King Prawns Masala with Coconut.
Ingredients-
For the marinade:
King Prawns - 2kg
Malabar Tamarind - 1
Turmeric Powder - 1/2 tsp
Chopped Ginger - 1 tbsp
Green Chillies - 3-4 (depending on your tolerance level)
Salt as required
For Masala:
Thinly sliced white onions - 4
Chopped Ginger - 1 tsp
Slit Green chillies - 2
Turmeric Powder - 1/4 tsp
Hot Chilli Powder - 1/2 tbsp
Kashmiri Chilli Powder - 1 tbsp
Coconut slices - 1 cup
Salt as required
Curry leaves
First off deshell and devein the King Prawns, wash and set it aside.
Marinate Prawns using Turmeric Powder, Ginger, Green chillies, Malabar Tamarind and Salt.
Cook the prawns until all the water is evaporated and turns colour.
In a pan add coconut oil followed by Sliced onions, Chopped Ginger and Slit Green Chillies.
Add Turmeric powder, Hot chilli powder, Kashmiri Chilli Powder and saute everything together
At this point, add your semi-cooked prawns into the masala mix and incorporate everything well
Add Coconut slices and mix everythinh really
Finish using a dash of water until the onions are fully dissolved through.
Serve hot

Extra Crispy Fish (Tuna) Cutlets. Hear the crunch for yourself.
Filling Ingredients
- Canned Tuna x2
- 3 medium sized chopped onions
- Green chillies
- Ginger
- Garlic
- Curry leaves
- Turmeric powder
- Coriander powder
- Chilli powder
- Black pepper powder
- Garam Masala powder
- 4 medium sized potatoes
- Coconut oil
- Salt
- Oil for frying
Breading
- Eggs
- Golden breadcrumbs
- Panco breadcrumbs
Method:
* In a pan, add coconut oil, chopped onions, ginger, garlic, green chillies and curry leaves- Saute until soft.
* Add all the spice powders, saute for 2-3 mins or until the spices are cooked thoroughly
* Add tuna to the masala mixture and mix everything well. Note if you’re using tuna in brine - careful not to add too much salt separately.
* Let it cool down before adding boiled and mashed potatoes and mix it well.
* Shape the cutlets using a spoon to form oval shape or shape it your preference.
* Set up a breading station with egg wash, normal breadcrumbs and panco breadcrumbs.
* Dip in egg wash followed by normal breadcrumbs, then back to egg wash followed by panco breadcrumbs. This ensures that cutlets come out nice and crispy
* Serve with onion salad and Maggi hot and sweet ketchup

Salmon Tail with Shallots Masala
Salmon is one of the most versatile fish ever to exist. It is so flavourful on its own and can gloriously hold up all the flavours added onto it. This recipe truly has a play of textures; where the outside is slightly crispy yet the inside remains so juicy and tender. Shallots adds a mild sweetness which is so beautifully balanced out by the spices, tomatoes and tamarind. I always believe a good plate of food comes together when you balance all the flavours and this recipe does exactly that.
Oh it was a delight to devour.
Ingredients-
For the marinade:
- 1 tbsp Ginger
- 1 tbsp Garlic
- 1/2 tbsp Turmeric Powder
- 1 tsp Hot Chilli Powder
- 2 tbsp Kashmiri Chilli Powder
- 1 tbsp Black Pepper Powder
- Lemon juice
- Salt as required
For the shallots masala:
- Shallots
- Chopped up tomatoes
- Rest of the fish marinade
- Garlic & Fennel seeds crushed
- Black Pepper Powder
- Tamarind
- Salt
- Cocunut oil
- Curry Leaves
Method:
* Blend all the ingredients for the marinade and generously smother it all over Salmon.
* Let it rest for 15 mins.
* In a pan add coconut oil, followed by a sprig of curry leaf. Let the curry leaf infuse in the coconut oil.
* Shallow fry Salmon in Curry Leaf infused Coconut oil. Set aside.
* In a pan add 1tsp of coconut oil, add crushed shallots, chopped tomatoes, crushed fennel seeds and garlic, black pepper powder, left over marinade and tamarind water.
* Saute until spices are cooked thoroughly.
* Add the fish in steam for another 5/6 minutes.
* Serve hot alongside pickled onions and wedges of lemon.

One pot Creamy Chicken curry - Perfect Comfort Food for Lazy days
⁃ 1kg Chicken Thighs
⁃ 3 medium sized Onions
⁃ 3 medium Tomatoes
⁃ 1 tsp of Turmeric powder
⁃ 2 tbsp Coriander Powder
⁃ 2 tbsp Kashmiri Chilli Powder
⁃ 1 tbsp Hot Chilli Powder
⁃ 1 tbsp of Garam Masala
⁃ 2 tbsp of Black Pepper Powder
⁃ 2 tbsp Coconut Oil
⁃ 1 cup of thick Coconut Milk
⁃ 2 Bay leaves (optional)
⁃ Salt as requires
In a pan, add all your ingredients except for coconut milk and black pepper powder. Don’t add water, let it cook in its juice.
Give everything a good mix and cook until the chicken peices are tender.
Add in thick coconut milk, bay leaves and black pepper powder.
Serve with Rice or Roti.

