Peng Chang-kuei (彭长贵), who created General Tso's Chicken, one of the US's most famous mystery dishes，served intellectual luminaries such as former US secretary of state Henry Kissinger, earning him media attention that spotlighted the dish and inspired other Chinese-American restaurateurs to offer their own versions.
In 1952, after World War II when Peng was charged with serving food during a four-day visit by the US Seventh Fleet commander, admiral Arthur Radford. Following three days of traditional Chinese dishes, Peng said he wanted to try something different.
He chopped his chicken and tossed it into a pan—a dash of sauce and spices; a bit of sugar. It fried into gold and made its way before the naval officers. With no name immediately in mind, Peng on the spot called it General Tso's Chicken.
It was a hit.
Peng went on to move to the United States, and in 1972 opened a restaurant in New York, where the dish captured the attention of the American palate.
It has been modified to be a favorite of Americans, so it is not so known in China.🤷‍♀️

Huizhou Mao tofu is a traditional special dishes in Huangshan city area and known as a dishes of Anhui in Chinese and foreign countries .
It is customarily called the Huizhou Mao . Huizhou Mao tofu , also called the mould tofu , is a kind of mould products whose surface has a layer of white fuzz .
Its main making method is to cut the tofu into squares , make it ferment to grow a layer of white fuzz and cook it with onion , ginger , monosodium glutamate , sugar , salt , broth and soy sauce after frying it . After doing these steps , it is basically made successfully . The last step is to add the chili sauce on it when it is served in the table .
It will look fresh and refreshing , fragrant and attractive . The most important point is that it tastes very delicious stimulates your appetite.

Dongpo meat story: #东坡肉👇
In Zhejiang cuisine there is a well known dish called Dongpo meat。This dish of streaky pork is prepared over a slow fire where the big chunks of pork are braised with green onion ginger cooking wine，soy sauce，and sugar the finished dish is bright red in color and the meat is tender and juicy.😋
This dish was named after Su Dongpo（1037-1101），a great poet of the Northern Song Dynasty（960-1127），who created it when he was official in Hangzhou。It is said that，when he was in charge of the drainage work for the West Lake，Su Dongpo rewarded workers with stewed pork in soy sauce，and people later named it Dongpo Meat，to commemorate this gifted and generous poet.
