2g Fresh Yeast

Add flour to a bowl. Dissolve salt and yeast in water and add to flour. Knead until a compact mass is obtained. Cover and rest for 30 - 60 min. before shaping into 4 balls (approx. 6 oz / 180g). Cover and let rise for 4 hrs / until doubled in size.

Add flour to a bowl. Dissolve salt and yeast in the water and pour over flour. Knead until a single compact mass is obtained. Cover and let rest for 30 - 60 min. before shaping into 4 balls (approx. 8 oz / 230g). Cover and let rise for 4 hours or until doubled in size.

Pour tomatoes into a bowl and crush them with your hands, add salt and stir to mix.
𝙏𝙤𝙥𝙥𝙞𝙣𝙜𝙨
Slice mushrooms.
𝘼𝙨𝙨𝙚𝙢𝙗𝙡𝙮
Stretch your dough and top with tomato sauce, basil, parmesan, mozzarella, ham, mushrooms and a drizzle of olive oil.
‼️Bake at approx. 430°C/ 800°F for 60 to 90 seconds.

Health may not be the first thing that comes to mind, when you think of pizza🤔
But in collaboration with nutritionist @dannerfjord.dk, we have come up with two flavorful AND healthy pizzas, where each pizza amounts to less than 800 calories and the nutritional values (carbohydrates, protein & fat) are spot on🎯 That’s a lot more, than what can be said for those pizzas you buy at the local store or pizzeria, which often have a fat percentage over 37%, are relatively low in protein and use cheap low quality ingredients🍕😳😢
These pizzas where made using traditional Italian methods and, therefore, do not involve cauliflower, low fat products or other trendy gimmicks. They where developed with the intention of being well balanced and high in protein, as protein contributes in stabilizing blood sugar levels and helps yield that satisfying feeling of fullness, while also being low in fat, so you can enjoy pizza 𝗴𝘂𝗶𝗹𝘁-𝗳𝗿𝗲𝗲🍕😍🥳

How to preshape pizza boules / balls🤓

𝗦𝗪𝗜𝗣𝗘 𝗙𝗢𝗥 𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦 ➡️➡️➡️
When making pizza, there’s a point after bulk fermentation, where the dough must be transformed into its final shape. But before that, there’s an often overlooked yet equally important step: preshaping your dough👨🍳
Preshaping is precisely what it sounds like; it sets the stage for a successful final shaping — there are many approaches a pizza maker can take and this is the simplest of them all✅
After bulk fermentation, I transfer my dough to a flour dusted surface and cut it into equal sized portions before continuing to the following steps, which is showed in the movie above🤌🏻
1️⃣ Transfer a piece of portioned dough top side down onto a lightly dusted surface.
2️⃣ Pull / stretch the corners / sides out and fold into the center.
3️⃣ Gently twist to close the seam formed, flip and lay seam-side down.
4️⃣ Pull towards yourself creating tension on the surface, turn 45 degrees and repeat until a uniform tightened dough boule / ball is archived.
