Red Dead Redemption 2 took a significant step forward in hair growth simulation. Arthur Morgan's hair, as well as that of other characters, grows over time, with noticeable changes in length and style. The game's advanced simulation system also allows for more realistic hair behavior, such as responding to weather conditions and character movements.

With the upcoming release of Grand Theft Auto 6 we could see more evolution like
Dynamic hair growth, Characters hair could grow and change in response to their lifestyle, environment, and story progression.
Hair could react more realistically to environmental factors, such as wind, water, and gravity.
We might have more control over their characters' hairstyles, including the ability to customize growth rates, styles, and textures.
Integration with other game mechanics could see hair growth be tied to other game systems, such as character health, hygiene, or social interactions.
