OIL FREE CHICKPEA NUGGETS โœจ Healthy Vegan Weight Loss!!

Did you know you can make nuggets out of chickpeas?

Oil free, high fibre and protein and incredible for weight loss!

Ingredients
2 tins chickpeas (save the aquafaba)
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
Salt to taste

1 cup breadcrumbs
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Salt to taste

Spicy maple sauce:
2 tbsp maple syrup
1 tbsp sriracha
2 tbsp tomato paste
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
2 tbsp apple cider vinegar
1/4 cup water
1 tsp cornstarch
Pinch of salt

If I am craving chocolate for dinner (or any time of the day), this is one of my faves ๐Ÿ”ฅ

Yes itโ€™s made using cauliflower and beans! I promise you canโ€™t taste them at all ๐Ÿคฏ I love adding beans because it creates an incredible fudgy texture whilst also helping me stay full and satisfied for HOURS!

Ingredients:
3 ripe spotty frozen bananas
1/2 cup black beans
1/2 cup frozen cauliflower
2 tbsp cacao powder
1 tbsp peanut butter powder (optional)
1 tsp vanilla
Pinch of salt
Splash of plant milk to get the blender moving

Toppings:
1 rice cake
1 tsp maple syrup
1 tsp cacao powder
Splash of water

1. Blend all the ingredients in a high power blender or food processor until you get the most incredible smooth ice cream.

2. Crumble a rice cake on the top and mix maple and cacao powder with a splash of water to make a choc sauce to drizzle on the top!

BLACK BEAN TAQUITOS ๐Ÿ”ฅ Healthy Vegan Weight Loss Style!!

Ingredients
5 oil free wraps (I made my quinoa wraps - recipe in my new cookbook)

1/2 an onion
2 cloves of garlic
2 tins of black beans
1 cup sweetcorn
1 courgette, grated
1 carrot, grated
1 tin chopped tomatoes
1 pack of fajita mix
Fresh coriander

Sauce:
1/2 cup unsweetened vegan yogurt
1 clove of garlic
Juice of half a lemon
1/4 cup coriander
Pinch of salt

1. Add all the ingredients to a pan with a splash of water and let simmer for 20mins until cooked. Mash and add to the centre of each wrap. Roll it up and air fry or oven for 15-20 mins at 189 Celsius or until crispy.
2. Mix together the sauce ingredients and dunk away!

Ingredients:
3 sweet potatoes
3 cups of cauliflower
400g extra firm tofu
1 tbsp garlic powder
1 tbsp onion powder
1/4 cup nutritional yeast
1 cup unsweetened plant milk
3 tbsp apple cider vinegar
Pinch of salt
Pasta of choice!

1. Boil peeled sweet potatoes & cauliflower until tender. All to a blender with the remaining ingredients and pour over pasta.
2. For maximum weight loss serve half your plate with Mac & cheese and the other half with your favourite non starchy veggies (mine is broccoli)

I know this one is out there but trust me, it was so so delicious and a great way to get in a tonne of veggies whilst also satisfying that chocolate craving โœจ

Ingredient
1 head of cauliflower (I used frozen)
1/2 cup chickpea flour
1/2 cup water
1/4 cup cornmeal

Sauce:
3 ripe bananas
2 tbsp cacao powder
1 tsp vanilla
1 tsp white miso paste
1 tbsp cornstarch

1. Mix together chickpea flour and water to make a batter. Add frozen cauliflower and mix well. Add cornmeal and mix again. Pop into the oven for 30mins at 180 Celsius or until crispy
2. Blend all the chocolate sauce ingredients together and heat in a pan. Add cornstarch slurry and mix until thick.
3. Add chocolate sauce to cauliflower wings and mix well. Top with powdered peanut butter and enjoy!!

CRISPY SUSHI TACOS ๐ŸŒฎ Healthy Vegan Weight Loss!!

Ingredients

1.5 cups cooked sushi rice
3 sheets of nori
1 cup chickpeas
3 tbsp unsweetened soy yogurt
1 tsp soy sauce
1/2 tsp rice vinegar
1/4 tsp garlic powder
1/4 tsp onion powder
Cucumber
Mango
Sauce:
1/8 cup unsweetened soy yogurt
1 tsp soy sauce
1/2 tsp rice vinegar
1/4 tsp garlic powder
1/2 tsp sriracha

1. Cut nori into circles. Add 1/2 cup rice onto each sheet and spread it out. Crisp up like a taco in your air fryer for 10mins at 180 Celsius or until crispy.
2. Mash chickpeas with soy yogurt, soy sauce, rice vinegar, garlic and onion powder. Slice mango and sushi. Mix together spicy mayo sauce.
3. Assemble and enjoy!

