My name is Elinor Hill, aka "Beach Hut Cook". I am lucky enough to live by the sea, and I spend a ridiculous amount of time there in our beach hut. I love cooking simple and tasty food for my family, often down the hut or carefully transported to it. There is nothing better than a feast by the sea with the odd cocktail or two thrown in. For me: it’s as good as it gets.

Beach hut breakfast. We took a few days off to extend the early May bank holiday weekend and it was just what we needed. We all need to slow the pace down every so often don’t we.
So stripe on stripe has begun at the beach hut this year. Every year I always think I should go muted and all white but then I hear my inner child (she swears) say oh stuff it and cartwheel in with pattern-on-pattern, technicolour overload. My inner child is having a ball this year and I can’t wait for her to stay a while. I’ve missed her. Lockdown has been far too grown up.
My boys. They have me sussed out, don’t they. Always feel like I’m blessed with having my favourite people as my own but this year it has never felt more real.
Taken another couple of days off before Christmas is past. Feels a little naughty but why not last year was odd wasn’t it? Made date chutney and batch one of marmalade all with a cocktail or two and chats. This one is a Lavender Ratafia Martini. Recipe will follow once I get my act together with refreshed website. This cookbook by Lola Milne has been constantly used on our camping trip to Wales. Most ingredients can be bought in advance so you can rock up to your campsite after a long drive, put up your tent knowing that dinner is only a few minutes away. All recipes are delicious too.

Sunset screening about to start. We had front row seats. Looked like a storm was coming from Eastbourne but wind moved it on westwards.
Saw the tide was incredibly low today on my morning walk/run and couldn’t resist. Off came the shoes and walked on the shore splashing and soaking my trousers like I was five. Boy does it feel good.

Weekend breakfast at the beach hut. Paddle boarders and sea swimmers out today bright and early. Not me as I was on catering duty 😆.
Beach hut breakfast club. We snuck off to the beach hut early this morning before everyone was up. Not that our people do early so not sure why we needed to sneak about. Sea swims then tea and toast. Doing the simple things that give you great reward are what makes the every day a special day. We all deserve special days.
We had our first breakfast at the beach hut this weekend. The weather has been wild and crazy but not nearly enough to put us off. This year will be a fond farewell to lots of bits and pieces as I seek new blankets, plates and cushions. They’ve had a good life and will end their days with stories to tell. Also I am starting my website again but this will be slightly different and more in keeping with all of our lives today.
Today’s run was wild but oh that view even on a grey day like today.
