pudding with ice cream
》Thai Sabai Signature Cocktail | Thai spiced rum, lime juice, sugar syrup and soda

The Spring rolls & Satay had balanced flavours while the mains certainly hit the spot. The Pad thai had ample chicken and juicy prawns plus the amount of heat on the Green curry was perfect for our liking - such a delightful meal.

The signature cocktail was so refreshing, I could drink one everyday! Would have preferred to see some classic Thai desserts on the menu but I won't say no to a scrummy sticky toffee pudding (my absolute fave).

Overall, a buzzing spot with friendly staff and an extensive food/drinks menu which won't break the bank. If you're a fan of Thai cuisine just like us then you should check this place out.

This stunning restaurant is one of our faves in Preston and the meals that we've had from them thru the years never failed to impress us. We visited again last weekend and devoured the following ~

》Gambas | King prawns sautéed in lemon, garlic and chilli butter on toasted rustic sourdough
》Sticky Brindisa Chorizo and Bread board
》Duck à ľOrange | Confit duck leg, dauphinoise potatoes, roasted chicory with an orange and Cointreau jus
》Chicken Normandy | Pan-fried chicken breast with Toulouse sausage, caramelised apples, dauphinoise potatoes, cavolo nero, crispy onions and Calvados jus
》Steak Frites | Prime, pasture-fed British bavette cut minute steak. Pan-seared, served pink, with lambs leaf, pommes frites and garlic butter
》Tarte Tatin, Sticky Toffee Pudding & Cosmopolitan

Thoroughly enjoyed the bangin' starter, exceptional mains and moreish desserts ~ ticked all the boxes for us.

They have outlets in Birmingham, Coventry, Derby, Eastbourne, Nottingham, Southport, Stratford-upon-Avon among others (refer to link below for the full list of locations).

I made this Sweet Chilli & Lime Rotisserie Fish (Basa) using my fave RotoQ 360, the World's First Non-Electric self rotating Rotisserie just in time for the Lunar New Year. Fish is commonly served on this special occasion which signifies prosperity for the entire year 💫

The fish was evenly cooked, complimented by the creamy mashed potatoes and pickled veggies - So happy how it turned out.

👩🏻‍🍳 Instructions:
Marinade the Basa in garlic, salt, sugar, ginger, chilli flakes and parsley. Place the fillets in the flat rotisserie basket and leave in the oven for 15 minutes or until cooked through. Garnish it with fresh coriander and lime.

The Diner Backlot Blackpool () •
Checked out this vibrant spot situated at cinema right in the heart of Blackpool and sampled some of their signature items ~

We tried the following:
》Sticky Chicken Wings (Hot Maple)
》Nachos with shredded salt and pepper chicken (Tortilla chips, guacamole, pico de gallo, cheese sauce, sour cream)
》Rack Em Up (half rack of BBQ ribs), fries and maple slaw
》The Backlot Burger with Monterey Jack cheese, gem lettuce, gherkins and signature sauce

This diner ticked all the boxes for us - Well executed food (enticing chicken wings, moreish nachos, tender BBQ ribs and scrumptious burger), fun ambiance plus attentive service which exceeded our expectations. Me and my husband were so pleased with everything that we had and definitely enjoyed our dining experience here.

They have an extensive menu which caters to anyone's taste from wraps to flatbreads, various brunch meals, shakes, cocktails etc. Please do check it out if you're in the area, I highly recommend them.

Do you know what time it is? It's pasta o'clock! For my last feature on the world's first range of Peat smoked Tomato sauce, I made this Spaghetti with bacon bits in Peat'd Truffle Tomato sauce 🍝

The robust and earthy flavour of the truffle tomato sauce was complimented by the meatiness of the bacon, I'll never get tired eating this simple yet tasty meal. Please do give it a try, I highly recommend it.

🌟 Ingredients:
150g Spaghetti
1/2 cup Truffle Tomato sauce
1/2 tbsp olive oil
4 tbsp bacon bits
1 onion, finely chopped
1 garlic clove, finely chopped
Grated parmesan

👩🏻‍🍳 Instructions:
Heat the oil in a frying pan and cook the bacon bits for 3 to 4 mins until it turns crispy. Stir in the onion and garlic, cook for another 3 mins. Prepare the pasta following its pack instructions.

Pour in the Peat'd Truffle tomato sauce then bring it to a simmer for about 5 mins, stirring consistently. Plate the spaghetti, top it with the sauce and grated parmesan.

Part 3 of my feature on , the world's first range of Peat-smoked Tomato sauce. I made Nachos with guacamole & Peat'd Chilli Tomato sauce topped with grated cheese 🌟

A crowd pleaser and the perfect appetizer for any gatherings or parties most especially with Christmas just around the corner. Also ideal whenever you're craving for something tasty yet easy to make.

🌟 Ingredients:
Pack of tortilla chips
Peat'd Chilli tomato sauce
1 ripe tomato
1 ripe avocado
Juice of 1 lime
Handful of coriander, roughly chopped
1 small red onion, finely chopped
Grated cheese

👩🏻‍🍳 Instructions:
Scoop out the avocado flesh into the bowl with the crushed tomato.
Tip the juice of 1 lime, a handful of coriander and finely chopped red onion into the bowl then season with salt and pepper, roughly mash everything together.

Assemble the tortilla chips onto a plate with the guacamole, Peat'd Chilli tomato sauce then top it with grated cheese. Place in the microwave for 2 mins or until the cheese has melted.

Peat'd •
Part 2 of my feature on Peat'd, the world's first range of Peat-smoked Tomato sauce. I made a Meatballs Sandwich in Peat'd Original Tomato sauce 🌟

Comfort food at its finest! An ideal snack or meal that I’d normally have during the week, its flavours and textures are totally satisfying.

👩🏻‍🍳 Ingredients:
For the meatballs:
150 grams of pork or beef mince
Half an onion, grated
1 egg
2 tbsp parsley
2 garlic cloves , minced
2 tbsp Parmigiano reggiano or parmesan
Salt & pepper to taste

🍅 For the sauce:
1 tbsp olive oil
Half an onion, chopped
1/2 cup of Peat'd Original tomato sauce
1/4 cup water
1 tsp chilli flakes
3 tsp dried Italian herb mix (parsley, basil, thyme, oregano)
Salt & pepper to taste

Instructions:
Add all the meatball ingredients in a bowl, mix well. Measure out a heaped tablespoon and roll lightly to form a ball, repeat with remaining mixture.
Heat 1 tbsp of olive oil in a pan over medium high heat. Add the meatballs and brown all over for about 3 to 4 minutes then carefully transfer them onto a plate afterwards.

For the sauce, sauté the onion and garlic for 2 to 3 minutes until translucent. Add the Peat’d Original tomato sauce and the remaining ingredients. Bring to a simmer and cook the meatballs for 8 to 10 minutes, turning occasionally. Put the meatballs on top of your bread of choice then finish it off with grated parmesan.
