This super chocolatey vegan bread & butter pudding is 🤤

Here’s a super delicious dessert I’ve previously made, but just been playing about with the recipe a little today!

Ingredients
• slices of vegan panettone
• chocolate & hazelnut spread
• 600ml plant based double cream
• 200ml plant based milk
• 2 Tbsp Maple Syrup
•50g dark chocolate
• handful of hazelnuts chopped
• 2 Tbsp cornflour
• 2 Tbsp Cocoa/Cacao powder

Method
• Preheat your oven to 180°C.
• Put the milk, cream, maple syrup and cocoa powder into a pan and bring gently to a simmer, whisking continuously.
Drop in your chocolate and stir until melted.
• Dilute your cornflour with a little cold water and mix so you have a milk like consistency,
• Gradually add the cornflour to your hot cream and whisk until you see it start to thicken. Don’t be too quick with this step, if you add too much too quickly, it can get very thick.
You want a consistency of custard.
• Once done, set aside, put a lid on, cover with clingfilm or baking parchment so it doesn’t form a skin.
• Meanwhile slice the panettone into 4 slices. Spread the chocolate and hazelnut spread on both sides of each slice. Now make layers in your dish/ roasting tray. Do one layer of chocolate covered panettone , then pour over some of your chocolate custard. Then do another layer of chocolate covered panettone , then custard on top again. Repeat as many time as you can until your dish is full.
Keep any custard remaining, to top at the end if you wish.
• Place in the oven for approximately 15 minutes, until the custard is bubbling and the top is crunchy.
• Top with some chopped hazelnuts and serve immediately.
Pour over excess custard if you wish.

Although much of his work now “day to day” is content creation for brands, we are super lucky to have him back in the kitchen providing delicious homemade tasty nutritional dishes for our retreats! Get your oats!😜

These are my caramelised banana and coconut overnight oats.

As always, overnight oats are really simple to knock up, so why not give these bad boys a go. Super versatile as well, so add in some protein powder if you need to, or maybe top with some favourite berries!

Ingredients
2 cups of oats
2 bananas mashed
2 tsp coconut natural yoghurt
2 cups of coconut milk

Mix all of these ingredients and leave overnight or for at least 1 hour if you can’t wait that long.
Top with a little spoon of chocolate spread.
Caramelise a banana by splitting it down the middle. Place a pan on a medium heat with 2 tbsp of maple syrup in. Place your bananas face down and cook for 3 minutes until nicely browned.
Place on top of your bowl and enjoy the deliciousness.

So I’ve posted this recipe before, but as it’s an absolute banger for summer, I thought I’d post it again!!

This is my mango, avocado and black bean salsa, which is incredibly fresh and tasty.

Use with bbq, salads on toasted sour dough, on tacos, on top of burgers, the possibilities are endless.

The recipe really doesn’t get any easier than this!!!

1 Avocado - diced
1 Mango - diced
1 red chilli - chopped
1 tomato - deseeded and diced
2 spring onions - sliced
2 limes juices
120g black beans
Combine all the ingredients, add a pinch of salt and pepper and enjoy!

Who fancies a yoga retreat in the sun, with lots of tasty food?!

So….very excitingly there has been some discussion within the Retreat Team about the possibility of a Pyrenean Wellness Retreat next year!!

I know some of my lovely yogis have already asked about this and have been very patient with me whilst I found time to think this all through so thank you! If you think you might be interested we would really appreciate your thoughts please 🙏🏼

The Retreat venue would be the stunningly beautiful Mas d'en Llinas in the South of France and would likely run from Thursday/Friday to Monday. Daily fitness & yoga sessions would be offered, along with breakfast lunch and dinner prepared for you throughout your stay.

In relation to rooms, there would be sole occupancy and sharing prices available.

✨The question is 3 or 4 nights? 🤔✨

I completely understand that you probably see lots of these posts, especially at this time of year……BUT I would reeeeeeaaaaaally appreciate it, if you could take a look at the link below. The very best way to use up your 🎃🎃🎃……..BHAJIS!!

