INGREDIENTS (for 12 muffins):
• 8 large eggs
• 1/3 cup milk (optional for fluffier eggs)
• 1/2 cup chopped spinach or kale
• 1/2 cup diced bell peppers (any color)
• 1/3 cup diced onions
• 1/2 cup shredded cheese (cheddar, feta, or your choice)
• Salt and pepper to taste
• Optional: diced ham, cooked bacon, or mushrooms.

PROCESS:

1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or line it with silicone liners.
2. Prepare Vegetables: Dice and chop your chosen vegetables and any additional proteins like ham or bacon.
3. Mix the Eggs: In a large bowl, whisk together the eggs, milk (if using), salt, and pepper.
