The Specialty Coffee Association has recently released updated rules & regulations for the 2024 World Barista Championship (WBC), which takes place at World of Coffee Busan, Korea, May 1-4. This year’s rules changes are focused on minor language clarifications to current practices around milk, judging , and the conflicts of interest.

🥛Milk Beverage

All commercially available unflavored milks can be used. Plain (sweetened or unsweetened) plant-based milks and animal milks can be used. Combining and blending commercially available milks is allowed, provided all milks are commercially available and prepared as directed, if required (e.g. commercially available milk powders may be used, if prepared as directed on the package). Outside of combining milks, no additions may be made to milk, regardless of the type of milk chosen. Competitors can remove elements from commercially available milks (e.g. through freeze-distillation) provided that no ingredients or additives are used in the process of distillation.

👅Tactile experience

The tactile experience that is present after the coffee has left the mouth will be taken into consideration in the Tactile Experience (e.g. astringent or silky).

☕️Espresso

Coffee is the accumulation of roasted product of the seed of the fruit of a plant of the genus Coffea. For the purposes of this competition, no additives of any kind may be added to coffee after it reaches the “green coffee” stage, i.e. seeds of the Coffea genus, dried as a part of the post harvest process, and free from all pericarp layers. This includes exposure to aromatic substances, flavorings, perfumes, liquids, powders, etc.

This year, after 24 transformative years, the COE is revolutionizing its approach by introducing groundbreaking categorization system, all while returning to where it all began: Brazil.

This innovative change stems from our continuous commitment to create expanded opportunities for small producers and to unearth the hidden gems of the coffee world. The refreshed format is designed not only to foster fair competition but also to redefine how exceptional coffees are discovered and presented to the industry.

The categories for the Brazil Cup of Excellence
2023 are as follows:
• Dry Process Category (Naturals)
• Wet Process Category (Inclusive of any method where the cherries undergo depulping, such as Washed, Honey, Pulped Naturals, semi-washed)
• Experimentals (Encompassing both wet and dry processes with special treatments, provided no additives other than water are used)

Cupping and scoring these processes separately will result in 3 unique sets of Cup of Excellence winners announced at the October 28th awards ceremony. Each category will enjoy a first place and winners will be required to score at least 87 points as usual. The auction, scheduled for December 6th will also separate these categories by color for easy purchase. Samples of all these winning coffees will only be available until November 10th or until they are sold out which usually happens well ahead of the cut-off date.

Starbucks opened a new coffee innovation park in east China's Jiangsu Province on Tuesday.

The Starbucks China Coffee Innovation Park (CIP), with an investment value of about 220 million US dollars, is the company's largest manufacturing and distribution investment outside the United States, the company said.

Located in the city of Kunshan, about a one-hour drive from Shanghai, the park covers an area of about 80,000 square meters and incorporates a roasting plant, an integrated distribution center, and an immersive experience center.

Starbucks said the CIP fulfills its "from-bean-to-cup" vertical integration across one market – a first for the company globally.

Belinda Wong, chairwoman and CEO of Starbucks China, said the park's immersive experience center will further elevate China's specialty coffee industry with a multi-sensory showcase of the coffee journey.

Starbucks entered the Chinese mainland in 1999 and currently has a market footprint of over 6,500 stores across more than 250 Chinese cities. The company aims to operate 9,000 stores across 300 Chinese cities by 2025.

has launched the Pegasus, a manual pourover brewer that applies the signature interior elements of the flagship V60 cone brewer to a “flat-bottom” conical brewer.

It’s the first to include the V60’s hallmark 24 spiraling interior ridges.The ridges are designed to prevent paper from adhering to the wall while providing a distinctive path for filtered brew to drain after water is poured in a spiral technique.

As compared to the purely conical V60 – which supports a pointy-bottomed filter through a single, larger hole – the Pegasus results in a slower brew through two relatively small holes beneath the filter wedge. The Pegasus shape resembles that of the iconic Melitta coffee filter and brewer shape, where a round top tapers down to a straight wedged bottom.

As of the start of 2023, MOTIV, the coffee shop that you can’t miss if you pass by Emmanouil Benaki str. in Exarchia, has a new sibling, as a second shop just opened in Pagrati. The interior design was curated by JoNat Architects and it’s minimal yet industrial with huge windows to let natural light inside. There are also wooden elements and plenty of greenery that give off a relaxing, natural vibe. If you feel like sitting outdoors, there are benches available for you – a perfect spot to enjoy sunny days in the city.

The MOTIV team offers a delicious freshly-roasted house blend from Brazil, Nicaragua and Guatemala with hints of chocolate and nuts for an even richer flavor. Additionally, they serve single origin coffees which change periodically; some origins include Colombia, Uganda and Ethiopia.

When it comes to food, the focaccia is not to be missed – the fluffy dough and harissa sauce with rosemary make it an aromatic delight. And for a sweet alternative, their brioche is just as delicious, filled with decadent pastry cream, white chocolate, and salty pistachios. More options Basque cheesecake, babka, praline- filled knots, chocolate cookies, and a signature cake made with coffee and chocolate.

Santo Belto, a concept store located in Kypseli, opened its doors in August 2022. It is the brainchild of three local residents – graphic designer Sotiris Andritsos, furniture designer Elli Gidakou and chef Marina Chrona – realized with the help of architect Panagiotis Bafis. The interior of the space has a nicely balanced palette of white, peanut, and Swedish wood. As an unexpected twist, there is a large red stain on one of the walls, which perfectly complements the rest of the decor.

Marina is in charge of the food menu, which includes brunch dishes that pay homage to Greek flavors, local ingredients and seasonality, such as trachana risotto with milk and honey or bobota (Greek-style cornbread) pancakes with feta cheese. The coffee selection is curated by Underdog Coffee Roasters and the menu includes various options including the usual espresso-based drinks, as well as ibrik coffee, espresso tonic, iced lattes and cold brew.

There is also a selection of wines produced by Greek wineries, as well as beers from local microbreweries, organic juices, soft drinks and aromatic infusions. The shelves are stocked with designer objects made in Greece, many of them by Kypseli artisans.

White Turtle opened its doors in June 2022, a stone’s throw from the National Archaeological Museum. Stelios, owner of the shop, traveled far and wide to gain experience in the art of making coffee. He collected ideas, images and tastes from around the world before deciding to return home to Athens and create his own spin on a modern-day coffee shop. Just like the white turtle species which always returns to its birthplace, Stelios came back with a vision of what coffee culture should look like in 2022. Drawing on the simplicity and clean lines of Scandinavian design, it has tables inside and out, windows all around, as well as an atmospheric loft for some peaceful reading or working, it’s a great daily moment of escape.

They serve up specialty coffee from the local Cafeistas Roasters – coffees from unique origins and microlots from small growers – as well as a small selection of local beers, tea and chocolates. For something sweet, they have homemade carrot cake(vegan too), cookies, brownies and other snacks like baguettes and wraps, with vegan options as well.
