I’m the kind of person who wants to eat peanut butter by the bucket load! So that’s why I created my epic high fibre, high protein & low calorie peanut butter which you can eat in huge quantities and still lose weight ✨

Trust me, I know it looks simple but it freaking blew my mind 🀯

Ingredients (6 decent snacks or even a full meal)
2 cups of grapes
Low Calorie Peanut Butter:
2 cups of chickpeas
3 ripe bananas
1/2 cup of peanut butter powder
3-4 medjool dates
1 tsp vanilla
Pinch of salt
1/4 cup plant milk

Optional - melted vegan dark chocolate

1. Remove grapes from the stalk and place on a plate with parchment paper.

2. Blend together the peanut butter ingredients. Pour over the grapes. Sprinkle with optional melted dark chocolate and freeze for 4-6 hours.

Enjoy your levelled up frozen grape experience 😘

EASY QUINOA PIZZA πŸ• Vegan, Gluten Free & Low Calorie Density!!

I was absolutely craving pizza, but really wanted to keep it whole foods & fantastic for weight loss! This base is utterly amazing and is pretty darn easy to throw together ✨

Ingredients
1 cup quinoa
1/2 cup water
1/2 tsp garlic powder
1/2 tsp oregano
Pinch of salt

My fave mozzarella:
1 box of silken tofu
1/4 cup nutritional yeast
2 tbsp apple cider vinegar
1 tsp salt
1 clove of garlic
1 tsp onion powder
2 tbsp tapioca starch
1/4 cup water

Plus your fave toppings!

1. Soak quinoa in boiling water for 15 mins (or overnight if you fancy), drain & blend with crust ingredients until smooth. Pour on parchment paper and spread out into a pizza shape.
2. Bake in the oven at 220 Celsius for 15-20 minutes or until firm & golden
3. Pop your toppings on & blast for another 5-10 mins in the oven. And enjoy!

If you are looking for a fun way to get in more veggies then you have to try this one - it’s so simple to throw together and absolutely delish!

I paired it with my low fat super easy vegan & oil free garlic mayo πŸ‘Œ full recipe is in my second meal plan πŸ”— in my bio

Ingredients
1 head of broccoli
1 onion
1 tbsp lemon zest
1/4 cup fresh parsley
Juice of a lemon
1 tsp Dijon mustard
1 clove of garlic
Salt to taste
1/4 cup nutritional yeast
1/2 cup chickpea flour

1. Add your broccoli and onion to a food processor and blitz until fine (you could of course just chop it up super tiny!)

2. Add it to a bowl with the rest of the ingredients and form into patties. Place on a baking sheet and cook for about 15-20 mins or until nice and golden brown (flipping half way through)

Dunk into your weight loss friendly vegan mayo and enjoy!

If, like me, you have a mega sweet tooth and need something sweet after every meal (and you want to lose weight in the process) then this single ingredient sorbet might just hit the spot!

It’s so refreshing and can definitely be made without a ninja creami πŸ”₯

Ingredients
A couple of slices of some nice sweet watermelon
Optional - a squeeze of lime

1. Slice and freeze some watermelon either in your ninja Creami tub or in a Tupperware with a little squeeze of lime juice.

2. If using the ninja then just spit it on sorbet mode 2-3 times until super creamy πŸ‘Œ

3. Or you can add your frozen watermelon directly into your high speedy blender and blitz until you reach that creamy sorbet consistency!

It’s so easy and perfect for summer β˜€οΈ

EPIC PINK STRAWBERRY WAFFLES πŸ§‡ Vegan & Low Calorie Density!!

We went strawberry picking the other day and my kids went overboard, so naturally iv spent the last few days coming up with ways to incorporate more πŸ“ this is my favourite creation so far!

Ingredients
2 cups of strawberries, with the greens on
2 cups oats
2 ripe bananas
2 tbsp chia seeds
1 tsp vanilla
2 tsp baking powder
2 tbsp beetroot powder

Strawberry Jam:
1 cup strawberries
1 tsp maple syrup
2 tbsp chia seeds

1. Blend all the waffle ingredients up and pour it into a pre heated waffle maker for 5-6 mins or until golden brown

2. While you wait, add your other strawberries into a bowl with a splash of maple and heat in a pan or the microwave. Add chia seeds, mash and let it sit for 10mins.

3. Serve with your favourite toppings! I used Greek style soy yogurt, our jam and some more fresh strawberries πŸ“

PESTO PASTA SALAD πŸ”₯ Vegan, Oil Free & Low Calorie Density!!