These are insanely good. Great as a side dish or even better as a burger!!

Give these bad boys a go.

What you will need-1/4 pumpkin-seeded and peeled.
1 onion sliced
4 tbsp gram flour
1 tsp curry powder
2 tsp water
Salt & pepper
Grate your pumpkin and add to a bowl.
Add your sliced onion, curry powder, gram flour and salt & pepper. Mix well.
Now add the water and give another mix.
Put a pan with some oil on a medium to high heat.
Put golf ball size handfuls in the pan and flatten slightly.
Cook for 2-3 minutes either side and serve!

It’s that time of year again…..bring on the roasted veggies!

This is a great way to use up those leftover 🎃🎃🎃

Here I have roasted off some potatoes, swede, carrots, pumpkin and beetroot in a little oil, fresh rosemary, salt and pepper and the flavours are absolutely banging!!

Chuck them in an oven at 190°c, roast until golden and tender and you’re good to go!!

So this Sweet potato and cocoa smoothie bowl is an absolute winner……trust me!

You may think sweet potato in a smoothie bowl is just plain nasty, but this is soooooo good.

This is a great pre or post workout (especially running, cycling or anything else endurance based), a great source of slow release carbs and it feels super indulgent.

A little bit of prep involved, as it’s best to roast off a few sweet potatoes, cut them up and then freeze them. Then it’s just a case of throwing them and all the other ingredients into a blender.

400g frozen Sweet Potato
2 × small Bananas
1 × tablespoon Peanut Butter
1 x tablespoon Cocoa Powder
2 x dates
Toppings of your choice.

This will be enough for a couple of decent portions.

Homemade Protein Easter Bites!

You NEED to make this this weekend, it's literally so easy and if you make too many and you end up with extra after Easter... what a shame 😉

The recipe:

1 scoop of Vanilla Crème protein (you can use our Whey 360 or Vegan Protein)
2 tbsp Only Peanuts peanut butter
1 tbsp Zero Syrups
1 tbsp water
25g ground almonds

Method:

1. Mix all ingredients, except for the chocolate, in a bowl until you get a soft dough that you can shape with your hands.
2. Divide your mix into four ‘balls’ and press these onto a chocolate mould or a measuring spoon!
3. Melt your chocolate.
4. Dip the bottom of each ‘half egg’ in the melted chocolate and place it on a tray lined with baking paper. Then, spoon some more melted chocolate on top until you cover each egg
5. Move all eggs to the fridge to set and enjoy!

Happiest of pancake days to you all!!! 🥞🥞.
Why not try something a little different today and go for a pikelet! These super fluffy pancakes are sooooooo addictive!

Give this banging recipe a try, you won’t be disappointed!

Ingredients
185ml milk of choice
1 egg (or flax egg if keeping PlantBased)
150g Self raising flour
¼ tsp bicarbonate soda
1 tbsp caster sugar

Method
Whisk the milk and egg together in a jug.
Mix the flour, bicarb sugar and a pinch of salt together in a bowl.
Pour the milk mix into the flour mix and whisk until smooth.
Place a non stick frying pan over a low to medium heat and allow to warm up.
Spoon two tablespoons of the mix (one on top of the other) into the middle of the pan and cook for approximately 30 seconds or until bubble start to appear on the top.
Flip the pikelet over and cook for another 45 seconds.
• To serve, top with your favourite things and enjoy!

Who fancies some Edible Protein Cookie Dough? 🙋‍♂️

The ultimate high protein dessert!

All you need to make is:

- 2 scoops Whey 360 or Vegan Wondershake in Vanilla Creme
- 1/2 cup Protein Works Only Peanuts Peanut Butter
- 1/4 cup Maple syrup
- 1/4 cup Of water
- 1/4 cup Of chocolate chips

1. Add the protein powder, maple syrup, peanut butter and water to a large mixing bowl and begin to mix with a spoon.
2. When the mix has started to come together, start mixing with your hands until a dough has formed.
3. Add the chocolate chips and mix again.
4. Serve immediately or chill in the refrigerator and enjoy later.