HIGH PROTEIN VEGAN MOZZARELLA ๐Ÿ”ฅ Vegan, Oil Free & Low Calorie Density!!

Ingredients:
1 box of silken tofu
2 cloves of garlic
1/3 cup soy milk
2 tbsp apple cider vinegar
1/4 cup nutritional yeast
1 tsp salt
3 tbsp tapioca starch
1 tbsp kappa carrageenan (to firm into balls)
Tomato
Basil

1. Blend all mozzarella ingredients until smooth. Heat low and slow in a pot, making sure to keep stirring until it comes together and becomes stretchy.
2. Put 1/4 cup onto some cling film and twist to make a ball shape. Place in ice cold water for 20mins until completely cooled.
3. Serve with tomato and basil to make your low fat Caprese salad for maximum weight loss.

Ingredients (enough mixture for 12-14 magnums)
1.5 cups butter beans
4 ripe bananas
1 cup steamed cauliflower
2 cups of frozen/ fresh raspberries
1 tsp vanilla extract
4 tbsp peanut butter powder
5 medjool dates
1/2 cup plant milk

Vegan dark chocolate for coating

1. Blend all the ingredients apart from the dark chocolate until nice and smooth. Pop into ice cream moulds and freeze overnight.

2. Take out and dip in optional melted dark vegan chocolate. For maximum weight loss I would have it without the chocolate coating!

EPIC LETTUCE CUPS for Weight Loss ๐Ÿฅฌ Vegan, Oil Free & Low Calorie Density!

I have been having this one on repeat guys ๐Ÿ”ฅand i have actually lose 6lbs in the last month eating HUGE portions just like this.

Yes, it may look simple but itโ€™s absolutely delicious and packed with so much flavour! Itโ€™s high volume & low calorie density (ie full of veggies) so itโ€™s the perfect meal for any volume eater who is trying to lose weight ๐Ÿ”ฅ I promise you wonโ€™t go hungry!

Ingredients
1 head of broccoli
1 onion
1 courgette
2 little carrots
1/2 a baby white cabbage
1/2 a block of extra firm tofu
3 cloves of garlic
A thumb of ginger
1 cup of cooked rice
2 tbsp soy sauce
Sweet gem lettuce leaves

Sauce:
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp white miso
1 clove of garlic
1 tbsp vegan kimchi juice (optional - or a splash of sriracha for a kick)
1 tbsp maple syrup
Sprinkle of sesame seeds

1. Chop up all the veggies and tofu and add to a pan with a splash of water, soy sauce, minced garlic and ginger. Cook with the lid on for 5-10mins or until softened.

2. Add in the cooked rice and mix together. Spread your lettuce leaves out on a plate and add spoonfuls of your stir fry mix into them.

3. Mix the sauce ingredients in a bowl and pour over each lettuce boat ๐Ÿ‘Œ oh with a sprinkle of sesame seeds of course!

COOKIE DOUGH TRUFFLES ๐Ÿ”ฅ Vegan, Low Fat & Weight Loss Friendly!!

These super easy low calorie truffles are packed with fibre, protein & will totally satisfy your sweet cravings!

Ingredients
1 tin chickpeas
6-8 medjool dates
1/2 cup peanut butter powder
1 tsp vanilla
Pinch of salt
Pitted cherries (I used frozen)
Optional - vegan dark chocolate chips

1. Into a food processor add all the ingredients (apart from the chocolate chips & cherries) and blitz until it turns into cookie dough:
2. Flatten a couple of tbsp of mixture into a circle and add a cherry in the middle. Roll into a truffle & then drizzle with optional dark chocolate!

APPLE PIE CINNAMON ROLL ๐ŸŽ Healthy Vegan Weight Loss!!

Ingredients
1/2 cup quinoa
1/2 cup water
2 apples
1/2 pre baked sweet potato
Lots of cinnamon
1 tsp vanilla
2 tbsp vegan yogurt
Splash of maple

1. Soak quinoa in boiling water for 15mins, drain and blend with water until smooth.
2. Heat a non stick pan and pour 1/4 cup of mixture at a time and cook for 1-2 mins on each side to make quinoa wraps.
3. Chop apples and add to a pan with cinnamon and a splash of water. Cook until softened
4. Mash a pre baked sweet potato (any variety) with cinnamon and vanilla and add to one of your quinoa wraps. Top with apples and add another wrap to the top.
5. Roll like a sushi and bake for 10-15mins or until crispy. Top with your frosting and enjoy!
