We were invited out for the most delicious meal we've had since moving here. Lamb chops (a first for Nicole), mashed potatoes and a delicious bean salad. Thank you so much Sheila and Rolf. More appreciated than you know 💕

A local told us this is a "Black Belly Slider." Very easy to raise and very tasty. When it comes to how they taste...we have NO intentions of finding out 😬

Took a while to get this figured out here but voila! Chris is still getting his Artisan 🍞

These men are working extremely hard today, so I figured they deserved sandwiches made with fresh homemade bread.

Something to note is that flour and sugar can be very hard to come by. Days can go buy when there is none to be found. It was suggested that I buy more than I need for baking and keep the flour in the freezer. That's been working well.

The sugar that would typically be in the Belizean supermarkets and local stores is being sold to buyers in neighboring countries where it is said to be up to 2.5 times more than the local price. From what I've been told this means people from Guatemala and Mexico are coming into Belize purchasing and reselling for a much higher price.

The flour, I'm not entirely sure about.

If you know why at times flour is hard to come by I'd love to know.

When moving to Belize they will tell you," It will welcome you with open arms or chew you up and spit you out." Our reason for not posting is not because there's been nothing going on. It's the opposite. There's been so much going on. And not all good. In fact it's been very stressful. Both physically and mentally draining. We are living in our new home. And as you can see some renovations already happening. There is no lack of work to be done here. We still have no power but have hooked the solar system from the bus into the house. This helps alot but it was never meant to run a house. So things like running a fridge or A/C just isn't possible. We've had lots of people asking if we're ok and what's going on. So we both decided that we may as well be honest. We are alive and kicking. It's just been a tough go lately. Thank you from both of us for all the support.
