It is almost Noche Buena! 🎄🎄🎄

A day I always looked forward to every year. The family always had the same routine for December 24th. Pork Ham was always the main event that my family buys from Excellente in Quiapo. Another awesome food memory!

Times have changed though, I noticed people are not just sticking to the usual pineapple glazed ham for their Noche Buena. From turkey, to roast beefs, Lechon Belly has also become a Christmas staple nowadays.

This beauty over here was oven roasted for 3.5 hours. Low and slow. With flavours of scallions, lemongrass, a kick of heat from green chillies, and of course garlic, lots of it. Skin was air dried to achieve that lechon skin crispiness.

Happy Monday!

Let's talk about 🍍🍍🍍. We use pineapple in our Filipino Syle Pork BBQ marinade. This is a technique most Filipinos use when marinating meat. Not only does it give that rich, tart flavours, it also helps tenderize the meat. Pineapple contains an enzyme called, Bromelain. This enzyme softens the meat by dividing the proteins like collagen. Does your tongue ever feel strange after eating a lot of pineapple? Well that is the enzyme working on your tongue. Cool eh?!

Our recipe of Filipino Pork BBQ is a true family recipe. Growing up in the Philippines, my uncle owned a Butcher Shop (Oneil's Meat Shop) and they would sell hundreds and hundred of Pork BBQ everyday, of course with the same marinade recipe I use now.

If there is one item I am extremely proud of, it is our Filipino Style Pork BBQ. Family recipes always have a special place in our hearts. FACT!
