Der Retter naht nicht nur, bei BORN TO BE WINE ist er schon da.
In unserer letzten Folge vor der Sommerpause trifft Top-Sommelier Gerhard Retter auf den rheinhessischen Spitzenwinzer Philipp Wittmann.
Deep Talk vom Feinsten: Denn Retter, der mit Eckart Witzigmann, Frédy Girardet, Gordon Ramsey und Heinz Hanner gearbeitet hat, plaudert aus dem Nähkästchen. Auch über seine legendäre Zeit im Berliner Adlon, das man laut Retter nie ganz verlässt, auch wenn man dort nicht mehr arbeitet. Außerdem geht’s um Jungweinmörder, die typische Wittmann Nase, autochthone Rebsorten wie den Veltliner, um Weinberge, die einfach nicht performen wollen und ums Vinieren von Gläsern.
Der Österreicher Gerhard Retter ist eine Instanz in der Weinbranche, mehrfach wurde er als „Maître des Jahres“ und „Sommelier des Jahres“ ausgezeichnet. Doch Denise interessiert besonders ein persönlicher Brief von Queen Elisabeth an ihn. Da kann sie schon mal hartnäckig werden…. Natürlich verkosten die Drei auch diesmal große Weine und Philipp sorgt für die passenden Geräusche dazu. Ein Hochgenuss. Wir wünschen Euch viel Spaß dabei.

Weingut Rudolf Fürst meets Weingut Wittmann

Sebastian Fürst at BORN TO BE WINE. The sympathetic winemaker comes from perhaps the most exotic, but definitely from the smallest corner of Franconia, namely from Churfranken. And that's important, because that's where the grandiose Pinot Noir and Riesling grow. Philipp Wittmann from the Wittmann winery is a big fan of Fürst's wines. And Denise sometimes sings a veritable hymn of praise that makes Sebastian blush. The three also talk about batonnage, how you can do your apprenticeship in Burgundy without knowing French, about generational changes in renowned companies, about men's playgrounds, whole bunch fermentation, optimal food accompaniments, a consistent company style and the family. This episode comes along quietly: Highly informative deep talk with two sympathetically modest top winemakers. Have fun.

Rebecca and Joachim Heger at BORN TO BE WINE. The winery Dr. Heger stands for world-class Burgundy from Baden and Joachim Heger can certainly be counted among the great winemakers in Germany. The likeable winemaker actually wanted to become a country doctor. His daughter Rebecca is now responsible for the cellar in the winery and brings a breath of fresh air. Sometimes so much wind that Joachim jokingly threatens to split off with a garage winery. Together, the two meet Philipp Wittmann from Weingut Wittmann, who can still well remember that in his student days you were celebrated as a hero if you were greeted with a bottle of Dr. Heger came to a party. As always, Denise elicits exciting stories from her guests. It's about the past and the future, about Kaiserstuhl and Burgundy, about tradition and new beginnings, about training with Dr. Heger, about the moment when you realize that you want to make great wine, about wine jokes and about Willi the horse. A humorous, extremely entertaining conversation with exciting stories and great wines.

Do you already know our new episode? Nils Henkel is a guest at BORN TO BE WINE. He is one of the best chefs in Germany. He has been showered with awards in his career, he has been chef of the year several times and of course a celebrated star chef who has cooked three and two stars in various restaurants over the years. His vegetable menus are legendary, but of course Nils Henkel is not a vegetarian. You will notice this at the latest when he suggests a suitable dish for every wine that is being tasted. Because Philipp Wittmann from the Wittmann winery structured the wine sequence in honor of Nils like a menu. It's not just Denise's mouth that's watering... Look forward to an intensive conversation about the world of gastronomy, about the passion for good food, about successes and failures. About cooking in tropical paradises and at home, about well-being dishes and the right wines to go with them. Of course, Denise elicits a few insights from the two rock stars of their guild. For example, Nils reveals that he could have easily imagined a life as a winemaker and Philipp admits that the topic of wine is so important to him that sometimes he doesn't want to bow to the aromas of the food...

Markus Molitor at BORN TO BE WINE. The exceptional winemaker from the Mosel reveals that he sometimes sleeps standing up in the cellar during the grape harvest, found vacations superfluous for a long time and that his father shaped his vision of Mosel wine when they looked at the Zeltinger Sonnenuhr vineyard together. Markus Molitor is a thoroughbred winemaker and his own cellar master, who prefers to seduce his wife with his own wines because he knows that it always works that way. He meets Jochen Dreissigacker from Rheinhessen. Even if the wine-growing regions differ in terms of climate, soil and cultivation challenges, one central issue is equally important for both winemakers: time.
Both want to let their wines mature in peace. This happens in the cellar of the wineries and also on a crypto basis. Jochen reveals what it's all about when he talks about his Legends NFT 2017. Of course, the two top winemakers also share a few insights with Denise. It will be entertaining, it will be instructive, it will be funny, it will be emotional - this episode is a colorful bouquet of stories that can best be enjoyed with a Moselle Riesling. Sebastian Bordthauser at BORN TO BE WINE. Calling him a wine expert is simply too boring for the sommelier. Some time ago, Sebastian turned his back on the restaurant professionally. He stayed true to the wine. He is a professional taster, writes for magazines and newspapers and provides training. With him, the conversation balls fly cheerfully from one story to the next. He explains why his book is called "Wine and Vegetables" and is not, as Denise assumed, only for vegetarians, what wine lovers should know about artichokes, asparagus and aubergines and why a sommelier can sometimes mistake guests for a therapy group. Sebastian spells his way from one wine region to the next and challenges Philipp Wittmann from Weingut Wittmann with his blind tasting. As always, Denise has a long list of questions ready and tries to elicit some insights from the two. For example, Philipp tells us that he has recently been sent to the women's program more often, and Sebastian explains why he would like to have a glass of wine with Karl Marx and why he is on first-name terms with Klaus Kinski. An episode we could listen to forever…. We wish you a lot of fun with it.

Stephan Attmann at BORN TO BE WINE. The director of the Palatinate top winery von Winning meets Jochen Dreissigacker from the Dreissigacker winery in Rheinhessen. The two have a lot in common, so much at times that hostess Denise often doesn't get a chance to speak and therefore resorts to chilled tasting. Then thoughts fly to Burgundy and back again to one's own terroir, the right glass and the right wine temperature. It's about Chardonnay, the "hoppla", about Sauvignon and of course about Riesling. Drink young or mature, or both? The two winegrowers see their task in releasing the wines at the perfect time and recommend that connoisseurs approach the subject of wine in a relaxed manner. True to the motto: Do you have a corkscrew and fancy a great experience? Then dare to go and enjoy. Stephan and Jochen talk at breathtaking speed about almost every topic that characterizes wine making and drives them every day to do their job even better. We recommend: Do it like Denise and enjoy the great conversation with a good glass of wine or two.
