500g mutton, cut into medium pieces
2 large onions, finely sliced
2 tomatoes, chopped
2 tablespoons ginger-garlic paste
2-3 green chilies, slit
1 cup yogurt
1/4 cup oil or ghee
1 teaspoon cumin seeds
2-3 cloves
2-3 cardamom pods
1 bay leaf
1-inch cinnamon stick
1 teaspoon turmeric powder
1 tablespoon red chili powder
1 teaspoon coriander powder
1 teaspoon garam masala
1 tablespoon meat masala (optional)
Fresh coriander leaves for garnish
Salt to taste
Instructions:
1. Marinate the Mutton:
In a bowl, mix mutton with yogurt, turmeric, chili powder, and salt. Marinate for at least 1 hour (overnight for best results).
2. Prepare the Masala:
Heat oil or ghee in a large pan or pressure cooker. Add cumin seeds, cloves, cardamom, bay leaf, and cinnamon. Sauté for a few seconds until aromatic.
3. Cook the Onions:
Add sliced onions and sauté until golden brown.
4. Add Ginger-Garlic and Tomatoes:
Stir in the ginger-garlic paste and cook until the raw smell disappears. Add chopped tomatoes and cook until soft and oil separates.
5. Spice it Up:
Add coriander powder, meat masala (if using), and more chili powder if desired. Cook for a minute.
6. Add Mutton:
Mix in the marinated mutton. Cook on medium heat for 8-10 minutes, stirring occasionally.
7. Add Water and Cook:
Add 1-1.5 cups of water. If using a pressure cooker, cook for 4-5 whistles or until tender. For slow cooking, cover and simmer for 45-60 minutes, stirring occasionally.
8. Final Touch:
Sprinkle garam masala, adjust salt, and cook for another 5 minutes.
9. Garnish and Serve:
Garnish with fresh coriander leaves. Serve hot with steamed rice, naan, or roti.
Enjoy your delicious mutton curry!