If you are craving pasta and want to lower the calorie density then give this recipe a try πŸ‘Œ it is packed full of SO many veggies, legumes & the most incredible pesto sauce (that I could basically drink!)

Plus it’s great for a picnic with the family! We stayed the night at a caravan and brought this for lunch πŸ”₯

Ingredients (serves 6-8)
2 heads of broccoli
1 tin of chickpeas
1 large cucumber
4 large tomatoes
1 tin of artichoke hearts
6 cups of cooked pasta

Dressing:
Water from a tin of chickpeas
Juice of 2 lemons
1 clove of garlic
2 bags of basil (2 packed cups)
200g tofu
1/4 cup nutritional yeast
1/3 cup unsweetened plant milk
Salt to taste

1. Sprinkle the broccoli & chickpeas with salt and nutritional yeast and bake in the oven at 180 Celsius for 20-30 mins or until crispy.

2. Chop the veggies up, and add to a Tupperware with cooked pasta. Add in broccoli & chickpeas when ready.

3. Blend up the sauce ingredients until smooth and pour over the top!

Serve with loads of salad leaves and enjoy pasta weight loss style πŸ˜†

CHOCOLATE PUDDING PIE πŸ”₯ Vegan, Whole Foods & Weight Loss Friendly!!

If like me, you LOVE all things chocolate, then you just have to try this simple healthy dessert!

The incredible silky smooth texture and sweetness comes from the magic of plantains πŸ™Œ I get mine at my local Indian shop and it’s safe to say I’m obsessed!

It’s perfect for a special occasion or a bit of tasty meal prep for the week so you always have something sweet on hand for when that sweet tooth strikes πŸ‘Œ

Ingredients (base - I used half the mix)
1 tin of chickpeas
1 cup of oats
6 medjool dates
2 tbsp cacao powder
1 tsp vanilla
Pinch of salt

Filling:
3 large ripe plantain
1 pack of silken tofu
2 tbsp cacao powder
1 tsp vanilla
Pinch of salt

1. Add all your base ingredients to a food processor and blitz until your dough comes together. Press half of it into your fave dish! I rolled the rest into bliss balls πŸ‘Œ

2. Cut a slit down the side of each of your plantains and pop into the microwave together for 10-12 mins or until fully cooked. Add to a blender with the remaining ingredients and blend until smooth and bloomin delicious! This is hands down the best chocolate mousse in the world πŸ™Œ

3. Pour your chocolate filling onto the base and spread it out. Chill in the fridge for 3-4 hours and the texture is perfect πŸ”₯

FATTOUSH SALAD πŸ₯— Vegan, Oil Free & Low Calorie Density!!

If you are getting bored of salads and want something satisfying, with crunch and a super pop of flavour - give this one a try!

I spent a year living in Dubai and had this one daily πŸ”₯but now I’m making it oil free & fantastic for weight loss

Ingredients
1 oil free wrap
Pinch of salt
Squeeze of lemon juice
1 tbsp za’atar spice mix

1 head lettuce
1 large cucumber
2 cups cherry tomatoes
Diced onion (this is the traditional way but I hate raw onion with a passion!)
1/2 cup chopped parsley
1/4 cup chopped mint leaves

Dressing:
Juice of two big fat lemons
1 clove of garlic, minced
Pinch of salt
1 tbsp sumac
2 tbsp za’atar spice mix

1. Rip that oil free wrap into mini chunks and sprinkle with salt, lemon juice and za’atar and pop in the oven for 5-10 mins on 180 Celsius until golden brown and crispy

2. Chop up all the salad bits and pop into a huge bowl. Mix the dressing together and whack it on

HEALTHY VEGAN MAGNUMS πŸ”₯ Low Calorie Density & Made with Hidden Beans & Veggies!!

I was craving some magnums but of course I wanted to make them healthy & weight loss friendly πŸ‘Œ and boy did they hit the spot!

And trust me you cannot taste the beans & cauliflower at all! The chocolate mix is incredible so feel free to eat it with a spoon instead πŸ˜†

Ingredients
1 tin kidney beans, drained
1 cup steamed cauliflower
2 ripe bananas
3 tbsp cacao powder
1 tsp white miso
4 medjool dates

Vegan dark chocolate for coating

1. Blend all the ingredients apart from the dark chocolate until nice and smooth. Pop into ice cream moulds and freeze overnight.

