Ok- let’s get a little technical here. When humans are exposed to chemicals released by trees known as phytoncides, research has shown results such as reduced blood pressure, reduced anxiety , increased pain threshold and better concentration and mood.

Note that the term “tree hugger” originated from a group of approximately 350 members of a branch of Hinduism who died in 1730 while trying to protect their villages trees from being destroyed by soldiers seeking raw materials for a new palace. Love to them for their efforts and example of passionate protection.

This jelly is as much about the relationship with the Poke plant as it is about the jelly itself.
Reconnecting with knowledge and replacing fear. Let our wilder selves back out of the cage and meet our neighbors in nature as the friends they are.
Truly Southern Recipe (which means nothing is specific 😂😂)
Note there are lots of jelly and jam recipes online. Just add 6oz of poke juice to any of those and you have some yummy poke berry jelly.
Poke berry jelly:
5 cups fresh muscadine (or apple) juice
6oz poke juice
1/2 lemon juiced
5 cups sugar
1.75oz packet of SureJell
8-10 8oz mason jars
Big pot for boiling jelly and big pot for sterilizing jars
1) sterilize your jars which basically means boil the jars and lids for a few minutes then put them on a clean surface to receive the jelly
2) juice the poke berries. Remove the berries from about 8 stem clumps. Put berries in a jar of 2oz water. Smash berries until liquid is deep purple. Strain this into another jar with a fine strainer to assure all seeds are out of juice. Add enough water to strained juice to make 6oz.
3) mix muscadine (or apple) juice, lemon juice and poke juice and bring to a boil in a large pot. Once boiling, let boil for 1 minute stirring well.
4)add SureJell and stir until fully dissolved.
5) slowly add in sugar and stir for 2 minutes
6) Lower temp and start testing to see if jelly will set. Use a metal spoon and dip it into the mixture. If it sheets on the spoon and doesn’t immediate pour off, you’re good. If not, add a little more pectin or boil down for longer stirring well.
7) once ready, put your jelly into each jar. Leave 1/4 inch of space at the top. Wipe the rim of the jar after putting jelly in to assure a good seal. Place lids on jar immediately after filling. Nice and tight.
8) once all jars are filled, put the jars in a hot water bath (put the jars in a large pot of boiling water for 5-10 minutes). You’ll need a special tool for this. It’s a cool little grabber cal
