Spicy or NOT Spicy…?! How do you take it?

Seems everywhere I go at the moment, people stop me to talk about Margaritas! Seems to be Team Spicy and Team Not. Now I dunno which side of the fence I sit on, cos I’m not hugely keen on a “plain” Spicy Margarita. BUT. Give me a Spicy Mango, Spicy Guava, or a Spicy Watermelon and …WOW 👀

In a recent YouTube video I showcased some Margarita inspiration using Lime, obvs some Fruit…and very obvs, the Doc Fire which are INSANE 🔥🔥🔥

From that video, the recipe with the biggest reception was the Caramelised Peach!

My challenge to YOU… what Cocktails would you make with new Watermelon Puree?!

I had great fun on my first outing with this flavour which is exclusive to until 31st Dec 2024. None of these cocktails are as plain as you’d think, for example the Daiquiri has Tiki flavours with Tiki Bitters. The Marg uses Doc Fire and Chilli. The Mule uses Basil (Basil and Watermelon btw 🤩).

Next up in my Hen Party series was this lovely lot! It’s rarely ever the Hen that books me, but for some reason, my memory is thinking Iona…??! 🫣 Soz if I made that up!

Now I can’t do a venue review…cos this was one of their Private Houses. Of course I can visit private houses to do Masterclasses, it just happens very rarely. Maybe half a dozen a year.

Should you be worried about hosting at home…?!

Well not really. Not that it’s never happened, but stuff rarely ever gets spilt on the floor. And if you don’t have a standard wipe clean table, then I do always carry Waterproof covers.

The big issues I have though in Private Houses, is simply space. Because they’re not party houses they’re obviously a fraction of the size and rarely ever have a Dinner Table that can fit 10-12 around it.

The other issue is the Kitchen Sink. Again, if I go to party houses, i’m normally blessed with a big Double Sink, or more often than not, a completely separate utility sink and drainer that doesn’t interfere with a kitchen.

So if you are thinking about hosting at home. Please do consider the space and kitchen. We can always make it work. Of course we can. But I guarantee, we’ll always need more space than you think 😇😂

Side Note; if you’re thinking your Garden…then deploy the golden rule for outdoor Events! ALWAYS ALWAYS ALWAYS plan for a Wet Weather event, that way if it’s nice, added Bonus! (Oh and be prepped for Wasps…they love my Syrups and Purees 🐝)

Alls I’ll say, we deffo made this work! This was out near Sandy, near the Beds/Cambs border!

12 days after vowing to upload regular Hen Party Cocktail Masterclass stuff, I finally get round to uploading my second post! 😇🫣😂

Anyway. This is another Hen Party. Or as they called it, a “Fox Party”. Yeah that was a new one to me as well.

But this was another visit to which another spectacular venue in my area. It’s over at Thorndon (which is Suffolk, despite Insta thinking it’s 6/7 miles further north in Norfolk.

Now yes, MFB is a smaller venue. It sleeps x10. But the trend I’ve certainly seen in the last 18 months is for smaller Hen Parties. It’s very rare I get any enquiries over 12 these days. I’d call it a more Traditional style of house. Loads of Wood Beams for example. And the polar oppo to my stories from Friday just gone) But the facilities are top notch. Even a Hot Tub (which in 2024 is pretty standard…if your Hen Venue hasn’t got a Hot Tub, there’s something wrong somewhere! I visit some venues with 3!) And the kitchen is fantastic too!

If you’re looking for somewhere in the heart of East Anglia. Trust me, this is a solid shout. One day I will get round to publishing my top 25 Hen Party Houses in the East. I deffo think this makes it. But as I cover Norfolk, Suffolk, Essex, Cambs, Beds and on the odd occasions, Bucks & Herts, the competition is big. I’ll get it done over the summer 🫣…aka 2025! 😂

Am I a Mixologist...?! Cue banter in some corners! 😇

It’s a question I get a lot. Mixologist is a term branded around all too often.
And while there is no legal definition. I think many of us deep in the industry, understand what the term really means.

The short answer; NOPE, I’m NOT!

I’ve never claimed to be.
I don’t want to be.
I don’t think I have the skills to be one.
Even if I had the time to be one.