2. Take out and dip in optional melted dark vegan chocolate. For maximum weight loss I would have it without the chocolate coating!

It’s so easy and perfect for summer β˜€οΈ

TWICE BAKED SPINACH & GARLIC POTATOES πŸ₯” Vegan, Oil Free & Amazing for Weight Loss!!

Potatoes are one of the BEST foods for weight loss and they are also the most satisfying food on the planet! So eat those spuds in abundance πŸ”₯

This is one of my favourite potato recipes, it’s packed full of greens & flavour! Plus it’s perfectly paired with my favourite low fat cheese sauce for maximum weight loss (recipe is in my first meal plan πŸ”— in my bio)

Ingredients
3 HUGE potatoes
6 cups of spinach
2 cloves of garlic
1/4 cup nutritional yeast
1/4 cup unsweetened plant milk
Salt to taste

1. Pop scrubbed & salted baked potatoes into some foil & bake them at 180 Celsius for an hour or until soft & fluffy inside.

2. Slice them in half, scoop out the middle (making sure to keep the skins in tact, unlike me!)and mash with plant milk & salt

3. Add in chopped spinach, minced garlic and nutritional yeast and mix well. Pop the mixture back into the potato skins, sprinkle with more nutritional yeast and bake again for 30-40 mins or until golden & crispy πŸ‘Œ

Smother in your favourite low fat vegan cheese sauce and enjoy!

EASY VEGAN PEACH COBBLER πŸ‘ Wholefoods, Oil Free & Low Calorie Density!!

This is one of the most delicious healthy breakfasts I ate to lose 60lbs that actually tastes like dessert - it’s packed with fibre & protein from the beans and is super satisfying!

Ingredients (serves 4)

3 large peaches
1 tbsp lemon juice
1 tbsp maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
2 tbsp cornstarch

Topping:
1 tin of chickpeas
1 cup oats
1 ripe banana
1/2 cup plant milk
3 medjool dates
1 tsp cinnamon
1 tsp vanilla
1 tbsp flax meal
1 tsp baking powder

1. Slice the peaches up and pop them in an oven safe dish. Cover them with your lemon juice, maple syrup, cinnamon, nutmeg and cornstarch- mix well & set aside.

2. Blend all the remaining ingredients until super smooth and pour over the peaches! This mixture is amazing on its own btw πŸ‘Œ

3. Pop it into the oven at 180 Celsius for 25-30 mins or until golden brown on top!

Enjoy with a dollop of vegan yogurt for breakfast, lunch or dinner ❀️

EPIC VEGAN DOUBLE WEIGHT LOSS BURGER πŸ” Oil Free, Wholefoods & Low Calorie Density!!

If you want to lose weight but are craving a healthy vegan burger, then you HAVE to give this absolute banger a try πŸ‘Œ it’s high volume (for those volume eaters like me πŸ™‹β€β™€οΈ) and packed with beans & veggies!

You can batch prep them for the week too AND customise for the whole family with bread buns & toppings of choice πŸ”

Ingredients
Burger:
2 packs of mushrooms
1 large onion
4 cloves of garlic
2 tbsp soy sauce
1 tin kidney beans
1 cups oats
1/2 cup parsley
1/4 cup nutritional yeast
2 tbsp flax meal
1 tbsp apple cider vinegar
1 tbsp white miso
1 tbsp cumin powder
1 tbsp smoked paprika
1 tbsp liquid smoke (optional)
Salt to taste
2 cups cooked millet

To serve:
1 iceberg lettuce
Tomato
Pickles
Low fat high protein vegan mayo (recipe in my 2nd meal plan)
Ketchup
1/4 of an avocado

Chips:
1 potato
Pinch of salt
1 tbsp nutritional yeast
1 tsp smoked paprika

1. Chop mushrooms garlic & onion and sautΓ© with soy sauce for 10 mins to release moisture

2. Add the rest of the burger ingredients (apart from the millet) to a food processor along with the cooked mushrooms & onion and blitz. Add cooked millet and mix by hand

3. Form into burgers and bake at 180 Celsius for 40 mins flipping half way through

4. Slice your spud and sprinkle with salt, nooch & smoked paprika and bake for 20 mins until golden brown πŸ‘Œ

5. To serve slice the sides of an ice burger lettuce to make the β€œbun” and add your mayo, burger, tomato, pickles, ketchup, another burger, avo and top with the other iceberg β€œbun” - serve with chips & enjoy your low calorie healthy vegan burger!