Easy Unniyappams / Easy Banana fritters
3 overly riped bananas
3 riped banans
3 x 1/4 cup of plain flour
1/4 cup of self raising flour
1/4 cup dessicated coconut
1 tea spoon of cardamom powder
1 cup of water
1/2 cup milk
1 whole Jaggery - use as required
Pinch of salt
In a pan melt jaggery with cardamom pods and 1 cup of water. Let it cool.
Now take a handful of cardamom pods, grind it and put it through a sieve. Set it aside.
3 overly riped bananas and a ripe banana goes into the blender with melted jaggery.
Blend until smooth.
Now add three 1/4 cups of plain flour with 1/4 cup of self raising flour and 1/2 tsp of salt.
Mix everything well. If the batter is too thick, add a splash of milk and mix well to get the perfect consistency for unniyappams. The batter should neither be thick nor watery.
In goes 1/2 cup of Dessicated coconut and roughly chopped bananas. Coconut adds a great crunch and the bananas makes the inside of the unniyappams so gooey. (Optional)
In your unniyappam chatti, heat up some oil, and start pouring the batter in clockwise wise direction. Flip on either sides until golden brown.
Serve with a dusting of icing sugar.

Spicy Crab Masala with Toasted Coconut.
- 4 medium sized crabs
- Handful of shallots crushed
- 4 medium sized onions thinly sliced
- 3 medium sized ripe tomatoes chopped
- 2 tbsp of coconut oil
- 1/2 tbsp Turmeric Powder
- 1 tbsp Coriander Powder
- 2 tbsp Kashmiri chilli powder
- 1 tbsp of Garam Masala
- 1/2 cup grated coconut
- 5-6 whole shallots
- 1 tbsp of Fennel powder
- 5 tbsp of Black Pepper Powder
- 2 tbsp crushed Ginger &Garlic
- Half lemon
- Salt as required
- Coriander leaves
- Curry leaves
First off clean and wash your crab and set aside.
In a pan add coconut oil, followed by shallots, thinly sliced onions and salt. Saute for 3 mins.
Add turmeric powder, coriander powder, Kashmiri red chilli powder, ginger garlic paste, chopped tomatoes, black pepper powder and a splash of water. Cook the spices thouroughly.
Currly leaves goes in, followed by cleaned and washed crabs and a splash of water.
Mix everything together. Cook for no longer than 5 minutes.
In a pan add coconut oil; grated coconut with curry leaves, keep sauteing till aromatic and nice brown color.
Once brown add small onions/shallots, garlic cloves, fennel, garam masala and black pepper. Grind the mixture until smooth with a splash of hot water
Add the toasted coconut paste to the curry and mix well.
Add a squeeze of whole lemon juice and bunch of coriander leaves to the curry and mix everything together.
Cook for another 2 mins.
Serve hot!

One pan chicken Stew
1 kg of chicken thighs cut into bite sized pieces.
Whole spices of -
⁃ 3-4 cardamom pods
⁃ Handful of black peppercorns
⁃ Cinnamon sticks
⁃ Fennel seeds
⁃ Cinnamon leaves
1 medium sized onion thinly sliced
Salt as required
Green chillies
Thin coconut milk
Thick coconut milk
Garam masala powder
Black pepper powder
Curry leaves
• In a pan add coconut oil, fennel seeds, cardamom pods, cinnamon stick, whole black pepercorns and bay leaves. Let it sizzleeee.
• Here I am adding thinly sliced onions with salt and slit green chilly. Sauté until it’s soft.
• Chicken cut into bite size pieces goes in, gently sear the chicken all over.
• Add in the thin coconut milk and bring it to a boil.
• Once chicken is cooked half way through, add potatoes and carrots.
• Green peas and green beans would have been a great addition too.
• Simmer until everything is cooked.
• Finish off with thick coconut milk, black pepper powder and garam masala.

Egg Puffs
Ingredients:
- 3 hard boiled eggs
- 5 medium sized onions thinly sliced
- 1 medium tomato chopped
- 1 tea spoon of ginger garlic paste
- 1/2 tbsp of turmeric powder
- 2 tbsp of coriander powder
- 1 tbsp of Kashmiri chilli powder
- 1/2 tbsp of Garam masala powder
- 1 tbsp of ketchup
- Salt as required
- Readymade puff pastry sheet
In a pan add eggs and cold water. Bring to a rolling boil for 10 mins and let it rest for 5 mins.
Filling:
In a pan add coconut oil, thinly sliced onions, salt and sauté.
Add Turmeric powder, Coriander powder, Kashmiri chilli powder, ginger garlic paste, chopped up tomatoes and Garam masala powder.
Add 1 tbsp of ketchup and hot water to the masala mix. Simmer until spices are cooked thoroughly and water is fully evaporated. (This is optional. You can omit ketchup, but for me it helps balance out all the flavours. As for the addition of water, you are welcome to cook the masala with oil if you prefer)
Add curry leaves and let it cool.
Pastry:
Split the pastry into 6 even slices.
Fill each one with 1tbsp of masala, top it off with half slice of boiled eggs and seal.
Apply egg wash generously.
Bake:
Bake at 180c for 20 - 30 mins or until golden brown on the outside.

Crispy Mussels with Black Pepper
Ingredients -
500 gm of Cleaned and washed Mussels
1 tbsp of chopped ginger
1/4 tbsp Turmeric powder
1/2 tbsp Kashmiri chilli powder
2 tbsp Black pepper powder
4 cloves of crushed Garlic
1 pinch of crushed fennel seeds
Coconut oil
Salt as required
Curry leaves
Method
Marinate Mussels using chopped ginger, salt, Turmeric and Kashmiri chilli powder.
Transfer to a hot pan, and cook until water evaporates.
Add coconut oil and coarsely crushed black peppercorn. Mix until everything is well combined.
When done, add crushed garlic and fennel seeds. Fry it until desired crispiness is achieved.
Garnish with curry leaves and Serve with lime and chopped onions for extra crunch.
