Whilst we cannot necessarily “boost” our immune system, we can take the right steps to support it with the right nutrients and lifestyle changes. This recipe is a great example of the right nutrients combined in a delicious way.

Lentil & Mushroom Stew
Serves: 4–6�
Ingredients
* 1 tbsp extra virgin olive oil
* 1 medium onion (approx. 150g), finely chopped
* 2 carrots (approx. 150g total), peeled and diced
* 2 sticks celery (approx. 80g), finely sliced
* 3 cloves garlic, finely chopped or crushed
* 2 tsp fresh ginger, grated (approx. 10g)
* 1 tsp ground turmeric (or 2 tsp freshly grated turmeric root)
* 200g mushrooms (e.g. shiitake, chestnut, or a mix), sliced
* 150g dried red lentils (rinsed well)
* 1.2 litres vegetable stock (low-salt if possible)
* 1 tsp dried thyme (or 1 tbsp fresh thyme leaves)
* 1 tsp sea salt (adjust to taste)
* ½ tsp freshly ground black pepper
* 100g kale or spinach, chopped (or a mix)
* Juice of ½ lemon (optional, for a vitamin C boost)

Why These Ingredients?

Lentils (Plant-Based Protein & Fibre): Rich in protein, iron, and various micronutrients that support immune function and overall health. Lentils also provide prebiotic fibre to help nourish beneficial gut bacteria.
Mushrooms (Beta-Glucans): Varieties like shiitake, reishi, or chestnut mushrooms contain beta-glucans, which have immune-modulating effects.
Garlic (Allicin): Known for its antimicrobial and immune-enhancing properties, thanks to the compound allicin.
Ginger (Gingerols): Provides anti-inflammatory and antioxidant benefits that may help boost immunity.
Turmeric (Curcumin): Contains curcumin, studied for its anti-inflammatory and immune-balancing effects.
Leafy Greens (Antioxidants & Micronutrients): Kale or spinach is high in vitamins A, C, K, and many minerals essential for immune health.

Method
Warm 1 tablespoon of olive oil in a large saucepan or soup pot over medium heat.

Add the onion, carrot, and celery. Sauté for 5–6 minutes, stirring occasionally, until they begin to soften and take on a little colour.

Stir in the garlic, ginger, and turmeric (fresh or ground). Cook for about 1 minute, being careful not to let them burn.

Increase the heat slightly and add the sliced mushrooms. Cook for 2–3 minutes, stirring occasionally, until the mushrooms begin to soften.Add the rinsed lentils to the pot and stir well.

Carefully pour in the vegetable stock. Add the thyme, salt, and black pepper.

Bring the stew to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the lentils are tender.

Stir in the chopped kale or spinach. Simmer for an additional 3–5 minutes, just until the greens wilt and are vibrant.

Taste the stew and adjust salt and pepper if needed.

❌ Blue Monday Ban ❌

How many times have you heard ‘it’s Blue Monday’ today in the media? I would never have known it was ‘Blue Monday’ if I hadn’t heard it on the TV and radio today.

I’m such a believer in a positive mind = positive life. The media are planting negativity, depression, anxiety and sadness into our day (week) by pushing this concept on us, that today is the most depressing day of the year.

Let’s turn it around and call it ‘Pink Monday’. 💕 Let’s celebrate every little win, every dream, and feel abounding gratitude for all the positives in our lives. I’m not saying that everything has to be perfect and amazing, but focusing on the good stuff certainly makes a huge difference to my day.

I heard a great idea on today with and ….They suggested adding ‘but luckily….’ at the end of every bad scenario or negative situation. So, that there’s always a positive ending to every negative conversation. For example, I have another corneal ulcer on my eye (I know - I’ve done it again! 😢)…..’but luckily’ I was seen quickly by the incredible NHS in eye casualty and I’m on the mend with antibiotics ❤️‍🩹

Happy new year!!! Kicking off the new year in style. One of my absolute favourite ways to cook eggs - a good old shakshuka with a bit of feta cheese, plus spinach and chickpeas for a fibre hit.
🧅 Saute one red onion and a couple of cloves of garlic until soft.
🫑 Add quarter of a red pepper deseeded and saute for another 5 minutes or so.
🍅 add 400g of roughly chopped fresh tomatoes, and 1 tin of chopped tomatoes and simmer down until they form a thick chunky sauce.
🥬 Add 2 handfuls of baby spinach and allow to wilt.
🫛 Finally add 200g chickpeas - drained.
🍳 make a couple of wells in the sauce and crack an egg into each one. Cover pan with a lod and gently simmer until the egg has cooked.
🧀 crumble over some feta and serve.
This gives you:
🥑 Lycopene (antioxidant).
🥑 Beta carotene (antioxidant)
🥑 Choline (essential for brain health)
🥑 Healthy fats.
🥑 Highly useable protein.