I know a wrap made out of potatoes sounds crazy, but trust me it totally works πŸ”₯ Potatoes are one of the best weight loss foods on the planet & so darn satisfying!

Fill it with all your favourites, but I am a sucker for tofu tikka every single time ✨

Ingredients
2 medium potatoes, sliced & soaked
2 tbsp chickpea flour
2-3 tbsp water
Salt to taste
Nutritional yeast

Tofu tikka:
1/4 of a block of extra firm tofu (frozen & defrosted for amazing texture)
2 tbsp vegan soy yogurt
1 tsp cumin powder
1 tsp coriander powder
1/4 tsp turmeric
1/2 a lemon juiced
Pinch of salt

Indian inspired sauce:
2 tbsp vegan soy yogurt
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 a lemon juiced
Pinch of salt

Extras:
Lettuce
Cucumber
Tomato

1. Slice your potatoes nice and thin. You could use a mandolin if you wanna be fancy! Soak in cold water to rinse off the extra starch. Pat dry and lay on parchment paper so they are slightly overlapping and make a wrap shape.

2. Mix chickpea flour, water and salt and pour over the potatoes. Sprinkle with nutritional yeast and pop into the oven for 20-25 mins at 180 Celsius or until cooked & golden brown but not too crispy.

3. Tear your tofu apart and add in the yogurt, spices, lemon juice & salt. Mix well and oven or air fry for 20 mins or until crispy.

4. Mix your sauce ingredients and then it’s time to put your wrap together with your favourite fillings πŸ‘Œ

This is my lazy instant dosa πŸ”₯

I grew up in India and we used to get dosa every weekend- but this time it’s oil free & low calorie density! Btw I have a giant oil free Indian cook book for weight loss that has over 90 recipes πŸ”— in my bio

Dosa mix is usually fermented, but I wanted you guys to enjoy the flavours without the hassle! And if I do say so myself, iv nailed it πŸ‘Œalso, feel free to switch the grain & lentil up with what you have on hand - a mix of quinoa and red lentils would work well!

Ingredients
1/2 cup basmati rice
1/2 cup urad dal
1.5 cups of water
Pinch of salt
1 tsp baking powder

Veggie mix:
1/3 of a white cabbage
1 large carrot
3 small potatoes
1/4 tsp turmeric
2 cloves of garlic (I used frozen)
Pinch of salt
Splash of water
1 tsp cumin seeds
1 tsp mustard seeds

Simple dhal:
1/2 cup red lentils
2 cups water
2 cloves of garlic (I used frozen)
1/4 tsp turmeric
Pinch of salt
1 tsp cumin seeds
1 tsp mustard seeds

1. Soak rice & lentils in water for 15mins. Drain, rinse & add to a blender with the remaining ingredients. Blitz until smooth.
2. Chop your cabbage, carrot and potato up and water sautee with garlic, turmeric, salt until the potatoes are soft.
3. Add all the dhal ingredients to a pot and cook on medium for 20-25 mins.
4. Dry fry the cumin and mustard seeds for 1-2 mins until fragrant. Add to both dishes.
5. Add 1/3 cup of your dosa mix to a non stick pan and use the back of a ladle to spread it out into a large circle. Cook for 1min until it starts to brown and then flip for another 30 seconds.
6. Add your veggie mix to the middle of the dosa and dunk in your dhal.
7. Make sure to use your hands - it’s tradition πŸ™Œ

LOW CALORIE GRANOLA STUFFED APPLES 🍎 Vegan, Oil Free & Weight Loss!

I know I shared an apple pie recipe recently, but here is my lazy version I make in a pinch - and it’s equally delicious!

If you have a sweet tooth, you can totally have this for breakfast, lunch or dinner and still lose weight & get healthy! Or just have one as a snack πŸ”₯

Switch it up and use pears or peaches if you want!

Ingredients
2 apples
1/2 ripe banana
1/2 cup oats
1/4 tsp cinnamon

Extras:
Vegan unsweetened yogurt
Cinnamon
1 tsp maple syrup

1. Slice your apples in half and using a melon baller scoop out the core, leaving half an inch of apple at the bottom.
2. Mash together the remaining ingredients to form your granola and scoop equal parts into your apples.
3 pop into the oven at 180 Celsius for 15-20 minutes or until golden brown and the apples and soft.
4. Top with vegan yogurt, cinnamon and a splash of maple if desired!
