EPIC LETTUCE CUPS for Weight Loss ๐ฅฌ Vegan, Oil Free & Low Calorie Density!
I have been having this one on repeat guys ๐ฅand i have actually lose 6lbs in the last month eating HUGE portions just like this.
Yes, it may look simple but itโs absolutely delicious and packed with so much flavour! Itโs high volume & low calorie density (ie full of veggies) so itโs the perfect meal for any volume eater who is trying to lose weight ๐ฅ I promise you wonโt go hungry!
Ingredients
1 head of broccoli
1 onion
1 courgette
2 little carrots
1/2 a baby white cabbage
1/2 a block of extra firm tofu
3 cloves of garlic
A thumb of ginger
1 cup of cooked rice
2 tbsp soy sauce
Sweet gem lettuce leaves
Sauce:
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp white miso
1 clove of garlic
1 tbsp vegan kimchi juice (optional - or a splash of sriracha for a kick)
1 tbsp maple syrup
Sprinkle of sesame seeds
1. Chop up all the veggies and tofu and add to a pan with a splash of water, soy sauce, minced garlic and ginger. Cook with the lid on for 5-10mins or until softened.
2. Add in the cooked rice and mix together. Spread your lettuce leaves out on a plate and add spoonfuls of your stir fry mix into them.
3. Mix the sauce ingredients in a bowl and pour over each lettuce boat ๐ oh with a sprinkle of sesame seeds of course!