If I’m not a Mixo, what am I?

Quite simply...
I’m a COCKTAIL BARTENDER.

Now, without wishing to upset some Bartenders...

There are very few Mixologists in the UK.
Like PROPER Mixologists.
90% of Bartenders calling themselves Mixo’s, are just Bartenders.
I’m sorry, but it’s true.

It’s like a Sous/Commis Chef claiming to be a Michelin Star Chef.

SO WHAT IS A MIXOLOGIST...?

The most concise definition I can give is, a Mixo is someone who REALLY understands flavour & balance, but has that passion to continually push the boundaries, using new techniques, new equipment, new flavours, new ingredients. A forward thinker, creating BRAND NEW DRINKS.

If you’re simply adding Monin Salted Caramel to an Espresso Martini.
YOU’RE NOT A MIXOLOGIST!

If you’re using Whitley Neill Gooseberry Gin in a Bramble.
SORRY, but you’re not a Mixologist!

However, if you’re in the kitchen, Sous Viding god knows what, using weird an wacky salts, and creating your own Caramel with a super posh Sugar and creating your own Salted Caramel... maybe even making your own Coffee Liqueur, by infusing left over grounds from your Coffee Machine. Maybe even infusing a those Coffee Grounds to make your own home infused Espresso Vodka...
..THEN YES, You can call yourself a Mixologist.

But if you’re just following Recipes. You’re a BARTENDER.

Now, I absolutely love what Mixologists are doing. I look on in awe. Our Industry needs them. And they should be rightly applauded. In fact, why it’s not a bigger deal on TV, like Masterchef, I don’t know.

But at the same time, Bartenders should be BE PROUD to be a “Bartender”.
Cos at the end of the day, we’re still highly skilled at what we do. And we put great big smiles on customers faces! And that is the be all and end all of Hospitality!

Here’s a flashback to one of my first events of 2024. Over at the Stowlangtoft Estate. This particular venue is a hall attached to the estate. Perfect for larger groups. Can’t comment on the actual accommodation as it’s separate to the hall, but if it’s anything like the rest of the properties on the other part of the estate up the road, then it’ll be great!

45ml Coconut Puree
15ml Coconut Milk
90ml Mango

More Cocktail Masterclass reflection from 2023! As I said previously, I don't post much about these, but in truth, they're still a big part of what I do! 1200+ Hen Parties and Counting. Plenty of Birthdays and Summer & Crimbo Corporate shenanigans! I don't take them every weekend these days, I do still give myself at least 1 weekend off a month.

I did decide after Covid that I'd retire from it all, but after 6 months, I realised I REALLY missed them. Don't get me wrong, I love the YouTube world and whole Online thing. But it can be very isolating. And I just craved that fun and no holds barred banter that only Cocktail Masterclasses can deliver.

After a quick count up, 2023 saw 43 Events in all. Which is a long way off the 120+ I used to do pre Covid. But thats a nice level for me. Still gives me time to Create and Edit Videos. But doesn't mean I spend half my weekend washing up either! 😁

Obviously word has spread that I'm back, as 2023 saw 17 repeat clients from Pre-Covid times. Mainly Hens from previous Hen Parties. But a few Corporates and 2 Birthdays too!

These are just some of the people who got the StB Treatment in 2023.

And on that, Bookings are already flooding in for 2024!
At the time of writing, March, May and June are already fully booked and have been for a few months now.
July is almost there. And January kinda is, although, I am giving myself the first 2 weekends off!

If you are interested in something for 2024, the Enquiry form is linked in my profile. But be warned, as like September, as soon as the kids go back to school, it's open season for enquiries. It always is! It was pre-covid and it was at the start of 2023. By the end of January, it's safe to say I should be booked solid up until the end of August.

Originally a week at Easter. That after planning, turned into 2, then a month. NOW…well I know I can go till the end of August, easily.

So what do I want?!

YOU.

Quite simply, if anyone wants to be featured. If anyone wants to do a “Zoom Chat” video. If anyone wants to help educate. If anyone has educational stuff they can send me. Just slide into my DMs.
