Not only were folk tales the basis for every novel structure to exist, but they were also the occasion for people to pass down knowledge at a time when writing was unaccessible. We all know and love them (even if they have been somewhat modified), so what's your favourite fairy tale? 🧚♂️

✨Meet the Author✨
Mrs Champa Bakshi moved to Glasgow from Kenya in 1962. In Cooking Tales, she has contributed recipes for dishes like Potato Peas Sabzi and Kada – Sheera (a dish of sweet roasted semolina).🍽
Due to the shortage of Asian shops in her locality, her recipes are simple and based on tinned vegetables like corn, peas, and tomatoes or fresh vegetables like carrots, cauliflower, and cabbage. 🌽🍅🥕
One of Mrs Bakshi's savoury dishes – Potato Peas Sabzi – uses only potato, peas, tomatoes, onions and some basic spices like turmeric, chilli powder, and garam masala.🥔🧅
Mrs Bakshi also uses Ghee for her sweet dishes, available relatively easily. However, due to financial constraints or unavailability of ingredients, she had to limit her elaborate sweets such as Rasmalai or Gulab Jamuns. Now that Asian stores are available easily, she cooks more elaborate Asian meals!😋

On National Herbs and Spices Day, let us delve into how immigrants sourced their spices and ingredients. ✨💃
Did you know that spices and herbs used in South Asian cooking were not easily available in the UK till the 1990s? 🍳
Spices were also expensive and hard to find. 🌿🫚 In such difficult conditions, there were only a few ways to source spices and herbs. Alternatively, people adjusted their recipes to include easily available ingredients like rosemary and thyme. 🤩🌿

Parrot Trust Scotland is a registered charity run entirely by volunteers, and is dedicated to improving the welfare and wellbeing of parrots using compassion, education, rehabilitation, support and protection.
The longevity and complexity of these intelligent animals can sadly lead to parrots being rehomed multiple times during their lifetime. Through provision of education and behavioural advice, the Trust assist owners to understand the challenges of keeping parrots and encourage them to consider the potential problems from a parrot's viewpoint.
Where required, regardless of reason or circumstance, their rehoming and adoption programme finds new loving homes for parrots. The charity works with other animal charities and community interest companies nationally and internationally to develop knowledge and forge support networks, therefore improving the lives and happiness of parrots worldwide. 👏
We cannot wait to see some of those adorable birds on our page 🪶

If not, here are tips and suggestions to use clove in your Indian cooking or desserts like Pumpkin Pie. 🥧 Cloves are very earthy and warm, and you can also use them to treat cough and cold. 🤧 Remember to not add too much in cooking or else you will overpower the subtler tastes❗️
Cloves have been extensively used in Indian curries, lentils or rice while boiling to add warmth to the food! 🔥

Mia is a top tier older sister, a ruthless napper, and an all-star WWE wrestler (within her family). 💪
She likes to watch scary movies before bed (whatever floats your boat I guess), doesn’t like unexpected food textures, and is sure she will wither away if she doesn’t see her friends regularly. 🥀
Following on from her English and Creative Writing Batchelors, Mia has recently graduated from Manchester Met University with her Masters in Publishing. Joining Jasami as a social media intern, this is her first role in the industry. She is excited to gain industry knowledge and can’t wait to put her creative skills to the test. When she’s not reading or writing, you’ll find her fitness training, in a yoga class or convincing her friends to go on adventures.🏋️♀️🧘♀️

In this week's Spice Tips, we bring to you the OG Indian spice mix - ✨Garam Masala!✨
Garam Masala is a blend of roasted spices like pepper, cardamom, cloves, bay leaf, fennel seeds, star anise, and many others. 🧂 It is the most diverse spice mix, and you can make your own blend by roasting and grinding these spices together! 🤗
Garam Masala is rooted in the Indian culinary tradition. It can be found in a range of Indian dishes like Chana Masala, Samosa, and Chicken Butter Masala. 🥘
Garam Masala has also been used in some dishes like Brown Chickpea Kofta and Saag with Turnip Tops, found exclusively in our upcoming early Autumn release, Cooking Tales! 🤫

Brij Gandhi arrived in Scotland in 1974. She is of Indian origin but was brought up in Kenya! 🇰🇪 This is why Kenya's ingredients and cooking methods influence much of her cooking. 🍲
In Cooking Tales, Brij Gandhi has contributed dishes made of Yam, a root vegetable typical of Kenya and a popular ingredient in its cooking. 🍠
While Yam is often not accepted in typical South Asian palates, Brij Gandhi came up with innovative recipes made of Yam and with Indian taste, including dishes like halwa (a sweet Indian dessert) and chips 🍨
